hey cookie lovers today we're going to talk about royal icing consistencies i'll be going over outline blood and writing consistencies this is my icing straight out of my mixer so consistency is everything when it comes to making cookies it can make your cookie or it can make it fail so we're going to start off by coloring our icing i'm going to add a mary color bright white now you can add this to your icing while it's still in the mixer because i usually i color all my icing white i put a little bit to prevent color bleed [Music] next i'm going to put a deep pink gel color now with the mary colors they tend to darken over time so if it's not the shade you want if you let your icing sit it will darken so i can tell that it's good for just outlining a cookie because when i pick up my spatula the icing is just going to fold over it's not loose enough to actually flood the entire cookie but it's just gonna go around the cookie i'm gonna get my piping bag and all i do is just fold down that piping bag and stuff the icing inside [Music] and then tie a little knot [Music] so now i'm going to make a flood consistency that can also be used for outlining it's going to be thick enough to where i can outline the cookie and thin enough to where i can flood it as well now to loosen my icing i'm going to add some water and i just have my water in a spray bottle that i got from walmart you can use a dropper or whatever as long as you just put some water to loosen it up and if i add too much water now i can always add some more confectionery sugar to make it thicker now while you're mixing air bubbles will rise up to the top so you just pop those with your spoon when you're working with royal icing you always want to make sure that you have your bowl covered especially if you have to go off and won't be stirring it up or using it because it's going to crust over you can also test out your icing before you put it in a piping bag if you have just a cookie an extra cookie you can just put a little dab on there and see if the icing moves the way you want it to next i'm going to do a flood icing now this icing is going to move quickly and so it's not going to be able to outline my cookie with it i'm just going to be able to just flood so i'm going to have to use a different consistency to outline to make sure this icing doesn't fall over the sides of the cookie [Music] i'm going to draw a line and if that line disappears then i know this is a good flood icing [Music] so now i'm going to make a writing consistency and as you can see i'm low on my colored icing so i'm just going to add a dab more of some icing now this is going to change the color it's going to make my color lighter so if you do need your color to stay the same then you're going to have to add some more of whatever gel color you're using because this is going to lighten the color but i'm not going to do that here because i'm not concerned about that so i'm going to add my confectionary sugar because i need this consistency to be a little thicker and i want it to get to the point to where when i lift my spoon up it kind of falls over slowly because i don't want my royal icing to be moving and flooding as i'm trying to write words i needed to stay still [Music] so i made this sheet to kind of show you the different consistencies so i use tipless bags and with tipless bags there is a seam on it so you're gonna have the seam facing up and then you cut across i suggest cutting small because if you cut too big then you'll have to use a whole new bag if your hole is too big so just start cutting small and if you need the hole to be bigger then just continue to take off cut further back so first i'm going to use my outline icing so this outline consistency is not going to flood your cookie it's just going to be used as a border next is the flood consistency and this one is just going to move all over your [Music] cookie [Music] then it's the consistency i use all the time the outline slash flood where i can outline and flood my cookie all with the same bag and then we have the writing consistency the writing consistency is not too stiff and it's not too loose so it won't move it's just going to stay still [Music] be sure to rate comment and subscribe and check out part two where i will be explaining how to outline and flood on a cookie
