Even though I don't play Klee quite as often as I used to, playing her constantly for a very long time did ultimately help me start to understand and enjoy playing around Elemental Reactions. Even if eventually I would have regardless, I do still credit her for helping me with that in a big way.
Great video! Klee is mostly lacking in the range department and kit being too clunky but over all she is great at dealing damage specially with any anemo character

First, some corrections.
Klee E is Q-cancellable at any point. E-Q is pretty much how you press Q.
Klee CA hitbox is much bigger than the reticle. I.e. Klee can consistently hit 2 vishaps. Which, say, is nearly impossible for Ayaka who's often praised for having HUEG CA hitbox.
Next, I feel like demeaning Klee for being unable to vape all the attacks is sort of unfair. It's Childe all over again. Only with Childe half a year later filthy commoners finally realized you vape the other way around.
Klee is kinda the same in that she can be a pyro Childe for cryo off-field damage dealers. The problem is our only real cryo off-field damage dealer is Rosaria with an anchored burst which is harder to use than pyronado (especially with Klee juggling everything but robots and bosses off the arena). And that Klee is mechanically harder to play than Childe.
Next is mono pyro. Especially after the release of Kazuha. Mono pyro is busted without any amplifying reactions. Everyone in the team always benefits from all the buffs going on (except XL C6 not working on pyronado itself), there's no problem with energy, there's no problem with rotations. You press buttons randomly (other than snapshotting Bennet Q), you watch the world burn. If you see bad doggos and weird lizards - you juggle them to death. Mono pyro Klee is the fastest team for current F12 for me (except 12-2-2).
The reason people don't play Klee are
Klee is mechanically hard to play. Without cancels, tactical staggers and stamina management she's unplayable. To learn cancels you need to play an unplayable character. Errors are extremely punishing. Not even because of low HP and DEF. But because of low weight. If you get hit - you fly away.
Emphasis on amplifying reactions among the general population. Same old song as "electro is bad because electro reactions are bad". In the same vein it's nearly 2022 already and people still sleep on tazer teams and on Beidou-Fischl duo in general.
In the end you can guess why people don't play Klee when reading comments like "I really like Klee as a character, but then I got Yanfei, and she's stronger". It's clearly a matter of ease of use.
There are actually a lot more animation cancels you can do with klee to make her feel smoother. I agree that she initially feels clunky but she also feels more satisfying to play than ning or yanfei once you learn her imo. Usage rates will always favor easy to play characters that have a lot more room for error such as ayaka or xiangling and characters that bring comfiness such as zhongli. Klee is probably the opposite of these two so most people won't bother playing her even if her damage is fine.
As you said, her being mechanically demanding is what makes her unpopular. No one wants to play a clunky, mechanically demanding character heading towards Abyss or end-game which contains lot of stress-inducing enemies.
She is wildly fun and fulfilling to use once you do master her though especially when beating the Floors 12 with her. Though not gonna lie, she is very punishing to use as of late vs against the past 3-4 Abyss lineups, and I sometimes can't help feel frustrated playing her.

I love Klee and always will, but she's clunky to play compared to other characters. I'm also a smooth brain, and she's also just much harder to play optimally than say, Hu Tao, who I can no brain deal insane damage with.
