I'm Aaron Franklin and we're here at Franklin barbecue in Austin Texas [Music] every brisket sees about 44 hours of labor to get it just ready for lunch the only stuff we really put on these briskets a salt and pepper you want to taste the meat so that's pretty much what we're going for stop that from being fire one of the things that makes Central Texas barbecue is our indigenous wood here its posto that is the only one that ever goes in those barbecue pits [Music] you know we started off at a BBQ trailer and then I was cooking two briskets a day hoping that one would turn out pretty good now we do 106 briskets a day 45,000 pounds of brisket a month we cooked the briskets for anywhere from 12 to 16 hours the barbecue pit temperature might be anywhere from 265 maybe up to 320 depending on the brisket depending on the weather depending on the wood depending on the thickness of the meat but it changes a lot [Music] I mean a good piece of barbecue should be moist it should be you know have a kind of a velvety mouthfeel it should be textural at the same time well-formed bark it should just be a well-rounded and super balanced piece of meat I think we probably feed somewhere close to 300 thousand people a year we open up the doors at 10:59 we blast through a ton of food and we usually run out of food about two o'clock give or take thirty minutes you hello today fans thanks for checking out our YouTube channel subscribe by clicking that button down there and click on any of the videos over here to watch the latest interviews show highlights and digital exclusives
