Maybe people planning a wedding are a pain in the ass which is a real cost
While I believe that these places are largely overcharging people for weddings. There is a negotiation that is supposed to happen during these exchanges. You don't have to accept their list price. You can counter with "that seems high to me. I guess we'll be looking elsewhere unless you can give me a better price".
And you can do that with anything. Years ago I was buying furniture from my home, I knew what I wanted and I didn't want to over pay. The list price was about $8000 for everything, I got it all for $5500. It was a large order and they didn't want to lose the sale. You just need to be willing to walk out the door.
When you are paying thousands of dollars, you can negotiate on lots of things like this. How many of these wedding prices would come down if you called back four days later and said "We like your establishment, but the price is high. We have a lower quote from one of your competitors. Can you improve on the price?" A lot of them could probably drop their quote substantially if they think they will end up getting the business that day.
Now, this is true for the people trying to schedule an anniversary as well. So, I am sure some over charging is going on. But part of it might be that people rarely go around getting quotes for anniversary parties that they aren't really planning. While some people do go shopping for weddings that they don't really plan to follow through on. Some places might give a higher quote for weddings because a lot of them go around planning a wedding almost as a hobby. So places might give higher quotes because you might later shift your date plans to a more expensive date.
There are lots of little reasons that could explain the higher quotes. And yes, one of them I am sure is that people getting married often try and have a "money is no object" view even when they should know better.
