So I've got a great recipe that I think you're  going to love, it's a veggie noodle stir-fry   it's quick it's easy it's fun it's colourful,  it is so tasty and I can't wait to show you,   so let's do this. So it's a really  simple recipe I've got a pan, a wok,   or you could use a large frying  pan onto a high temperature.   And then I'm going to take some mushrooms just a  little handful now I'm going to make this stir fry   for 2 portions but guess what, it's so quick it's  so easy that if you want to do it for 4, 6, or 8,   you can just double it quadruple it whatever  and just knock it out one batch at a time.   That way you get that searing heat from the wok  which you really really need to do a nice stir   fry. So first up as that pan is heating up just  drop in your mushrooms, you can tear them up   crush them slice them do what you like to them.  And then as far as the other veg is concerned   use what's on offer what's in season what looks  good. So let's get all of this veg prep done now   and then when it comes to cooking it, it's beyond  quick. So i've got some sugar snap peas here just   a little handful. The idea is to have fun  with the veg but also kind of slice them up   and prepare them so they're all going to cook at  the same time. Take a regular bog standard carrot,   a speed peeler, and just peel it. But the nice  thing is you don't have to stop peeling right,   so once you've got rid of this peel that you  don't want we can carry on peeling. Really kind of   ninja-thin but you can just do it with a standard  regular speed peeler. Broccoli, I'm just going   to take the little florets I'm just going to run  my knife in half there, just so they're a little   bit more delicate. The last veg I'm using is some  spring onions and a little fresh chilli. It's the   time to get the noodles in now. You can get the  regular white noodles or you can get whole wheat   ones and that's a great great healthier swap,  two to three times the amount of fibre. Now all   we need is 2 little nests, one nest per person,  they take about 5 minutes to cook. I want to make   a nice quick little sauce. So for that I like to  use a little grater, so I want to take a couple of   garlic cloves and about one thumb-size piece of  ginger is going to be so fresh and so fragrant.   And then once you've done that a little soy sauce  for that flavour and that seasoning and then lime,   so fresh so delicious, and then again we can  use the grater and then we'll squeeze the juice   of that lime into there look at that. So this  is the time you know when I can add some oil,   so now we're stir frying. And the whole point  of stir frying is it's hard and it's fast   okay we don't want to overcook the  veggies, so in with the carrots,   the broccoli, and those fantastic sugar snap peas.  Keep the veggies moving, move it around. If you   don't feel comfortable tossing it like that then  just use a pair of tongs or a spoon. So in with   spring onions and a little fresh chilli. Go in  with your sauce. We can get our noodles and drag   them over. Really toss every single bit of noodle  with the veg and the sauce. Aggressive heat,   quick cook, and you're laughing. So let's plate  up we're done. This is the most brilliant way to   eat five of your fruit and veg a day. We're not  stopping there, give this pan a little rinse out.   So get yourself some nuts you could use  peanuts, almonds, I'm using cashew nuts.   Bash them up a little bit and then as that  pan gets hot again I'm going to just put them   in there to just lightly toast. And then I'm  going to finely slice just a bit of red chilli   and then here's the really cool little trick,  we're going to cook fried eggs. So instead of   frying it in loads of oil it's kind of dry frying,  going crisp, but still it's going to give you that   beautiful oozy egg yolk. So just pop a lid on top  so you'll have a crispy bottom and a really soft   and silky top. So in literally under a minute and  look at this, I'm carrying two at the same time,   slightly dangerous. And then we take a little  chilli sauce, a little bit of coriander. The   best bit for me is getting your fork in and  getting that yolk oozing and just mix it up. Absolutely delicious I mean the flavour  is mega, all the veggies are still full   of life they're crunchy but you've got sweetness  you've got the heat you've got the herbs in there   you've got the egg, and when that yolk goes  through the noodles it's so silky and delicious.
