brew house good heavens what is this that's the copper well fairly obviously name ID I guess that wouldn't you it looks a treat well the moment rig well tow which is our strong ale ringing well chopper three you wanted them my rig welter because it's a dialect word it describes the situation when a sheep is laid on its back good rolled over and its fleece is too heavy for it to get back up again what happens it dies in short order how quickly have you not ours no yeah how many pints of this would it take to put one flat of one's back oh six or eight pints probably something like that yes and Vichy a couple I should think what's all that steam up there oh this is where it all starts come on have a look a beer Turkish bath this is the mash tun this is where we mix crushed molten hot water together to form a porridge and then we take a sugary extract out to some ends to make the bear another lovely bit of plant it's all right it's quite old is this some where the kitchen is around here no you're going to use our kitchen at home which is the mail vicarage in the market square and said we find that because if it just by the church exactly yes easy to find hey gets right wonderful oh but amazing it a really beautiful square in the old days I spent Vickers with good Christians and had lots of children so they needed these big high Z's now they're all gay so they sold them off well they come they got the Ford League the heating it's a good point and all of that this is perfect wonder what the kitchen will be like I heard like the house oh look isn't this smashing wonderful my mother was deeply committed to the romance of the deep south of America so when these moods hit her we used to have corn griddlecakes for breakfast finally my sister married a man from South Carolina and my mother was cured what I've got in here is some flour which I've sifted and I gained to add half a teaspoon of paprika and some baking powder and to that I shall add some beaten eggs and some milk and then you want to mix it round to a good dough mix it all in I'm intrigued why did your mother turn against steel brother-in-law one day he decided to make her a mint julep her thing for which she had yearned all her life and he made it with salt instead of sugar Oh Horace Horace and my mother with all the politeness that any women a pair donor agent could muster said this wasn't how I imagined it would be at all and drank it never speak to him again she probably vomited no no no she had a very strong constituent mother now you you like a a great big breakfast Leger oh yeah his trench woman in the morning yeah and through the deck under the bed well what has to keep constraineth up don't you know but now I do love a breakfast you know coming down in the old days or hunting or shooting breakfast everything laid out beautifully and I have porridge every day for my breakfast and whatever else God provides set you up for the day that's right and to this I going to add some sweet corn which I've cut from the cobs it's the real taste of the deep south is sweet corn down there it's about all I have honey child her stuff is hushpuppies grits you name it they have it with sweet corn and then two tablespoons of melted butter and a little bit for luck mix all that in well make a nice dough as you can see the mixture is fairly stiff it's not like a pancake you know they are actually are sort of almost a bread would be like a little stung more I pipe that's it yeah it'll oil on my girl why is it that the Americans and the Scots call it a girl I love the girdle it's lovely pad and the English call it a griddle this is it's Victorian politeness now this is nice and hot smoking hot see it's making slightly so I'm just going to put on four little cakes to start with shape them as you go try and get them tidy pressed and and flatten them out a bit you don't really want to turn them till they're obviously done the other side and the bubbles come but just keep moving them about so they don't stick you don't want them to stick don't load up jumbled up with me I'll take it out to dinner see hurry up hurry up Syria there we go look at that done that look lovely yes delicious yep in the our ger here I have keeping warm supplies some lovely bacon here delicious good and then you take your corn cakes and you put upon them a piece of bacon and it sprays it's not that streaky sort that they have in America you know well that's what they won't have downsized miss Carla up here in Yorkshire with the pork butchers and everything like that so I thought we've have proper proper bacon and a favorite you pour maple syrup well you do without that who know who do you do you best getting the spirit of the thing now on you make great piles of them and serve them but did it they say shave shave the syrup save never call in to say hello the syrup and that's it that's it delicious I've been touring my kidneys to do deviled kidneys which means they're in a very hot sauce and they're excellent do they for robust so hun ting people who've who probably beat out for a little walk before breakfast they come in and they've got to get all ready for the ride and it's a very good thing to devil quite a lot of things like turkeys legs they're much better when they're deviled I think mmm these a fine lambs kidneys which are probably the best thing to have for breakfast I think because the toughest ones are too big now if some of you worried about coring the kidney which is taking out the white part in the middle some people just say that it has divot is impact me if you cut it down middle and skinned it then health skin firmly and press the knife against that white core it'll just come out all in one piece but you do need a very good sharp little knife couldn't be better you see totally code now they may want to make a sauce the deviled thoughts if they have holes art most of these are hot ingredients except for the mushroom ketchup for the slurp of that in then about that of mustard depending really on Orion taste this is cayenne pepper very hard so I'll just put a pinch in a good shake of Sderot worcester sauce touch of Tabasco see that it's good to blue the morning cobwebs way yeah and some melted butter because I use the cooker absolutely I'll go over to the argA can you pop those in the end keep them warm really get on the top of it right they would spoil noon right now I'm going to cook my kidneys or rather devil them as they say we want a little oil just to stop in the form of sticking and then we want butter they're here and it means so you want to get them just bubbling but for heaven's sake now over cooking always see a little trace of blood left before you start because you must remember when we put the sauce on it tend to cook a little more if you overcook them what you get is leather this overcook anything ready I mean people who ask for well-done steaks in hotels get what they deserve you do you get no boot in truth mmm now they cooked a little bit I'll put some proper salt and pepper on the tide time to put the devil sauce in ah not mister what the smell over okay can't the kidneys all over there we are now that's a dainty dish and just to make it look pretty as usual some sprinkled parsley they were deviled kidneys this leads couples I think this is where we want to be smells lovely it's sweet and please if you see all the tomato but I think one should strip to the bare essentials Jennifer let's all our claims that keep it I'm not good to see this place yeah it's really open apply here for kibbutz and we're nighter to apply just wanting more good morning and I need to get some kippers please have some smoked hammock mm-hmm nope nom de yes brilliant what a lovely please you lamento beautiful have it but all the fishmongers so handsome around here yeah copy but he's got a seat how many faces would you like I thank you about for how long have you been smoking here since 1872 it's all your family yes five generous baby however and then I'd also like to there were three pairs of kippers don't the undoubtly lettuce preachers do you send no we can't post them anymore it's EC recalescence well little people ruddy Brussels you know there are 56 words in the Lord's Prayer and 2,600 and the EEC regulations the export of ducting he's welcome here yes on the premises right can we have a look certainly some 30 this mmm yeah the hill the smoke fixture oh my goodness that one's on the Levin's gave a beautiful tippers and and how long is an average kipper take just make between 1820 hours and the salmon two or three days the river long is that I'm interesting I love the black drippings from the side that's what your lungs are like Jennifer nonsens they're not full of fish oil anyway it looks it looks at food delicious and oh also bit I got it don't they've taken flea cheese and bacon right you tell them for local butcher what are you burning good it's Beach Panhandle when I see ask me amigas as they say in Mexico which is where this particular recipe comes from this is a traditional Mexican breakfast recipe called huevos rancheros which is what it really means is ranch style eggs heat a little oil here and into it I'm going to point put some lean minced beef you just want to let this Brown take a good healthy breakfast with it well they need it today those ranchers are out sort of branding a couple of cows before breakfast also breakfast is very important to the hot climate because at lunch time it's really little too hot to eat so now I'm going to add to it some chopped onion and some garlic you may think it's strange do we garlic for breakfast but what about those of you who are popping garlic pearls in the morning this is the real thing that I would talk much more efficacious it is that's a bit of oily to press yeah and some roughly chopped tomatoes salt it's very important to brown the mince before you add the salt shouldn't add salt to red meat it makes you gather pepper and a good dash of Worcester sauce an ice and water and some roasted green chilies it's exactly the same principle as with red peppers what you do is you put them under the grill or in the oven and then skin them take the seeds out and steal some of those plastic gloves from a service station or something rather than get it on your hands because you're bound to rub your eyes it's murder you know in Mexico when children were bad they used to rub chilies onto their eyelids oh my goodness being onto their lips Charlie glad it how much did you put in is really a matter for you but this is a whole chopped green chili quite a hot green chili I suppose the seƱoras eat this for breakfast as well as the rancheros doing a Mexican Mille I wiggled my chiny I love it mountains all day and something about the bandits they get very reckless and will state the breakfast they shot see my tango today you know Dougie Benedict I think we see or tango today now this has got to simmer for a ripe 10 minutes I can put it on the augur make room for you her frame onions fry your onions that I can make good old kedgeree one of the most comforting of dishes it was originally from India and it was a simple sort of almost peasant dish made out of just rice and lentils anyway some old turtle probably brought it back and said to his cook now this is what we had you will do the same thing and so she got rid of all the lentils never seen the last house are always get rid of all the lentils why well I mean people have no idea how Randy it makes vegetarians I have no idea I always see rich packets of lentils in health food shops with it why do they rip them people to guess of them filter by the whole packet their friends it dishonest as well oh there there I think of all things it is really one of the most comforting of dishes and delicious any time of day as well as breakfast very good for supper parties after great balls in the country anyway what I do you'd first of all prank some onions and I'm going to put in some garam masala and we put in some tumeric which is really the saffron of India it has this wonderful color bright bright yellow I imagine that's what they use when they say saffron robes it probably tumeric Rhodes so for the Buddhist monks ativy that's a very good point yeah cuz I mean when you get it on anything it's impossible to get out and live impossible very good die it does make a wonderful color that will go very beautifully with the havoc these have to be fried till there so you don't want them you don't want them raw trunks which is just as well ready because it brings out the flavors of the spices mmm lovely that smell it's reveal their other than the soft so take them away to meet the heck can I have this then oh yes we do now here I got a really beautiful bit of smoked haddock it's the real thought if it's bright yellow it's died they'd get it but what I do is that I've already poached it and I find the easiest method is to just pour the entire thing into the sink like that then you don't have any other mess and you can just watch this egg out again then it's easy in here to take the skin off here's of a treat and just take a lamp over here and flake it into their onions it's a good thing to do it by hand you see you can feel for burns we smoked up had it much less than they do on the continent it's got a much nicer flavor here's a great agree with you because this did to be much harder as well hmm such an unappreciated fish the haddock isn't it was so rude about it when somebody's down and glum you said the haddock miles Dredd they buddy writes wonderful glowing articles about the beauties of haddock and yet it repays you so kindly when you showed a little affection well everybody loves it there they in the fish and chip shop now let's stare and look for any further biz yes that's fine it's a good fish dip now we get the right it's good bears Matty rice and I've just boil it in furious boiling water with some salt in until it's just done then strain it and then it's ready to tip in and now we'll put some chopped eggs in I like them hard but not rock hard-boiled I like the still to be a bit of moisture just in the middle it's it's tasty I think it's good to get it all mixed so the flavors go through everything and the color you don't want sort of white patches the great thing about Kadri you can make it all before you could boil the rice you can have the fish Freddie etcetera etcetera when I used to do big part is you know either for after a dance so if people wanted a late thing I used to do it all before and then just reheat it in the oven slowly and then just before serving and quick dollops of butter that's always a good idea and now just for a bit of prettiness and flavor well put past favorite and then these lovely little friend onion rings it's what the Indians always put on rice and I think it's delicious that sort of caramely taste and the travel agency indeed have Ulysses I'll just put this on the lid of the argot to keep it vaguely warm and what are those dear little things you're frying that flour tortillas look you see they come like this they're really they're the bread of Mexico you see the woman's of making them on stains and slapping them about everywhere it says you've slept slept slept slept and you can buy them anywhere now I mean even those palaces of hell that you find outside times is it your favorite little shops there's at the Wellness big shops and what you want to do is just sort of fry them gently in some heated oil so they warm through when the dead get crispy because then they become tacky really right I think I've probably done enough of these now so let's fry some eggs and egg is easy it's on blood of the Furious breakfast well I will asam now you put your corn tortilla on the plate juicy and then on to it you put your quiver not be very careful with that word because when I was once staying in the Ritz in Madrid trying to practice my own as non-existent Spanish I asked for das Ava's Posada instead of das crevice and boiled eggs and being the Ritz they did exactly what you ordered in those days they sent me up to little boiled grapes now if you look a little Z under a cover so you put your fried egg onto your tortilla and then you get your chilli sauce and you just spoon it over the top heaven--the and that is very hot that look nice that's a wonderful dish to go to work on wash that down with a pint of ale I'm going to do something as simple as boiling an egg I get to jug kippers rather than grill them or fry them and it's very simple method and it stops the house from stinking for days on end you never really creeps all the way upstairs and what I get is a fine great jug like this and you put the kippers in head down do this sweet little tail sticking out very good little handles the tails up Lars gay magistrates what that's what they used to call the plump Loch Fyne kippers in Glasgow because they were in a full round belly with good Kip a line that's the one huh huh no I work a kettle a lot water and all you do is pour it over them up up up until it come to the root of their little tails here we are and then just leave them there for three to five minutes depending on the size and in sometimes they're bigger than that or plumper and would you serve them train them and just put a lovely dollop of butter on them yeah I know mr. Boddy kedgeree for comfort and the old Colonels huevos rancheros put a Caramba into your day we're still good to eat kippers with brown bread and butter helps the bones go down just your girdle for these griddle cakes shake the cocktail devilishly good kidneys for the chafing dish up to a nicer bloke on three two big number that yeah we're still coaching it to the gravity though yeah they start work at half past five in the morning poro things they probably needs a good breakfast I think they were very glad of it very welcome it was strange it might have been what deviled kidneys and huevos rancheros my legs for brekkie a bit new to York never mind only Chili's nowadays oh then look at this beautiful beer nice to see all drinking beer for breakfast wasn't it like they used to like I used to come to that I'm accustomed to be able to alright I'm saved add Cunha's taste nevermind here's to the black sheep and all who follow him you just come out all in one piece but you do need a very good sharp little knife couldn't be better you see totally code now they move on to make sauce the deviled sauce that they have holds art most of these are hot ingredients except for the mushroom ketchup for the slurp of that in then about that of mustard depending really on orientation this is KN pepper very hard so I'll just put a pinch in a good shake of Dera Worcester sauce touch of Tabasco see that it's gonna blow the morning cobwebs way yeah and some melted butter because I guess the Tucker absolutely I'll go over to the argA can you pop please in the end keep them warm really get on the top of it right they would spoil noon right now I get to cook my kid days or other devil them as they say we want a little oil just to stop in the form of sticking and then we worth you see totally code now they move on to make a sauce the deviled sauce if they have holes art most of these are hot ingredients except for the mushroom ketchup put a strip of that in then about that of mustard depending really on Orion taste this is cayenne pepper very hard so I'll just put a pinch in a good shake of Dera Worcester sauce touch of Tabasco see that it's gonna blow the morning cobwebs way yeah and some melted butter because I took it absolutely I'll go over to the argA can you pop please in the end keep them warm no they get on the top of it right they would spoil noon right now I get to cook my kid days or other devil them as they say we want a little oil just to stop any form of sticking and then we want butter they're here and it means so it's well they're there rather than the soft so take them away to meet the heck can I have this then oh yes we do now here I got a really beautiful bit of smoked haddock it's the real thought if it's bright yellow it's died they'd get it but what I do is that I've already poached it and I find the easiest method is to just pour the entire thing into the sink like that then you don't have any other mess and you can just watch the fish the had Oh cousin it was so rude about it when somebody's down and glum you said the habit Kamal's dread they buddy writes wonderful glowing articles about the beauties of haddock and yet it
