Tuna makes me feel conflicted. It's such a tasty fish. But at the same time, it's a high level predator, and it's simply absurd and unsustainable to eat it as commonly as we do.

Keep in mind that we are currently not really sustainable with certain species of tuna, especially the bluefin tuna (I'm quite sure that the tuna in the video is a bluefin tuna). I want my kids and my children's kids to have it as well.

Fun fact: For bigger fish like tuna, you actually don't want the freshest tuna possible because it will largely be tasteless. Generally you want to age fish like that in the same sort of way you age beef (but not to the same extreme).

stupid alarm clock it is 4 o'clock in the morning I don't think I've got up this early since ever honestly I wouldn't wish it upon anyone today we are off to explore the world's largest fish market which is ceg fish market here in Tokyo it's often described as one of the must-see things to do in Japan and though I've been a few times before I've never really been into the market in the morning rush hour and seen the tuna fish auctions laughs fortunately a friend who works for a popular sushi chain has offered to take us in and show us behind-the-scenes firsthand so I think I could justify getting up this early just this once let's go over 2,000 tons of marine products are handled at Tsukiji fish market every day due to the dangerously chaotic atmosphere tourists aren't actually allowed in until 9 a.m. however thanks to our friend mr. Condor we were given some magic orange clothing so he can access the entire market and almost get run over it's like a sort of videogame obstacle course one wrong move could end in tragedy being in here feels like being like underwater 70 fish is so much water everywhere running atmosphere is quite now yes quite such a bustling atmosphere I don't think I've been anywhere quite like this ever with the tuna auction do to begin at 5:30 we headed over early to first inspect the fish it's quite weird to be stood right here in the middle of literally hundreds of tuna I've seen this on like TV videos and things all the time but to be here the first time in person is quite surreal there's such a weird out everybody inspecting the fish examining them so thoroughly in ways that I can't even begin to comprehend how many people can you feed on fish watch this you Marcela's program company sushi very but 3,000 if if 3,000 pieces Bacchus oh my god Wow with the buyers having inspected the tuna for freshness and fat content and settling on their price a bell began to ring signaling the start of the auction buyers would quietly show that bid with a simple hand gesture the first shooter had been sold in just 10 seconds everything happened so fast that they kind of did that with their fingers they're sold it's gone I think and that's all the auctions been going on for about six minutes and already half of the tuner have been carted on off to their new owners chopped up and solder in the tasty profit view largest and most prized tuna came in at 200 kilograms was sold for remarkable 2.6 million years 2.6 million not surprising given that this one fish could literally feed the 5,000 I mean witnessed the most intense and fast-paced auction I'd ever seen that our tuner being carted off it now made sense to go and give the tuner a real send-off so later that evening we headed for itemized Uschi where we found our friend condor Sam outside with his brand-new haircut along with the catch of the day and lots of impressed passers-by ok good reaction from extry everyone everyone's looking at it's being amazed it's amazing she has a reputation for having a ruthless pursuit of delicious sushi every January the restaurant chain holds a ceremony to bless their first tuna catch of the year showing their appreciation to the tuna and bringing it to my sushi good fortune throughout the year a ritual that fish and chip shops in the UK would do well to consider and tonight the restaurant would be holding an event where customers could watch the freshly caught tuna being skilfully carved and prepared but before the event we decided to kick things off with a few pieces of sushi everyone taking pictures try to feel about it speed and it was all going well until my friend and I were dead to eat a large shrimp a large shrimp that was still alive so don't bring me out alive shrimp first day I don't know if I can actually do ships from excited to dread look with genuine lead anything I can either I don't know how to eat it oh I'm sitting on that then after a few minutes the chef generously removed the head hold until is moving ok ready 1 2 feel a bit like Gollum eating that it was pretty good once the head had been taken off the way it was by moving around that was a fucking banana was right unfortunately though it turned out I still had to eat the head which is the best way to start that way or that way is their lives he says don't eat me was killed five minutes ago gone crunch crunching it's better than I was expecting having successfully pretended to enjoy eating the shrimp it was time to see the freshly caught tuna being carved in many ways I'm not sure what was more impressive seeing the gigantic tuna being carved up to reveal the delicious raw meat or the overexcited reaction from a huge crowd of customers it took 20 minutes to carve the tuna and as the sushi chefs went to work preparing the sushi we were able to scoop out the remaining tender raw fish using sea shells skip the tuna with this seashell just keep our promise it's really really easy to do but when you've got a camera Roberto having waited all day it was time to try the freshly caught prepared tuna you know Wow okay that's brilliant adjectives just outstanding so that was it to my sushi one of the best sushi restaurants I've been to in Tokyo so far it's absolutely delicious I highly recommend going it's a chain that you can find throughout Tokyo and there's so fresh straight out it's easy to market unfortunately the legendary ceg fish market would be relocating in November 2016 so if you have the chance make sure you go and check it out before the year is out thanks for watching guys now let us never speak of getting up at 4 a.m. again oh my god
