Tuna makes me feel conflicted. It's such a tasty fish. But at the same time, it's a high level predator, and it's simply absurd and unsustainable to eat it as commonly as we do.

Keep in mind that we are currently not really sustainable with certain species of tuna, especially the bluefin tuna (I'm quite sure that the tuna in the video is a bluefin tuna). I want my kids and my children's kids to have it as well.
It's a bit sad that the market won't be in Tsukiji anymore. Tsukiji won't be the same.

Fun fact: For bigger fish like tuna, you actually don't want the freshest tuna possible because it will largely be tasteless. Generally you want to age fish like that in the same sort of way you age beef (but not to the same extreme).
