[Music] [Applause] [Music] i have a new burger restaurant so we're making two of the burgers right here right now that you can go get yourself andy and like i hope [ __ ] so we have not not tacos taco restaurant we have grays which is a um flatbread charcuterie board sort of casual shareable food uh also in little italy and san diego and just recently we opened under the umbrella eats by sam two new concepts a sandwich concept and a burger concept appropriately named sam witches and sam burgers and some of the things that we've made here are on the menu there max said what do you want to make and i go look we have a brand new breakfast burger coming up that's i think insane lee delicious he goes let's do that and then as we're getting ready he goes oh you've got some extra meat i go yeah he goes why don't you make your most popular burger that you're selling there it's called the not so basic and i went he goes and he gave me that puppy dog look and the you know you see his big eyes staring at me like a little kid in his mullet because he won't cut his hair uh okay fine we'll do that too both you can get but now both you'll be able to make the breakfast burger has sauteed onions they actually both do so we'll get those going then we'll make a two ingredient sauce for the breakfast burger that's so good and uh and we're away to the races okay okay sauteed onions are simple a little avocado oil and some diced yellow onion yes you could use white yes you could use red anything you want and these we just want to caramelize get a nice color to them that will bring out the natural sweetness and make anything that they get added to better and the smell is amazing i suggest if you don't like the taste of onions you get to learn the taste of onions because they're spectacular and while these do their thing in our non-stick pan we'll make our tiny little simple sauce do a lot of people not like onions oh god i argue with greg rempe every [ __ ] episode almost well i guess we got something for everybody to comment on do you like onions do you like onions so the question is this do you like cooked onions do you like raw onions and if you like both just all you need to reply is both that's all we care about they're amazing i just think they bring so much flavor to everything i throw them in everything they're like garlic onions garlic put that [ __ ] in everything and you'll be fine okay but our sauce for this remember breakfast we're making a breakfast burger you don't know all the other uh parts of the burger yet but for the sauce just let me flip over all the cards and tell you that the two ingredient sauce is japanese mayonnaise and maple syrup we're making a very simple maple aioli it's going to be fantastic fantastic everybody cozy and warm over there in your jackets pretty nice because i'm not we begin with some japanese mayo and to that we add our maple syrup yum i'm going about three to one mayo to syrup i don't think you want it too sweet and when it's mixed it looks beautiful like that you taste it that is all the right amounts of [ __ ] delicious right this just lives off to the side or just lives in your fridge for like a little late night dipping of anything a grilled cheese in that oh my god i just realized that would probably be very good okay that's made onions um i took the onions off they're starting to get some very nice color i don't really need them to get any more than this like this is perfect so let's just put them in here we'll get him out of the way oh the smell all right perfect next our patty this is your basic everyday breakfast sausage i want uh about a quarter of this this is a pound i want what is roughly a quarter of a pound so in my mind it's gonna look like this which is great so we're gonna smash this so i'm fine it's ready that might be five ounces it's okay i'm gonna leave it we don't need it quite yet but what we need to do for our bun which is a lovely brioche bun which we could just uh cook on the grill be fine be delicious even but we're gonna make this into french toast thereby french toastifying the bun damn it damn it this is gonna be good all right basic french toast looks like this we begin with a couple eggs a little milk i'm not a cinnamon sugar guy you can add that if that's your thing is not my thing i just like basic old egg and milk when this is ready we're ready to get the patty going and almost this going we're gonna get ready for our eggs first so we melt some butter in our pan and what you don't know is our next ad already cooked tater tots these are going to mix in with our eggs but i want to bust them up before i put them in here just like this nothing fancy beautiful we want them starting to get a tiny bit crispy just a tiny bit won't take long we'll try and keep them in the shape of a patty all right well that's happening i think it's time for us to get our french toast going on we'll throw some butter on for this hey you and now the bun so we take our beaten egg and milk just like we're making french toast except we're not using flat square bread we're using a brioche bun gorgeous and now down into the butter sizzles it's doing its thing let that start to crisp up a little bit check on our hash browns making me very happy now it's time for our patty like this like this like this and like this beautiful beautiful now we come up here we beat an egg and we add this to the hash browns and as it spreads out we try and contain it right there beautiful salt and pepper on the egg salt and pepper on the patty like that now let's check our buns look at that that ladies and gentlemen is a french toasted brioche bun beautiful this is fantastic nice everything's coming along beautifully beautifully we'll give our eggs a little flip like that perfect i think our patty can be flipped and we'll add one piece of white cheddar to that oh this is going so well i'm so happy all right pretty much there cheese needs to melt eggs are ready french toast beautiful we can start to build okay our buns first the inside of the bun is going to be the outside of this burger so we have these guys like oh like this and they each get some of this maple aioli top and bottom then we go our patty oh it's hot really hot and then our egg beautiful and then our gorgeous onions that we're so happy we made unless you're an onion hater and then encourage you to open your mind but wait don't stop there because last but not least a couple pieces of bacon and then our top bun ah that ladies and gentlemen is a breakfast sandwich i think you can get behind and the only thing left to do all our beautiful layers here is cut let's see what we're dealing with oh hey you know what sometimes you guys piss me off you do that okay i can't be mad actually look how great it's gonna be damn i love the idea of that layer of the hash brown inside here i love it with the egg this bite french toast outsides little hint of maple oh my god the french toast totally changes it like totally changes it you get to hit a maple but the bun really is so different the whole thing and i just realized something i use ground beef i didn't use the pork amateur if you come to eat by sam the cooking guy and order the we're calling it the village because a whole bunch of us thunk this up in order to the village it will come with a pork breakfast sausage patty in the middle you can swap it for the ground beef and our ground beef blend is brisket short ribbon and chuck so it's very good there there was just too many things here i had the pork in a ball i had these guys i don't care but wait don't stop there we're now making our not so basic basic it's very simple it's the way that things go together that make it special sauce first sauce sauce all right so we're gonna need some pickle for this specifically dill so let's just cut some just finely diced this will be enough for what we're making oh man you hear this we're gonna get carried away in a in a wind and rainstorm in a minute and if you don't like dale suck it you should because it's great you want the tanginess from this you want the the dill aspect of this okay now we wipe this because i'm anal and we add the following japanese mayo make a little extra because it's always good to have around ketchup a little sriracha mustard salt and pepper and we mix this in the restaurant we call drive-thru sauce it's on a couple of our things but especially good on this burger good let's cook some oil of course spread it out add two burgers add two bowls and we flatten beautiful kosher salt and pepper and i'm feeling rain coming the bun we can throw on the other side like this like this and like this gorgeous not yet yes we'll let the top bun get a little more color we're getting close and these are looking good to me so flip flip [Music] cheese them both get a little closer cover them with a lid and as soon as the cheese is melted we're ready to build that looks good to me here's what we do we'll take this guy we'll lay on top of his buddy here just like that and then both of them you guys come with me all right so let's make some magic shall we first our sauce what do we always say when it comes to sauce chance oh god what do we say don't be cheap now great alan restricting the amount of pickles on mcdonald's burgers you [ __ ] [ __ ] helen here we go and on these guys go uh oh it's hot oh man nice remember our onion friends well they're back and they're better than ever well they're the same they're still very good but they're here and then the top bun i don't think needs more like you're happy just like that and those crispy edges of the burger are what the smashing technique is designed to do that's what you want ooey gooey crispy melty the whole thing just works we call it not so basic because it's easy it's basic but it's really good it's the classic sum of the parts thing boys that we don't really get nobody gets so as i pick this up oh i can smell it from here it's warm in my hands a little bit crispy the edges of the bun see the crispiness of the of the beef in here the proper beef this time the onions the melted cheese and
