The MOST DELICIOUS Queso Recipe (Chili Cheese Dip)

this chili cheese dip queso is just queso on beefy chili steroids it's so savory it's got just the perfect little kick of spice it's as authentic as a texas queso is gonna get only more toxified because of the chili you're gonna start by adding one pound of lean ground beef to a large skillet over medium-high heat sprinkle over one one ounce package of taco seasoning followed by one teaspoon of chili powder and use a wooden spatula to work the seasoning into the meat simultaneously breaking it apart you're gonna let that cook for about eight to ten minutes or until the beef is fully browned and totally cooked through then you're going to add one 10 ounce can of rotel drained followed by one and a quarter cup of low sodium or unsalted beef broth stir that in and let that come to a simmer once the mixture hits the simmer you're going to create a slurry using two teaspoons of cornstarch and one tablespoon of water use a fork to mix the two together and then you'll pour it right into your beef mixture give that a stir and simmer that for about five to seven minutes stirring occasionally just until it's looking slightly thickened reduce the heat to low and add in one 16 ounce block of velveeta cheese that's been cut into one inch cubes and you're just going to stir until the velveeta is almost all the way mixed in you just can't make queso without velveeta you could make a queso with a roux and freshly grated cheese but then you're sort of changing what queso actually is it's just not the same like if you're gonna sit down at a mexican or tex-mex restaurant anywhere within the state of texas and you want to replicate those flavors it's gotta be the veda yeah like make it from scratch is really kind of our thing but when it comes to queso you just gotta use the velveeta there's there's just no way around it once the velveeta's looking pretty melty you'll add in one cup of freshly grated cheddar cheese and stir that until it's totally melted that freshly grated cheddar is gonna just add a little bit more flavor to the dish but that velveeta is going to help us to stay true to that creamy cheesy queso consistency if i could only eat one food for the rest of my life it would be queso so this recipe is pretty near and dear to my heart at this point your chili cheese dip is totally done you can ladle it over a giant pile of tortilla chips and top that off with some more freshly grated cheese or serve it up just as is with a bag of chips on the side dip and in joy
