there we go look at my lovely little meatballs welcome to another episode of gas cooks today we are making three lovely tempeh recipes do you know what temper is I do is soya beans pressed together and then fermented this results in a beautiful meaty nutty meat replacement that originated in Indonesia now this video is sponsored by plant power they make the best tempeh it's organic and you can get it all good supermarkets in the UK I'm going to make three incredible recipes with it the first one sweet-and-sour tempeh really easy that's a fast one the next one after that I'm gonna do one that's going to wow like a special occasion one crispy coated tempie with occasion coating and I'm using a very special ingredient as the Kris penis not panko breadcrumbs something quite out there and a third one a Barney style dish 10p meatballs we're going to put them into a baguette and it's going to be absolutely fantastic let's go so let me just say some of the advantages of eating Tempe because it's the whole soybean pressed together you're getting more protein in comparison to something like tofu which has already got loads of vegan protein so it's good for that reason it's also got more of a bite to it I find and it's got that amazing nutty flavor providing you've got a good quality one such as this plant power when I'm such a big fan of it this is how it traditionally comes like a block like this in Indonesia so I like that like keeping that authentic nurse what I'm going to do now for the first recipe is actually cube this and I'm going to put it onto a lined baking tray with a touch of oil and a bit of seasoning and then I'm gonna roast it whilst I make my sauce and cook my vegetables roasting is going to make it even more meaty and give it even more of a lovely bite and give it some nice color [Music] so for that lovely sweet-and-sour sauce yes you can go and buy a premade one but when you make it at home it tastes hundred times better and you can make a big batch of this and keep it in a bottle and add it to stir fries whenever you want but today I'm just going to make enough to serve for this meal so into my saucepan I'm gonna add 1/2 a cup of pineapple juice 1/4 cup of rice wine vinegar 1/2 a cup of water 1 teaspoon of minced garlic a couple of teaspoons of sriracha 4 tablespoons of tomato puree and some soy sauce place the sauce mixture over a low heat so for the veg get as creative as you want I'm gonna throw in some carrots I'm gonna chop them finely a red pepper yellow pepper red onion some ginger finely sliced some tender scent broccoli and I've also got some pineapple which I'm going to add too which works really well with a sweet and spicy sauce walk on so if you're cooking with oil when you add it to a wok you want to go around the sides not put it in the middle because when you're cooking with a wok the food is supposed to share that surface of the pan so around the top and let it go down to the bone when the pan is hot add the veg so I'm gonna add the pineapple laughs and I'm just going to cook this red for about two to three minutes that's all it takes I've cut them very finely and evenly that's important when you're what cooking cook your vegetables evenly I'm gonna add some sweetness now to the sauce I'm gonna add some maple syrup so the consistency of my sauce is actually perfect what you can do if yours is slightly too running you can thicken it with corn flour in it it will actually give it that sort of traditional Chinese sweet-and-sour sauce consistency but I like it like this [Music] add that pineapple now whoa okay so the sauce is ready that's the consistency that you want so I'm gonna add some of this to the wok now and I'll hold something back to add once I've added the Tempe and I'm going to turn the heat on the walk down mmm you want the veg in a dish like this to still have that bit of a crunch to them that's snap if it's just soft there's no texture so you want to cook them really fast and now it's time to get my Tempe out the oven it is lovely and golden nice bite to it I could eat this all day it's so yummy yummy I've never said that before it's actually so yummy all right so Tempe straight in all right so a little bit more sauce is needed it's caramelized around the veg but I just want some more let's get that in look at the colors on that Wow it's time to server guys look at this this is nice sweet and sour that smell the sweetness the vinegar enos were you [Music] garnish with a few sesame seeds and a little bit of lime [Music] so simple as that that's my sweet and sour Tempe with some lovely vegetables homemade sweet and sour sauce you can't go wrong it's so simple let's give it a taste and then we'll get on to the next dish it goes bit of Tempe bit of carrot mmm [Music] that is the crunch you want hmm sweet and sour does what it says on the tin a little bit of a kick at the end thanks to the sriracha the tempeh is meaty he's got that nutty flavor this is lovely trust me you've got a try Tempe try plant power Tempe I wasn't a huge fan of Tempe until I went to Indonesia had the best tempeh there is to try and then came back on it so I need that Tempe again found plant power and I was converted to a fully tempeh lover that's my favorite vegan protein but it's not over yet and it get into the next dish which is it crispy Cajun coated tempeh fill it with a homemade barbecue sauce sweet potato and veg this is going to blow your socks off the first thing you need to do is make that spicy crispy coating I'm going to be using corn flakes instead of something like panko breadcrumbs which you can use but the corn flakes because of their texture already been like really really ultra crisp it's just going to make sure that the final result is going to just be incredibly crispy so first up into a shallow bowl I'm going to add some plain flour then I'm going to crumble in the cornflakes into smaller pieces but not totally a crumb then I'm going to add some Cajun spice mix and some mixed herbs I'm also going to add a pinch of sea salt and some cracked black pepper and give this a good mix up okay so you need something to stick this lovely crumb mixture on to the tempie so I'm gonna whisk together some plain flour with some water and a touch of oil you can use gluten-free flour and gluten-free cornflakes for this just so you know so the Tempe the only thing different I'm going to do is I'm just going to cut this into two Phillips two portions here and then we're going to coat it first up dipper Tempe fill it into the flour water mixture then into the lovely coating then place it onto a lined baking tray you can double-dip if you want [Music] so to cook the tempeh you can get them straight into the oven like this but I like to get a little bit of color on them first so I'm just going to lightly fry them in my non-stick pan and then get them back onto the tray and into the oven for about 15 to 20 minutes if you're going to cook them without frying them just put them in the oven for about 25-30 minutes or until they're nice and golden so now it's time to make my homemade barbecue sauce to go with this crispy coated Tempe into my sauce pan I'm gonna add some tomato ketchup some maple syrup soy sauce cayenne pepper paprika garlic and some liquid smoke which is optional I must say this is actually a normal-sized jug I'm just a giant okay you obviously haven't met me in real life because I'm on YouTube and I'm actually like seven foot ten and this is a normal size joke office reference what is the most inspiring thing I ever said to you don't be an idiot changed my life whenever I'm about to do something I think would an idiot do that and if they would I do not do that thing I'm just gonna have to touch the water to loosen it up then get it over a low heat and mix it well [Music] so my sauce has been thickening up it's a lovely consistency now and it's time to get the crispy coated tempeh out of the oven it smells so good and I've already pre-baked some sweet potato and steam some cavolo nero and some asparagus which is what I'm going to serve this with so let's get it out oh wow this that Christmas and this sizzling this is gonna be epic and even though this hasn't been deep-fried the crispness is gonna be crazy Wow yeah me [Music] all right let's get some of that sauce drizzled over the top [Music] and there is another simple tempeh dish taking tempeh to the next level crispy occasion coated tempeh fill it with sweet potato greens and my homemade smoky barbecue sauce cannot wait to give this a taste smells amazing here goes for that corner that's amazing if you've got any fried chicken lovers that want to go vegan cook them something like this you don't have to spend hours making vegan seitan you can use tempeh and the coating just makes fried chicken anywhere I guess so you get a good coating and you've got something meaty inside you've got something great and this is an amazing vegan version so tasted that barbecue sauce is so tangy - this makes me want to do a dance it's that good [Music] and full written recipe is on my website for all three recipes that I'm doing today the next one is those incredible tempeh meatballs that I'm going to put inside a baguette inspired by a barn me that's next I can't believe it this is like flavor explosion recipe video three recipes in one that all taste incredible so for the meatballs it's very very simple you can add all these ingredients to a blender or you can crumble in the tempeh into a mixing bowl or just chop it really small so there's plenty of ways to do it so I'm going to do that first and then I'm going to get an array of beautiful flavors into the bowl next the ball I'm gonna add some minced ginger and garlic [Music] then finely chopped chili a handful of coriander some tomato puree and some sriracha I'm also going to add a bit of soy sauce too it's time to work this mixture now use your hands if you're doing it in a blend that you won't need to do this it's a lot easier but I want to show you if you don't have a blender so to help this all fine together I'm going to add some flour I'm going to be using buckwheat flour so here we go we've got a nice beautiful flavor some tempeh mixture that we can boil up now or you can form this into some sort of patties and make a burger out of it the thinner the better when you're doing a burger actually with this Tempe so I'm going to make some balls now and this is actually great if your kids they can come and help actually I don't even know guy and got kids so maybe they won't enjoy this but maybe they will get them involved it's good to get your kids involved in cooking if my dad hadn't got me involved when I was a kid I wouldn't be doing this now and actually talking to my dad who would like to see me and my dad cook together for a little series on my youtube channel if you would like that comment below he's an amazing cook he's gone through a lot massive heart operation recently then he went vegan after it and he's thriving today so it's a good little story let's boil these up into some lovely meatballs [Music] there you go look at my lovely little meatballs look at my meatballs it's time to cook them so I get my non-stick pan over a medium heat add a touch of oil if you want to keep it oil free this recipe just put these on the line baking tray and straight into the oven for about 25 minutes so if you've been following my YouTube channel for a long time you should know why I'm putting these meatballs into the pan in a clockwise direction if you want to know why go and watch the low-cost meals video that I did with Rachel amaura and I explain this process pretty straightforward to be honest when I get some nice color on these meatballs look at that color look at that color that is what we want Wow we they look like pork meatballs anything is possible vegan every time I cook I realize that now holding together they're not breaking apart they can have a nice bite to them so people ask me you're vegan why on earth you creating meatballs or meat replacements and my answers to that is the fact that I didn't go vegan because I didn't like the tastes of meat or the texture of it I went because I didn't like how it got to my plate and if I can make an equivalent I will do and this is so so tasty if you put this dish down in front of anyone whether vegan or not they're going to enjoy it and it's it and if it has that familiar texture and taste they're going to enjoy it for sure now turn them on to the idea of veganism so now that I've got some lovely color on these balls I'm gonna get them onto my lined baking tray and into the oven just to cook through to the center for about 10 minutes all right so I got my baguettes in the oven as well just getting nice and brown and crisp meanwhile I'm gonna prepare my fillings it's up to you what you put inside I've got some pickled radish in carrot on a slice of avocado chop up some cucumber and some spring onion and I'm going to garnish it with some Thai basil some mint and some alfalfa sprouts [Music] here's my meatballs look at them nice and crisp on the outside French stick she's not French stick to forget as soon as the meatballs come out Ivan I like to drizzle over a little soy sauce just a season them alright I've got to build them now but before I do let me just taste one of these meatballs because the texture is meaty as anything so recipe God's bless me again that is amazing seasoned perfectly garlicky coriander the good thing about Tempe is that it it's a great absorber of flavor and even more so when you basically mash it into a meatball it's amazing let's plate this up well this let's build the sandwich mm-hmm I'm gonna spoon over some of my homemade vegan Mayo then this build it first up avocado [Music] I'm doing this very fancy it's all gonna get squashed down in a sec [Music] and just some of that pickling liquor on the top they're soaking into the bread just get the lid on and there is my Tempe meatball baguette inspired by a band me Wow [Music] squash oh we've lost the ball just look at that meeting
