hey what's up everyone welcome back to my kitchen for another recipe video my name is derek from simnet nutrition and today i'm going to be sharing with you three different recipes that you can use to make tempeh taste amazing so the first one is going to be a tempeh bacon this has got to be one of my favorite ways to have tempeh but it's not the only way there are others i also really enjoy this tempeh sausage crumble that i'm going to show you how to make this is a really versatile one that you can use any spices to make it taste however you want but today i'm going to kind of go with a herby italian kind of flavor but there's many and i'll explain that as we go on and then the last recipe i'm going to show you is how to make these amazing baked barbecue tempe bites super good as well i like all these recipes so a lot of you may have tried tempeh maybe you haven't but a lot of people when they first try tempeh they're kind of thrown off by the flavor because it is a little bit how you say earthy yeah it's a little bit bitter and a little bit nutty so a lot of the time people just buy it they'll cut it into chunks they'll throw it into a stir fry and think it's gonna taste good and well it doesn't but it's such a healthful and high protein plant food i think it's worth putting a little bit of time and effort into making it taste good there are a bunch of different brands that make tempeh now i mean i'm seeing them all the time and they all taste a little bit different some are more bitter than others some are more earthy than others so definitely like try a variety of them and figure out which one you like the taste of best and they even have a bunch of like different flavored ones out on the market now i even saw like a smoked one uh the other day and they even have tempeh bacon that's already made but i know these aren't in all stores and not everybody can find them so that's why i'm showing you these recipes here today if that earthy and bitter flavor like really bother you some people find that putting it in boiling water before you actually use it for the recipes helps to get rid of that so you can either just throw the whole like chunk of it the whole block into some boiling water or you can cut it into strips and then add it to like an inch of boiling water in a saucepan and then just like cook it for 10-15 minutes and that's supposed to get rid of some of the bitterness but be honest with you i never take that extra step like you guys know me i'm all about like making it as easy as i can so before we start with the recipes i'm sure a bunch of you are sitting there asking like what is tempeh derek i'm not like a level 8 vegan yet i don't know what tempeh even is can you explain it to me so tempeh is basically whole soybeans that are cooked and then pressed into patties or into blocks and then fermented so i hate to say it but that white stuff that you see on there is actually a mycelium which is a totally edible type of mold that actually helps to form the tempeh blocks together with its cottony strands but not only does it do that but it also helps improve the digestibility of it enzymes synthesized by mold can hydrolyze soybean constituents to release bioactive peptides and inactivate or eliminate anti-nutritional components such as phytates so this just means that the nutrients that are in the tempeh are actually easier for us to absorb than if you were to be eating just like edamame or even tofu it's obviously a great source of protein one of the best sources of protein in the plant kingdom in my opinion but not only that it's a good source of different b vitamins and also contains a good amount of iron and zinc which makes it an amazing food for athletes and bodybuilders it's also important to note that sometimes you'll notice your tempeh starts to turn color a little bit like it gets a little bit darker a bit gray sometimes you get these black spots on it so if you ever ever see those like black spots or if it's turning gray don't worry about it just you can cut it off if it really bothers you or just like eat it anyways it even says on most tempe packages that it's totally normal so don't worry too much about it the first time i saw it i freaked out i was like oh my god there's no way i'm eating this moldy but yeah actually it is moldy okay okay so there's a lot of benefits to this tempeh tarik now can you please tell me how to make it taste good so the first one i'm going to show you is the tempeh bacon let's get started all right so first you get your tempeh and if you want to go through that extra step of boiling it right now to get rid of some of the bitterness go ahead and do that now and then you want to cut it into nice thin strips so about an eighth of an inch to a quarter of an inch thick you know just like bacon is uh you also want to make sure that they are even this ensures that they will cook evenly so then you want to get a nice dish like this one just something that you can mix the marinade in and then marinate the tempeh strips in so i'm starting with three teaspoons of bragg's liquid aminos you could use soy sauce or tamari instead of that two teaspoons of maple syrup i'm gonna use a half a teaspoon of liquid smoke so this stuff is very strong you don't want to use too much of it and i'm also going to be using a teaspoon of smoked paprika so you could use just one or the other they're both going to add to that smoky flavor half a teaspoon of garlic powder half a teaspoon of onion powder and then three quarters of a teaspoon or so of black pepper then mix that up i do like to add a couple teaspoons of water to this mix as well it does thin out the marinade a little bit but it is a really strong marinade so this helps it to carry a little bit further but feel free to omit that if you want it to be really strong or add some more if you find this to be too strong it's always a good idea to taste it before you put your strips in there just to make sure it doesn't taste disgusting so fire the tempeh strips in there and just you know kind of make sure that they're all coated in that and i'm actually going to do another layer on top so i didn't do this the first time that i kind of tested this recipe and it was a little bit better with just the single layer of the tempeh strips but this marinade is like really tasty and it does carry pretty far so you can definitely stretch it out like this if you want but if you want like really strong tempeh bacon then i would just suggest doing a single layer so ideally you want to leave this in the fridge overnight or at least for a few hours to really soak up all those flavors but if you're pressed for time you can just cook it right away so i'm just spreading them out evenly onto a big baking tray and using a non-stick mat fire that in there at around 375 degrees for 12 to 15 minutes get some reps in while you're waiting a couple dips some leg raises all right so the bacon is all done and it looks awesome let's see how it tastes oh yeah yeah so it's good definitely bacony uh the first time i made it i didn't put the two layers of the tempeh down and i found it to be like a little bit salty definitely strong so if you prefer that uh you know use less tempeh and more the marinade but it's really really good like this i'm sure you guys can imagine all the ways that you can use tempeh bacon i mean of course like on the side of a nice like big breakfast fry up like a tofu scramble and all that and be really good with that you could even make like a blt with it if you wanted you could also just like crumble it on top of a salad or just snack on it on its own like this [Music] alright so next is the tempeh sausage crumble so like i mentioned in the beginning of this video you can season this whatever way you would like to make it taste however you want like in this old video here i used taco seasoning and made tempeh tacos out of it so i'll put a link to that in the description down below but in this video i'm going to show you a slightly different way to season it and it's going to be more of an italian herby sort of sausage flavor but again get creative with this you know season it however you would like so you want to start just by crumbling it using your hands into a nice big bowl this is going to be your mixing bowl so once that's all nice and broken up and looks like that put that aside get a little bowl to mix your spices in and then we've got a teaspoon of garlic powder one teaspoon of onion powder one teaspoon of paprika you could use smoked paprika if you want it to be smoky half a teaspoon of sage i've got some rosemary here from the garden so i'm going to use a half a teaspoon of rosemary also some thyme from the garden half a teaspoon of thyme and then a half a teaspoon of chili flakes oh yeah added some fennel to this as well so fennel has uh you know kind of a licoricey kind of flavor if you don't like it don't add it but i just chopped that up and then fired that in there half a teaspoon of that some black pepper as well and then just give that a little mix fire it into the tempeh crumble season with a bit of salt if you want or liquid soy seasoning that bragg's liquid aminos again this stuff's really nice gives a real deep umami flavor which kind of mimics the sort of flavor that we get from meat a little bit mix that up really well then you're gonna have something that looks like this delicious you could eat it just like this if you want or you could continue add some worcestershire worchestershire sauce mix that all up make sure it's vegan because a lot of the worchestershire sauce has anchovies in it but again not a necessary step put this into a frying pan i like to add a half a cup of water just kind of help it get going and help it all kind of cook and get nice and like flavorful and give it a bit of like a sauce almost and then you just want to saute that for 5-10 minutes until all the water is gone so the tempeh sausage is all done and looks pretty good to me it smells amazing i wish you guys could smell it in here so uh it's really plain right you like of course you could chop up some like bell pepper and some onion and some celery and stuff and have it with this as well just to you know kind of like increase the nutrients and the volume of course the taste of it but i just wanted to show you like the simplest way that you could make these and of course you could go on and use it however you would like so let me give this a try [Music] yeah it's good definitely good uh for some people i'm finished eating so some people definitely might want some more salt on here but it's going to be so good with some other things so i mean yeah think of all the ways that you could use this again you could have it on the side of like a big breakfast fry up or a tofu scramble you could also sprinkle it on top of like a salad it would also be really good in a wrap you can mix it into like spaghetti sauce if you wanted as well it'd be a good way to get kids to eat it and it would mask the sort of like nutty bitter flavor even more but yeah it's really good just like this you could just serve it as a side and you know just have it in like a little bootable or whatever you want just as is and next i'm going to show you how to make these delicious barbecued tempeh bites so this is by far the easiest of the three recipes but i think it's worthwhile showing because it is so simple and so delicious so you want to start by getting the temp out of the package boil it if you want to get rid of that extra bitterness cut it into cubes put it into a dish add a bunch of barbecue sauce get in there with your fingers mix it up once it's all mixed up nicely i would let it marinate again for a few hours to let it absorb all those flavors put it onto a baking dish baking tray sorry cookie sheet whatever you want to call it i added a bunch of black pepper find that really tasty whack it into the oven about 15 to 20 minutes at 375. [Music] nice so these cooked perfectly just starting to brown around the edges and caramelize a little bit man these look awesome yeah so it's good definitely barbecuey um this one i didn't leave to marinate for long enough just because i was in a bit of a rush to film the video here but yeah if you definitely like leave it for you know like four hours or even overnight in the fridge it'll soak up a lot more of that barbecue sauce and get you know right into the center of it but uh yeah these are super good little nuggets uh you could have them again you could have it with like a bootable um you know you could just snack on them on their own i guess if you're looking for a little high protein snack uh put it in like a stir fry i mean you can imagine all the things you can do with these all right so i think that's probably it for this video i've got a whole bunch of tempeh to go eat some gains to be made but i hope you guys enjoyed this video definitely leave a like if you enjoyed it if you found it useful it helps me so much and it's so easy for you to do so i do appreciate it definitely subscribe so you can see more from me and leave a comment down below let me know what your favorite way to have tempeh is if you guys make any of these recipes you know i love seeing them tag me on instagram also follow me on there so you can see daily you know workout and food inspiration thank you guys so much for all the support watching the videos much love see you soon bye [Music] [Music] you
