[Music] welcome to the whole food plant-based cooking show where we make plant-based cooking easy i'm jill and today i'm going to teach you how to make cabbage rolls okay so today we are making cabbage rolls and if you've never heard of cabbage rolls that's okay i'm going to show you exactly what they are i hadn't heard of them before either until years ago my husband and i were teaching esl english as a second language and one of our students made this for us and i was just in love it was so delicious and since then i knew i have to make it of course so you need a nice big head of cabbage that's what you need first this one probably isn't even quite big enough just kind of depends on how many people you're feeding this is going to make a pot smaller than this we have a dutch oven that we're going to use for this and it will probably feed i don't know six to eight people or a couple people for at least two meals so you know one meal and then leftovers so when you're starting out we need to get rid of that core so you need to just go just take as little as you can out just cut that core out because you want to be able to peel the leaves off and you want to get yourself a pot a big pot like this and fill it halfway with water and get that up to a boil okay let's see if we got here all right this is one of my misfits cabbages so it's a little bit banged up but it's still all good all right so you just get that middle part out like that and you set your cabbage down and your pan that's already boiling oops just set it down like this with that part down put the lid back on and you bring it back up to a boil and we're going to let that sit there for probably it'll probably be between 5 and 10 minutes so that it starts loosening up those leaves and then we can start peeling them off so i'm going to get this out of the way i'm going to get my other pan going so we can start mixing the filling all right so now we're going to get on to the filling so i've got one whole onion here just diced and if you want the full recipe there will be a printable link in the details below and then i've got two stalks of celery same thing finely diced and we're just going to saute these down until the onions are translucent and then we'll mix in our other ingredients but while that's cooking you can go back and check on your cabbage and and pull off a couple leaves so while this is cooking you know you can pull off a couple leaves and then put the lid back on come back check your onions pull off a couple more leaves so when you're pulling off those leaves you have to be very gentle because you don't want to tear that leaf because that's going to be the pocket that you're going to put all this filling in and if you rip the leaves there's going to be holes that the filling is going to ooze out so when you're pulling that first piece off you want to just gingerly kind of you know lift it around the edges and then just kind of shimmy it off of that and then set it aside on a plate and put the lid back on and wait for your next few okay so now that our onions and celery are done if you want to take a look and see what they look like this is what they should look like when they're done and just so to remind you you do not have to saute these in oil i simply started them cooking and once they feel like they're starting to stick you can just put a little bit of water on there and it comes right off so we're just water sauteing so now that those are done we're going to stick these in the bowl and either you can have these cooking at the same time like while your cabbage is going or you could have pre-cooked them and the next thing you put in i have already pre-cooked these this is two and a half cups of green lentils which would be probably about two cans if you're using canned lentils or maybe just a little bit less than two cans the same with the rice this is two and a half cups of cooked rice which was about one cup of dry this is a whole grain brown rice and then we'll have one tablespoon i like to use the stone ground mustard because i just feel like it has more flavor so one tablespoon of that two tablespoons of balsamic vinegar three tablespoons of flax meal or ground flax and then for spices i have two teaspoons of smoked paprika half teaspoon of cumin a teaspoon of onion powder and a half teaspoon of cracked pepper and we're just going to stir these together until they're really well well mixed and typically cabbage rolls are made with some type of ground meat usually ground beef and a bunch of spices and stuff but they're usually pretty simple just maybe onions and ground beef but we're trying to make these really nice and healthy right plant-based and rice they usually have rice in them too sorry but this lent this filling really lends itself if you don't really like lentils a whole lot you could use a riced riced cauliflower that works pretty well too there we go so the mixture is kind of like that ground beef mixture it's just small it's easy to you know stuff into those little leaves so you just want to mix it really well so you get your spices all really well incorporated so while your cabbage leaves are finished cooking i'm going to get out my dutch oven and then i'll show you how to make the broth that these are going to cook in while we're waiting for that i'd like to back to the show okay so my cabbage leaves are already done i have them sitting here i'm gonna let them cool just a little bit because they're still scalding hot if i try to roll those i'm probably gonna burn myself so we're gonna make our sauce it's just a simple broth these are going to cook in and it's just going to soak into those cabbage rolls while they're while they're baking oh it's so delicious so get your oven preheated to 400 degrees we're going to start with three tablespoons of tomato paste and let's stick it over here we have three cups of vegetable broth this is just a low sodium vegetable broth then we have a half teaspoon of onion powder and two teaspoons of bragg liquid aminos and if you don't have that you can always use a low sodium soy sauce or tamari and then i always generous amount of pepper in there it's completely up to you if you like a little bit more of a bite put lots of it in there i kind of like the little bit of a bite to it okay now we're just going to whisk that to mix it up get all the the tomato paste all broken up okay that looks pretty good okay now on to our cabbage rolls all right so we're going to take our first leaf and like i said before you need to be gentle because they are still pretty delicate that one looks pretty good it's a little rough but it's all right so you want to just put get a glob of your mixture oops that's still got tomato paste on it that's all right it all tastes good okay so pretty generous amount you don't want to get too too full because you kind of have to fold this over like this it's kind of like little mini burritos right so you kind of fold in the edge if you can as good as you can and then you just like roll them over just like that and this part depends on how big your pot is if you only have a smaller pan that has a lid you have to have a pan that has a lid that can go into the oven okay so if you have a big pan like this and you don't have very many leaves you might want to lay them down like this and start layering them that like that or if you have a smaller pan and a lot of leaves you can put them up like this okay so i'm going to start i'm going to layer them standing up a little bit because i think i might have just enough leaves to go that whole circle okay so you're just going to keep rolling until you get them all full and you fill up your pan and then i'll show you what that looks like and we'll get them into the oven okay that's a lot of work so this is one of those recipes you just do occasionally right for a special occasion because it's a lot of work but they are so delicious all right so they're all done i'm just gonna put the lid on we're gonna get this into the oven and i'm gonna stick it in there on 400 degrees fahrenheit for one hour okay guys it little guys that looks nice oh look at that perfect and i have here just a little i have a little homemade yogurt sauce that i made so i'll leave that in the recipe below and a link to my yogurt sauce and then i just add some seasonings to it just for this recipe but i will have that on the recipe for the cabbage rolls yummy yummy yummy look at that see soft enough that you can cut it with a fork hmm that is perfect with that yogurt sauce oh yum that is so delicious it's just got the light flavor of the tomato sauce that it's soaking in you can tell that it's soaked all the way through cabbage
