[Music] foreign [Music] hi everybody I'm Rachel from Rachel cooks with love I'm getting ready to prepare some steak Ranchero this is an old Mexican recipe and I absolutely love it because it always hits the spot very easy to prepare these are the ingredients that I'm going to be using today I have three medium sized tomatoes and I've cut them up into pieces about this size I like to cut them into big pieces because they will get a little bit mushy and small later on and I've got one large onion and I've cut it up into nice big pieces like this see but this will break apart and it's going to be just so good in your dish I have two jalapenos now I have cut them into long strips like this see two of them I have some cilantro just a nice big bunch and I gave it a rough chop I've got some cooking oil and these are my spices I have one teaspoon of whole cumin one teaspoon of black peppercorn and half a teaspoon of Mexican oregano now you can use the ground form but I like to use the fresh one because the flavor is just what makes the dish and I have three large garlic cloves finely minced but you can use garlic powder if you'd rather do that I've got some salt and I have one large orange bell pepper a big one because I love the flavor and I've cut it up into nice big pieces like this see now if you don't want to use orange bell pepper you can use the red one the yellow one the green one you can use Anaheim Peppers which are delicious in this dish and then the star of the show I have one and a half pounds of flank steak look at how beautiful this is see now if you can't find flank steak you can use skirt steak you can use top round you can use milanesa those are those real thin steaks that you see at the grocery store that's milanesa you can use that and then just cut it up into small pieces you can even use a ribeye steak as long as it's a good beef meat now you can see the Grain on this meat it goes like this and you always want to cut it against the grain so you can have very tender meat I'm going to cut it up into slices about this size not too thick not too thin like this see now as I get further up over here the slices are going to be really long so you can cut those in half and this is my last piece it's just perfect look at this see now I'm going to Salt it really well now I've got the spices that I'm going to be adding to this dish but I'm gonna do that later right now I'm only going to Salt it and that's good so now I'm gonna set this aside until I'm ready to use it so my meat is ready now I'm gonna move on to my spices now like I told you you can use the ground form but I like using the fresh stuff because there's something about the flavor it brings back a lot of memories of when I was a child and my mom used to make it like this all the time and now this is how I do it now sometimes I do use the powdered form but in this dish I like to use the fresh stuff so I'm going to grind my spices up really good like this so I'm done grinding my spices I remember hearing this sound every day just like this and that was my mom see now I'm not gonna add any water to the molcajete I'm just going to leave my spices like that see I'm gonna set this aside and now that I have everything ready we can move on to the stove so I'm going to start off with my meat first and I'm gonna be using this large stainless steel Skillet and I've got my heat set on medium high you do want high heat in here because we're gonna sear the meat I'm going to add my oil you can use any oil that you like and I'm gonna wait until my oil gets piping hot you want it to get a little smoky so I'm going to wait until it gets real nice and hot now I'm gonna add my meat in here and you want to give it a little space we're going to give it a quick sear and you don't want to overlap them because then they'll get steamy on you and that's good I'm gonna leave it alone like that for about a minute or so until it gets nice and golden from the bottom so it's been about one minute now I'm going to flip these over just flip them over as best as you can see how they're nice and gold that's what you want now after one minute I'm gonna remove my meat and I'm gonna put it on this plate that I have over here and I'm going to continue the process [Music] now I'm gonna add the rest of the meat in here so I'm going to put it all back together now I'm going to lower the temperature to about medium or a little bit below and I'm going to add my onions now I'm going to add my jalapenos and I'm going to add my garlic oh man I wish you could smell it in here oh I just want the onions to get slightly translucent about one minute or so now I'm gonna add my bell peppers I'm gonna add my tomatoes and I'm gonna add all my spices I'm going to add some salt and I'm going to bring it all in together now the tomatoes are going to release a lot of their liquid and so are the peppers and so is the meat it was just seared but it's still very juicy and pink from the inside see now I'm going to add my cilantro foreign just like that now I'm going to replace my lid and I'm going to let it simmer for about 15 minutes until the tomatoes get a little bit mushy once the tomatoes are a little mushy it's ready to go just like that so my steak Ranchero is ready let's take a look oh look at this [Music] [Music] thank you now traditionally we always have refried beans either charro beans or just refried beans and we also have with Mexican rice look at this oh man now I made some flour tortillas flour tortillas are just so good with this dish I like to just put some on my tortilla like this a little bit of everything okay now it's time for the taste test um [Music] oh my gosh this is absolutely Heavenly I know you're gonna love it so this is
