[Music] hello this is chef john from foodwishes.com with the best barbecue baked beans that's right it's not a real barbecue until a dish of these show up and while there are many different versions and many different techniques i'm here to tell you that these are the best and by best i mean the tastiest the most satisfying the easiest and the meatiest so not only will these make a great side dish but if the budget's a little tight these would absolutely work as the main course and to get started the first thing we'll do is soak some beans and what i have here is one pound of red beans which i think are the best choice but any dry bean will work and what we'll do is add those to a nice big bowl of cold fresh water and we will let those sit overnight during which time they'll absorb that water and swell up and if everything goes according to plan the next day they will look like this and that's it all we have to do now is drain those and we will add those to three quarts of cold fresh water along with one nice big bay leaf plus if we're into it and i really hope you are about a pound and a half of pork shoulder which we've cut up into about two inch pieces and while you can certainly make this without the meat especially if you're going to serve it with a ton of meat i believe it is significantly better with the pork included and then we'll finish up with one large chopped onion and we will set our heat to high and wait for this to come up to a simmer and no we did not forget the salt all right adding the salt now can toughen the bean but don't worry we're going to add plenty later but for now all we're doing is waiting for this to start to simmer and once it does we can back our heat down to medium low and then we can talk about this pink foam that's going to form on the surface which many people insist you must skim off but you really don't have to but i do anyway and that's because it's part of my bean cooking ritual all right as you know i consider cooking a meditation and doing little things like this will help you relax so i am going to skim some off but you decide i mean you are after all the kings and queens of your barbecue baked beans and speaking of the tutors some people say by skimming your barbecue will be a little less noisy later but i'm not sure if that's been scientifically proven since not a lot of scientists want to go into that field but skim or not we'll go ahead and give this a stir and like i said reduce our heat to medium low and we'll simmer this for one hour or until our beans are just tender and while we're waiting we can go ahead and mix up the rest of our ingredients which will start with about a cup of your favorite barbecue sauce all right dealer's choice and then to that we will add some ketchup as well as a generous amount of apple cider vinegar and then of course if we're making baked beans we have to have some sugar and i'm going to go ahead and toss in some brown sugar although not a ton okay the one thing all bad baked bean recipes have in common is way too much sugar and then speaking of sweet we'll also want to do a little bit of molasses which you know what in fairness is really not that slow and then we will definitely want to add some yellow mustard or if you want to do the french version of this you could add a little dijon oh yeah that's how they do it a la cordon bleu either way we'll follow that up with some worcestershire sauce and that's it we'll season this up with some smoked paprika a little bit of cayenne just to stay in shape some freshly ground black pepper and of course some salt and that's it we'll take a whisk and give this a mix oh and i should mention i usually toss in a teaspoon of garlic powder which i totally forgot about and this was still amazing but i thought it would mention it in case you want to toss them in and that's it once that's mixed we go ahead and set it aside and we will head to the stove to check our beans and after simmering for one hour they should be just about tender which these were and i could tell because they were easy to smush and then i'm going to use this spider to transfer them right into the baking dish i'm going to cook them in which is a nice deep 10 by 15 casserole dish also known as our lasagna pan and yes a little bit of that cooking liquid is coming along with the beans and that's totally fine okay we're going to add a couple cups of that anyway so no do not discard that cooking liquid which you could accidentally do if you don't have one of these spider strainers and you had to dump the beans into a colander but you did that in the sink and the liquids were gone so the point is get one of these or you'll have to strain those liquids into another pot and then what we'll do once our pork and beans are in our baking dish let's go ahead and pour in all that stuff we just mixed up plus about two and a half cups of our cooking liquid and then we'll go ahead and give everything a stir and yes you can use less liquid and this will cook faster but i think using a lot of liquid and an extra long cooking time produces a much better baked bean so these are not going to be fast but they are going to be awesome and then we'll go ahead and finish this up with one optional step which is completely and utterly mandatory and that would be placing some strips of bacon over the top since that pound and a half of pork was just not gonna do it for me and of course besides the extra richness that bacon along with our smoked paprika is gonna give us a little bit of subtle smokiness which obviously works with all things barbecue and that's it once our baked beans have been baking we will transfer those into the center of a 350 degree oven for believe it or not two to three hours or until those liquids have reduced and that bacon is beautifully browned and fused to the top and hopefully it all looks like this and like i said if you use less liquid it will cook faster but this is not something i want to cook fast i want it to cook for a long time so that bacon has time to render and that pork shoulder gets succulent and tender and we'll know it's cooked long enough if we shake the pan and it all moves as one unit so to me this was spot on but anyway i went ahead and finished up with some sliced green onions because as you know i'm contractually obligated to take a few pictures but if you aren't i don't even think you need this i mean i consider that absolutely beautiful bacon to be the garnish so like everything else in life the onions are optional and yes i will eventually plate this up but i'm sorry for now i have to grab a spoon and start eating this right out of the dish way too hot to taste and that my friends was just an incredible bite of beans all right for me to call recipe the best i have to believe it with every ounce of my bean and i really really do i mean taste wise and texture wise i cannot imagine these getting any better and like i said you don't have to use the pork but man is the pork goodness and i really do think we used enough where this would be a perfectly satisfying meal as is i put this next to some coleslaw maybe toss on a piece of cornbread and i would be more than happy with eating just that but having said that i did want to finish the video by showing these beans in their natural habitat next to some barbecue ribs and other classic side dishes unfortunately it was a very overcast dark day so you're not getting the full barbecue plate in the sun effect but i think you get the idea and besides all the other obvious reasons why this is such a great barbecue side dish this is probably its optimal taste and texture at room temp or maybe just slightly warm which is why it's so perfect just set out on a picnic table in the sun and it's one side dish we don't have to fuss around about alright make it bake it take it set it on the table and forget about it until that is people remind you about it with all the compliments because they will be coming but anyway that's it what i'm calling the best barbecue baked beans whether you make these to serve as a side dish or as a main course all on their own
