looking for a one-pot meal that's really easy to clean up cook and everything is oh so tasty a cowboy favorite baked bean casserole browned up hamburger meat with a little onion some jalapenos and some of that great barbecue sauce that we just come out with come on folks because we ain't gonna wait for you we're dishing it out now [Music] hey thank y'all for stopping by camp on a nice cool morning it is where the lord has blessed us and looked there if you look right over the top of the hill shane there's a great sight coming up there it is the sun now some of you might not get up in time to see that and some of you may work all night and come home and go to bed before it ever comes up i don't know but i never take that site for granted it's one of the things where i used to sit on a ranch and i'd look out there and i'd see that sun come up and think the lord has blessed me again today but what are we talking about a ranch favorite that i cooked every time first noon meal on a ranch ever since i've been cooking for 30 something years it's a one pot meal yes it is and ooh we do love one pot meals especially when we're on a ranch because we ain't got to wash near as many dishes and need to set it out there and them cowboys will clean it up but this is one of my all-time favorites we just call it what shan baked bean casserole it is so good and it's even in the cookbook the very first one a taste of cowboy it is a great easy recipe bring together so good a little ground beef a little heat little sweet oh it's time to get after it let's go know here yo can you get you some of that a lot of good aroma coming out of there there isn't uh adam took two pounds certified angus beef 80 20 and shan says you got to always explain the 80 20. 80 lean 20 percent fat that's where i always like it cook it down to where you ain't got much grease left because it ain't got much grease in it to begin with and then we let it brown a little what'd we do two vidalia onions diced up really nice there was and two hot jalapenos out of the garden my gosh they've been hot this year the cowboy want his food to bite back now as we let this go a little and we gonna bake it some more so just get it brown through out and look here one of the most famous creations ever come out of new mexico what is it hatch green chilies one of them whole cans it is and cowboys they love this stuff especially ones in the wintertime because it's going to bite you just a little when you take a bite some brown sugar some ketchup calls for a half a cup we like one teaspoon having enough there it was mm-hmm okay chili seasoning now folks i'm going to give y'all a little heads up hearing about well not in it i would say within two weeks this chili seasoning will be for sale on our website as long as some taco seasoning and a dry rib rub now remember we got other new products that just come out and i'm fixing to show you one of them and put that in there and then what is it kent rollins red river mud why do we call it mud because this stuff will stick on some meat it'll stick to your ribs it'll stick to your chin anything you want to put it on and i want you to stir all that up first before we ever put that barbecue sauce in there that is is smelling some of that good now folks this is a molasses based brown sugar but it's got traditional dried chilies in it y'all know me i love to use them and i've got some ancho chili that is chopped up in there and ancho chili dried out let me see what could that be do you know shannon poblano that's what it is dried out um folks this stuff is good got that good smoke in there got the heat we're ready to go it also calls for what some mustard you see any here today shin now we got that stirred up but there's a star of the show that hadn't went to visit just yet and what is it pork and beans right out of the can you just dump them in there drain them really well but if you want to use the authentic version of pork and beans we got a true pork and bean video that they'll be linked right up there to where you can see it dump them two cans in there give it a good stirring when we're on a ranch so many times we would be there maybe from three to five weeks and that's a long time now you can't just be walking out there in a garden and getting you something to to work with my mother taught me how to get the best out of canned goods now you bought them from the grocery store but you add something to them you put the little flavors here there in yonder to mix with them and it changes it completely you don't even know it come out of a can no more because we had to always have canned goods when you're staying that long on a ranch especially if you didn't have a lot of refrigeration so they come in very handy they did and hey there's a lot of recipes in that cowboy cookbook what a tasty cowboy when we were cooking on a lot of ranches easy meals to make the art and i love a one pot meal so we're just going to bring this back to just a slow simmer to make sure everything is incorporated well and then we're going to bake it with what coals underneath coals on top but i hear some of you already out there saying cowboy can't eat i made a mistake you ain't supposed to put barbecue sauce or tomato based products in cast iron [Music] if you've got well seasoned cast iron and i'm talking this one is probably 1978 model hey i've never had a bit of trouble sure in brand new cast iron don't cook this recipe in it because the tomato base or anything that's acid based like that will eat away at your seasoning but you clean it well you dry it out well you season it well every time after you get through using it hey if it's an old piece you ain't going to have no trouble now remember if you've got any more questions about some cast iron whether it's cooking cleaning taking care of storage we got a playlist down there that'll answer every question you got because hey we've been dealing with this stuff for a long time meet me at the fire we're going to put something under that trivet to make it hot all right tall trivet i really love a tall trivet i do and we are really blessed here as shan might pan up there and look at old gloria it is whoa bertha got hot and scared to major well you see me get a toe duke stay off the camera well you see me set a tall trivet over here on a place where we've been cooking quite a bit with a dutch oven and remember i'm gonna give you this tip here i don't give it to all the people but if the ground is wet or the ground is froze or there's a lot of green grass or something that you're gonna put coals on heat it up first because you're wasting some of your heat as it burns away or warms up the ground now we place this on a tall trivet and i really like a tall trivet i do because it just helps regulate things a little better and a little easier to cook now the outside edge of this dutch oven you see me lay some coals out there not directly under and then place really pretty light on top another thing if you didn't have no trivet you see them little legs on that dutch oven i think shannon's got you a picture of them there you can just set that down there but you ain't gonna set it on them colds huh we're going to take them coals if we was just cooking directly on the ground and we're going to back them way out here folks and then we can set that oven in there and we not too close to them coals now that thing you don't you think that pot ain't close enough to cook that stuff good cast iron holds heat and it travels well and i guarantee you folk there's enough there you can burn some biscuits if you ain't paying attention [Music] when you take the lid off that stuff and that aroma runs around there through the kitchen the backyard neighbors from 25 miles will be jumping fences and running stop signs to get to your house to eat it but don't just reach in and get a bite that stuff it will burn you stick to the roof of your mouth you won't even know what day it is no more so while that's cooling i can remember one time when i was doing a fall cooking on a ranch out there in the palo duro canyon and i'd fix this for lunch and it's supposed to be in there at 12 o'clock now cows don't own a watch and they don't care what day it is they don't care what time it is a lot of times they ain't gonna cooperate so them guys just get lighter and later and later so i'd made this and you know what goes really well with this some fried potatoes and some cornbread now i've done sourdough cornbread and regular cornbread but hey that day i did a little mixture put some cornbread some cheese some jalapenos in it i duded it up really well because the nip of fall air was in the 40s so come back and them guys finally got there about 3 15 and they was wore out had all the cows down there in the pens and they still had to separate the cows from the calves and brand all the calves so they said hey we sort of need to eat as quick as we can so i remember one individual his name was brother daniel an old brother bless his heart he was always loved my cooking and he would always get usually more than he could handle at one time so he goes over and he gets in that cornbread pan and he cuts him probably enough that would make four regular slices for people now he cuts them in half folds it sort of like a taco and just fills it up like that now folks i'm gonna tell you cornbread and tacos things the same when you take that cornbread and you begin to mash it brother got it right to here and it all ended up right here but i'm gonna tell you old brother's pretty sharp he did what'd he do untucked his shirt and just pulled it up there got a spoon made the most of it and just eat yeah you can see all them flavors is just jumping out there ready to go it's too hot oh my gosh well we've let that cool here but i've have two subjects that have stayed in camp and helped the whole time and this is one of big's favorites and i did pick out the jalapeno and the onions so they could have a little bite made you ain't very big so there's a tiny bite for you and a tiny more bite for the beagle maybe this has cooled off now folks because this is one of my all-time favorites it is got me some of them bean and meat there's a jalapeno and an onion in there big that is so good it make you do
