Taco Tuesday: Cheesy Shrimp Tacos

for today's edition of Taco Tuesday I'm going to take you to Patty Savio beach in Puerto Escondido where there's this little shack like restaurants on the beach that makes something called in common Oh nada which means that they've got shrimping sometime I don't it what I have here is some seared chopped tomato salsa just onion some green chilli I think this is Serrano here some tomato and some garlic done it a little bit of oil and now I'm adding some shots to that so that will start it so what the family does that owns this place on the beach which is like legendary everybody that goes to corpuscle Vito have heard about these any time I don't matter they season it with lime juice that's you kind of expect that every season yeah I'm going to squeeze a little bit of lime over everything good salt that's pretty normal right and then some mexican hot sauce to go in there I might thomas already reviewed Valentina move photo and you can add as much or as little as you like I like to kind of spicy something to put quite a bit of it in there all sort of things that you would kind of expect to find okay so you might not think that ketchup is in worthy ingredient in this these are like a tablespoon of it and how much interest is that that really delicious great delicious savory quality that they all love and through here you find it with that little addition I let that continue to cook for a minute more I should really give it a taste to make sure that the seasonings are right here I want to make sure that it's very well mixed okay now I got a skillet here that has nothing in it right now I'm going to put just a little bit of oil in there so that okay put a couple of tortillas in there and start crisping them so this is a different kind of taco than I have made before I'm just going to make a couple of you could use a really well seasoned griddle for this and the way I like to do it is just lightly oil the tortilla like that put a little bit of cheese this is a graded mixture of Colby and Jack that's what we use for this kind of thing in our restaurant how to turn the temperature down just a little bit if I take the filling down and put that in here now start you know below let them continue hook taking one side over the other and pressing it so that it starts to stick that's what my idea yeah solo the other went over and they're going to get kinda crispy and in just a minute or so we'll be ready to taste any comment on that okay look at though they're really beautiful a little bit crispy I don't want them to be fully crispy and take these now over to a plate you can just serve it exactly like that I can't leave well enough alone so I want to put a little bit of chopped cilantro on them but remember that the salsa make sure that we seared in my skillet didn't have any cilantro in it and just look at that now that's something you want to eat
