howdy folks and welcome to the hillbilly kitchen today we're making some stovetop apple dumplings this is a really good really old simple recipe and you don't need an oven so you ain't gonna heat the kitchen up and it's one of those desserts that we had all the time when i was a kid and i know folks are gonna ask yes this is good with other fruits almost any other fruit you just change the ingredients a little bit but not much so let's go over what we're going to need real quick and then we'll get started cooking you need some apples and you need half a cup of sugar for your filling part and then you need about half teaspoon of salt a teaspoon of cinnamon and a couple tablespoons of butter and we'll need some kind of liquid to cover our apples with when we cook them and i'm going to use some apple juice and that's not measured it's just to cover them for our dumplings we need about three quarters of a cup of self-rising flour and then i got a little bit extra here we're gonna add a little bit extra baking powder to it because we really want them to be fluffy i got about a tablespoon and a half of butter and a half a cup of milk and toward the end of cooking them we're gonna add another half a cup of milk and a little vanilla and a little bit of our sugar into the filling to really make them good so the first thing i'm gonna do here is i've got my apples in some water that has a little bit of lemon juice in it and that was just to keep them from turning brown and you can see they've still oxidized a little bit and started turning brown you need at least four cups of peeled and cored and cut up apples i probably have twice that many you can use as much fruit as you want in your apple dumplings or any kind of dumpling or cobbler you can add more fruit the fruits the good part it's the healthy part and it just if you've got more fruit add more fruit but you want at least four cups and i'm using wine sap apples today you can use galas you can use granny smith you can use whatever you've got the wine saps i've heard are getting really hard to get a hold of but i happen to have a tree in the yard and i measure my apples the same way my granny did i go pick a bag and i peel and cut till i'm tired of peeling and cutting so i said i usually just i use at six to eight cups usually instead of four but you need at least four and i've got these in this water with this lemon juice i'm going to drain that off because i don't want that in my apple dumplings now you can if you want to you can leave that water in there and you can use that water to cook your apples in but because i'm using the wine saps and they're pretty tart and this time of year they're really tart if you wait until later in the year toward the end of august there'll still be quite a few on the tree and they're a little bit sweeter but they're still tart a wine sap is a tart apple if you're using a sweet apple the water would probably be fine but i'm going to use the apple juice so that i don't have to add so much sugar if i used water and especially if i left the lemon juice in my water which you can do i would have to add probably a cup to a cup and a half of sugar to these apples and that's a lot of sugar and what should be kind of a natural dessert so just add the liquid until you've about got your um apples covered and i've also used other kinds of juice in this i've used grape juice in it if i didn't have any apple juice and even orange juice or just water it's any of them will work just make sure you have enough liquid to cover the apples and i'm going to go ahead and add almost all of my half cup of sugar and you might have to adjust the sugar based on the apples you're cooking i'm going to leave oh a tablespoon or two and i'm going to add that in at the end with my milk and my vanilla okay and i want to go ahead and put in my salt and my butter and my cinnamon you don't have to have the salt in this if you don't want it but salt is a really good flavor enhancer and it will make the flavor in those apples really pop now i'm going to cook this on about medium heat or so check on it occasionally and stir it until my apples start to get kind of translucent and they start to get a little bit soft we're going to cook it about another 20 minutes after we add our dumplings so you don't want to cook it until your apples are totally turned into mush okay once you get all your ingredients in your pot um give it a stir or two and if you're like me you want to check and make sure you didn't leave any of your apples in there in great big chunks or whole halves of apples or anything because i tend to do that and just stir the pot and look and if you've got any big chunks cut them up before it gets too hot you don't want to leave great big pieces in there because they won't get cooked and the rest of the apples will be overcooked just make sure you got them about all the same size kind of like this and once you get that all done just put the lid on it and like i said let it cook and how long it's going to cook is really gonna depend on what kind of apples you're using the wine saps are a really crisp apple they're not only tart but they're crisp so it's gonna take a little bit longer for them to cook if you were using um like galas they're a lot softer um red delicious if you decided to use something like that in them they're definitely a lot softer so are golden delicious the granny smith are also kind of crisp uh so you know they would take a little bit longer to cook but you can make it with any variety of apple it's just whatever you got that's a great thing about recipes like this you don't have to be too picky with them um you can just use whatever in them and it'll work and it'll be delicious every time so while our apples are cooking we're going to get started mixing up our dumplings i'm going to set my little bit of flour aside here and i'm gonna go ahead and put my baking powder in my flour if you don't have self-rising flour you can use plain flour uh you would add probably a teaspoon and a half of baking powder if you you were using plain flour and a little pinch of salt to this much and i'm going to go ahead and put my butter in there and you can sift your flour if you want to sifting the flour will definitely make them lighter and lots of folks use frozen butter and they grate the butter and all that stuff and cut it in i really don't find that that's necessary this should be an easy recipe so i just kind of mix it together and i use soft butter because the soft butter mixes in easier and quicker and you can just cut it in there with a fork you do want to get the flour and butter mixture until it's kind of like small gravel or sand before you add your milk if you add your milk and you try to mix the butter and the milk in together you're going to end up overworking your dumplings and that's going to make them kind of tough once you get your um flour and your butter combined until it's like this you know kind of like sand or gravel then go ahead and just dump your milk in there and you can use any kind of milk buttermilk or whole milk or even skim milk just whatever you got like i said it's kind of an easy recipe i had some half and half so i'm using half and half in my dumplings and in my for my milk that i'm going to add in a little bit later it will make it a little bit richer and a little bit creamier but like i said any milk will work this is a simple recipe and it should be easy and you should be able to use just whatever you got now this is about the consistency for the dumplings that you want you want them not super stiff but not real real runny and we're going to drop these in in small spoonfuls when our apples get almost cooked when they start to turn translucent and get soft but you can go ahead and mix it up ahead of time and let it sit there and rest you know we've talked about that with all of our other quick breads this is another quick bread and it will make the dumplings better it'll make them fluffier and make them rise up more and really pop so now that we've got our dumplings ready we can go ahead and get the stuff ready for the very end of this you want about half a cup of milk and like i said just any old milk will work um i had the half and half so i'm using it and i'm gonna go ahead and add me a teaspoon of vanilla to this and i'm going to add the rest of my sugar now when your dumplings get done or your apples get done almost cooked and you're ready to add your dumplings taste your apples if they are super super tart you might have to add a little bit more sugar i'm hoping i don't but with the wine saps i might have to and you can add it into your milk and it'll go in at the very end and that'll fix the two tartness or if you like them more tart that's fine too you can leave it like that if you're using a really really sweet apple and you use the apple juice instead of the water to cook them in you might not need as much sugar so you might want to hold back half of your sugar only put a quarter cup in when you start cooking it and then taste it before you add your dumplings and see if you need more or if you don't want any more at all you they're these are not good if they're too tart but they're not good if they're super super sweet either you want to taste the apple not the sugar well my apples have been cooking for a while now and you can probably see that they are starting to kind of turn colors and they're definitely starting to get soft you can test them with a fork you can also taste them and see if they're starting to get soft or not you do want to be careful if you taste them because to say they are hot is an understatement and when you're cooking them you want to make sure you got a pretty good rolling boil the whole time you're cooking them i mean you can see i've definitely got bubbles this is not a simmer it's a boil and you want to make sure you keep enough heat on them to do that because you have to have that heat once you add the dublins in order to cook the dumplings now when you're putting the dumplings in there start with a clean spoon and dip it down in the hot liquid and this is true for any kind of dumplings whether it's fruit dumplings or you're doing chicken and dumplings or something but that hot liquid will loosen the dumplings off your spoon and let's say we're just going to put these in here in little pieces like that we don't want great big dumplings and we want to be easy with them because we've already let them sit here and rise we don't want to lose our we don't want to make them fall we don't want the leavening that has worked in there to um [Music] we don't want to kill it so just be kind of easy as you're duping them out and like i said that hot liquid will help them release from the spoon and you just keep placing them in there until you've got the top covered and all your dumplings in the pot this is a a really good recipe for camping and it's a good recipe for summertime you know if you don't want to heat the kitchen up good recipe for all your cookouts and stuff if you've got some way to cook outside even just a burner on the side of your grill or take a camp stove out by the fire pit or something and cook these and some vanilla ice cream in the summertime and you don't have to sit in the kitchen and heat it up but you know when we were kids granny and doc mom and all of them they had to make a dutch oven this size plum full but they were feeding the crowd and in fact i don't think i ever remember making any kind of fruit dumplings on the stove like this and not absolutely feeling the pot completely full so you can double triple this recipe i mean obviously if you had the pot completely full apple you'd probably want a few more dumplings and what i mixed up here and you could have done twice as much dumpling batter with the fruit that i had but i'm just making them for me and brett and this is plenty of dumplings and we'll have a lot of extra fruit but that's okay the fruit's the good part lots of folks ask about sugar substitutes on just about every recipe and you can use any kind of sugar substitute in this if you need to substitute the sugar just use your favorite sugar substitute it doesn't have to be regular table sugar you could sweeten them with honey maple syrup you could sweeten them with frozen concentrated apple juice or any sugar substitute will work and folks always ask about um a gluten substitute just use your favorite gluten free biscuit mix to make the dumplings okay now once you've got the dumplings all in there you want to cover this and you want to cook it for at least 15 minutes so i'm gonna set a timer cause i'll lose track of time and my dumplings will be cooked to death while our dumplings are cooking i've got just a minute and i want to share the mail with you i got a book of poetry from sharon farley she wrote this herself and it is uh inspirational poetry it's biblically based poems that are intended to kind of give you a little bit of a boost and i'm sure you can find it online i haven't actually looked like i said she sent this to me because it's so i don't know how to order it she didn't send me information on how to order it order it but it's called bubbling up release from within so if you want to get that maybe you can find it thank you very much sharon and i got a book from uh it doesn't have a first name it says r pennington and it's a book on the protestant reformation i got a very nice letter from uh leland and leland is starting his own business where he's gonna make things and he says he's gonna disconnect from the internet so it was kind of a good buy letter if you're gonna make a homemade anything that's handmade you might want to reconsider that disconnecting from the internet because there's a lot of great platforms online where you can sell your stuff you can certainly sell it on platforms like etsy and even the marketplace on facebook they have an option to ship now so you might want to reconsider that disconnect but thank you very much for your letter i truly do appreciate it and i got a thank you card from karen karen says that she is learning how to cook and she is also teaching her children how to cook and that's you know that's great we to pass down those skills i mean we really need to do that i think home cooking is turning into as much of a lost art as like stuff like weaving and basket-making and things like that people are just forgetting how to do it because nobody does it hardly anymore but congratulations on your new skill and thank you very much for the card and i got some more of these bookmarks sheila sent us some more and she sent some personalized ones for other members of the family and she sent one with her last name on it and she uh generously offered to send them to the rest of our family which i appreciate very much and i'll gift comes from above and i have lots of folks talk about faith and and they get so discouraged and stuff where our faith is at and our attitude is really our choice it's our decision just like the decision of whether or not to be saved and believe in jesus and choose to follow him that's our decision our faith is also our decision if we look for the good and perfect things that come from god if we look for the good then we will find the good and when we find the good the more we look the more we're going to see and when we find that good in our lives we're going to see god in our lives so it really is a decision are you going to look for the good things that come from god are you going to focus on the trouble and the turmoil and the chaos and the bad stuff that's in the world so if you don't learn any other verses maybe you want to learn that one every good and perfect thing is from god look for the good focus on the good and when you see the good when you focus on the good you will see more of it and when you see more of it you will see god and when you see god your faith will grow and your life will be better that's i it's one of the promises of the bible and i can tell you from my experiences it's a fact when you seek god you will find him so for all y'all who are struggling focus on the good okay now that our dumplings have been cooking for 15 minutes they should be pretty close to done and you do want to keep them covered the whole 15 minutes you don't want to uncover them because it's the steam in your dutch oven that cooks them i'm going to add my milk and like i said any milk will do and i've also got my vanilla in here and a little bit more sugar now you might want to taste yours at this point and if they're not sweet enough adjust the sugar because this is kind of going to be your last chance to add sugar and actually cook it into it so if you need more sugar add more sugar brett and i always disagree about how much sugar stuff like this needs i don't like stuff as sweet as he does and he likes it super sweet so if you like it super sweet you might want i only had a half cup of sugar and then i used apple juice you might want like i said anywhere from a cup to a cup and a half of sugar it's just to suit your taste so all i'm gonna do is i'm gonna add my milk in and just kind of pour it all around um you can get it on the dumplings or not get it on the dumplings it really doesn't matter you just want it kind of going down in there and that will cook the rest of that sugar in there and it'll cook the milk in there and any milk will work um you can use the half and half like i did you can use whole milk skim milk just about anything i wouldn't use buttermilk in here but you can use buttermilk in your dumplings if you want to and i just am kind of gonna like move my apples around a little bit because i want to get that milk down in there and then i'm gonna put my lid back on and i'm gonna let it cook for about another five minutes now i have seen folks that add a tablespoon or so of flour into um the milk when they add the milk to actually thicken the dumplings up i've never done that um there's some you know the flour in the dumplings actually gets in the juice in your filling and it thickens it up and also that milk is going to thicken it up a little bit as it cooks so i have never had to add more flour into my milk to thicken up my liquid i've never had that much liquid i i've always had plenty because i always use way more fruit than you know what the recipe calls for the recipe only calls for like i said about four cups but i use twice that much almost always and you don't have to but i don't really think the flour is necessary if you get to this last step where you're getting ready to pour your milk in there and your dumplings are really really watery looking maybe you put too much water or too much juice in them when you started cooking them you can add that tablespoon of flour and thicken them up that's your last chance and when you cook it for that five minutes that's going to cook that flour so you're not going to have a floury taste to your dumpling filling okay after you let them cook for that last five minutes with the milk in there covered your dumpling should be done and ready to enjoy you might want to give them just a few minutes to sit and settle down after you turn the heat off i mean you can see here i've got mine sitting over on the countertop and i've still got all kind of little bubbles in there it's still actually boiling and as they sit there and you know like i said after you give them five minutes or so to sit there and i would definitely recommend giving them five minutes or so to see it all of this liquid in here is going to get much thicker you can see it's still pretty runny right now but over the course the next three four five minutes as it starts to cool down that's all going to thicken up so you don't want to panic and try to add that flour in there or you'll end up with well it'll be thicker than an apple pie if you do the filling is going to be similar to an apple pie but you want some juice in it more than what you would have with an apple pie you know the difference between a pie and like this is when you cut the pie you actually want it to stay together this you're going to spoon out into a bowl and you can top it with fresh whipped cream or vanilla ice cream or nothing at all this is very good just like it is and you can serve it warm or cold once you put it in the refrigerator you do want to store it in the refrigerator what you don't eat while it's fresh you want to put it in the refrigerator in an airtight container and store it in there there's not any real trick to doing this adjust the sugar and the cinnamon to suit your taste the dumplings are super easy to make you can make this with a lot of different fruits peaches pears pear season is also coming up just about any kind of berry it'll work you want to change the spices a little bit you might not want cinnamon in some of your berries but that is all there is to it and you can eat it without even giving it that five minutes or go ahead and dip it out without even giving it that five minutes because that juice will continue to thicken up in the bowl as it sits there make sure you get one or two little dumplings in with each bowl full and you want to kind of let them sit on the top when you dip it out and top it however you want or just eat it like this and like i said in about five minutes that juice is going to start to thicken up a lot so you don't want to cook it until it's so thick that you got to cut it out of your dutch oven you want to leave it a little bit runny you want that juice in there that's what makes it apple dumplings or basically a stovetop cobbler is what you have here this recipe is definitely one of those it's worth teaching the kids and passing down it has been around for centuries and i hope it stays around for centuries longer because it is delicious it is easy and it's good year round if you've got apples that you've canned and put back you can make this with them in the middle of winter and i know folks are gonna ask if it works with apple pie filling you could make it with apple pie filling but you're gonna have to be really really careful because it's already thickened and you are going to have to add a little juice or something to it to thin it out a little bit so if you're trying this with apple pie filling in the winter time you're going to want to thin it out a little bit thank you all so
