this ain't a spaghetti western in fact it's not even normal spaghetti i'm talking smoked meatballs on the grill a combination of pork and beef all the great italian flavors and a homemade sauce that goes with it come on cause me and the big is rolling out the meatballs and we ain't gonna wait on you [Music] thank y'all for dropping by the backyard on a glorious day the lord has made it is and i just want y'all to know we have reached way over to italy and we have a very special guest chef that gonna help us today he's in there getting ready right now he'll be out in just a second oh my gosh i know y'all know him you've seen him probably on tv he is a great guy here he comes look over there shin seem coming there he is chef boyardee yeah you know that guy in a little white hat scene right there i used to see all these commercials come on tv from revlon ravioli to spaghetti sauce but folks what are we talking about spaghetti and meatballs but everybody love it and a lot of people just go buy the canned sauce get you some meat throw in there and you're done deal but no we kicking it up 14 notches we are smoking the meatballs first to give that added extra flavor to it and a homemade sauce that is all blended together with garden fresh tomatoes it don't get no better than that and i'm ready so let's get to it you see me put them 10 roma tomatoes you did right in that water boil them till the skin cracks on them and then remove them put them in some cold water and let them set to cool off while we put the rest of this together how do you bring out more flavor in some spices shan you toast them a little things are gonna get spicier some fennel seed and i got some garlic clove in there we're gonna put some of that in there so we can get this toasted over here on the fire while we're waiting for them tomatoes to cool off and then we'll get that magical thing out that you know the cowboy nearly despises more than anything and what is it the blender never works when i want it to you got to have a cord and electricity let me get these to toasting well they are toasted you can see how them fennels have changed color i just don't take long no oil is involved you just want to brown them up a little in them garlic it is now time to fire up this contraption and we got to have where you plug this in at ain't no there's one of them extension cords yep let's see can we handle these little maters here and see how easy that peels off for when you get them back in that cold water and just chunk them right in the blendomatic be sure you let them cool before you handle them them little things will burn your fingers in a hurry now you could be running down there to the store and getting you some of that chef boyardee sauce or something you even like better folks this don't take no time and it is so tasty with all them flavors that we're gonna bring out here you'll never buy spaghetti sauce again we don't be having no fresh basil or fresh parsley and the garden about dried up so we're just gonna add it dry in there which is about yay much and some basil tube because shan do love her some some basil so after that [Applause] we got us some chopped spinach right here that we're gonna throw in there and this emulsifying blender is gonna even shred it up some more it is and i want you to go ahead be sure that your pan is cool enough to get this in there and dump that in there you may have to go to giving that a little mash because we got more participants that are wanting to jump in there like what two white onions mm-hmm it is gonna be a blender full full house i'm telling you it is gonna be full in fact we may blend it a little before we add the rest of the stuff are we never gonna get it all to fit them maters is taking up some room there we go [Laughter] that's what it's called on high we have the tomato paste in there the boat is plum full i don't think you can even get a life jacket in there to help anybody but shan says oh no it'll fit it'll fit so when it runs over here in a minute that is one can of rotel which is diced tomatoes and green chilies let's see if the lid will accidentally get on there just a little splatter not bad but it's trying to push the top out y'all stand back out there in the front row because we don't know what's going to happen oh things are happening now you can see it changing colors that is what you call a full house it is go ahead and dump her in there and if you like yours a little richer and redder color than that add you one more can of tomato paste you sure ain't gonna hurt it to that we have a pound of white mushrooms that have been diced up about that size and then i want you to add some ever famous what you call it lee perrin's w sauce yes it is i ain't going to even try to pronounce it because y'all be all the time correcting me so we're going to put about that much in there we're going to stir it and we're going to taste it to see if it needs any salt content in there at all oh that is tasty but it does need just a little dab of this in there kent rollins original seasoning but it is blended up nicely we'll set it right over here on the fire you don't want to leave me now because we fitting the breakout the star of the show and that is them smoked meatballs so see you in a bit well the sauce is what you call cooking and folks we are fitting to blend them meatballs together a pound of ground chuck 80 20 it is and some breakfast sausage today we're using who jimmy dean brand he sang that song big john big bad john you remember that song don't you chin okay good girl so just get them off in there well sausage really sticks to your hands really bad worse than ground beef so we're gonna use the gloves today till we can get this sort of incorporated together red pepper flake you all know me i want the food to bite a little so we just gonna sprinkle it across there lightly one more little shot right there you know what makes a really good meatball makes it stay together makes everything come out just right a bread crumbs uh-huh and i like to use the italian flavored breadcrumbs i think they'd be the best i really do so just sprinkle them all the way around yes sir two tablespoons of them heaping everybody likes what on top of their spaghetti shin when they get ready to eat it what do they always put on there oh parmesan well let's not put the parmesan in there later let's go ahead and put it in there now so it helps things bind together so we're going to put that in there some smoked paprika come on come on and anything we'd be using in this video and you'll be not knowing my correct measurements like i do here will be listed down there in the little link below some fennel seed because joe parlane told me it goes in anything italian my good friend in connecticut garlic powder even though we got garlic in the sauce itself garlic is good for you some original seasoning because we had no salt content in there as yet about that much and guess what some coarse ground black pepper and just go to getting everything incorporated well you'd be thinking when you get through with this oh we'll go right into making the meatballs wrong we're going to set this in the icebox for at least four hours why so all them flavors can get incorporated in there together it makes a big difference tried it both ways believe me folks you're going to want to wait because things even get better make sure you got it all mixed just ball it up there flatten it out to where it's sitting in the bottom of that bowl cover it with something stick it in the icebox and you're good to go got the meatballs over there in the icebox just sitting there minding their own business one thing after this gets to simmering along pretty good we're going to pull a justin wilson on we are you y'all remember justin i guy ron t that guy was a good cook i would have liked to have cooked with him he was always cooking with wine so we're going to add a little red wine dry in there with it we are and just give that a stir it'll cook down so we're going to let this simmer while the meatballs are sitting in the icebox right in there that's what they gotta be remember but i'll meet you back out here to the grill and we'll make the smoke happiness begin on them little meatballs the sauce is still bubbling away over we're about three hours into it so we need to get these here out of the icebox what are we talking about these gorgeous looking little meatballs that are fixing to take place now i want to give you a tip you can wear them rubber gloves if you want to but hey if you're going to mess with anything that's sausage and to keep it from sticking to your hands just get you some water pinch you off some of that make sure that you roll them really well and just place them on the pan and if you got an assembly line here some help it sure would be nice but you can't trust it to a beagle the hasty bake is going well we added us some apple wood chips in there we did fires here just smoke on this end just lay them little beautiful rascals right there on this side that's what we call cooking on the indirect side of things because we want them directly to get done and that way we can eat them let's shut the lid we're going to let them go about probably 20 minutes over on that side to get that good smoke bath to rolling in there move them over here on the direct side grill them up just a little and throw them in the sauce [Music] [Music] who ain't that a pretty side it is and i mean look at all them flavors see this little guy he's smiling now while ago he had a frown on his face but he's saying the cowboy done good there from the chef boyardee now i'm gonna let that cool just a minute and i've had some really good help and i got them some out to cooler they got no onion in it first is the big then is the mage no it's sade she snuck it there's the mage well duke you nearly missed the show here duke come here where you been all right boy so shannon told me the correct way you eat these is you pierce the meatball and do a spin around but see i i didn't get nothing shan so i'm gonna tell you folks too right off the bat before you put these in them that red sauce taste you one of them because you're gonna be wanting them when somebody good barbecue sauce will make anything in the world they a meal all in their own maybe we'll be like dean martin that's singing long singing songs all the day hold the tarp down chad everything we use now remember will be listed down in the little link below but
