welcome back to submit everything guys today beef wellington let's just jump right into it let's do it this tenderloin there's a few options you can get choice USDA prime fully trimmed and peel and choice untrimmed and I'm gonna give you the biggest tip for tenderloin always buy untrimmed you will save a lot of money by doing that so let's do it [Music] so the first thing you need to do is remove all the silver skin out [Music] [Music] now the standalone is way too large for beef wellington I'm gonna be cutting separate individual filet mignon steaks for a future episode so this is our final product as you can see it's uneven so we're gonna fix that problem right now [Music] I'm seasoning it with salt garlic powder and pepper [Music] I cooked that for two hours at 129 degrees Fahrenheit [Applause] [Music] [Applause] [Music] [Applause] [Music] so right after I got an amazing sear on the tenderloin I lay down some plastic wrap and don't you even think about skipping this part now are the Tenderloin was still hard I spread out some Dijon mustard now traditionally beef wellington has mushrooms but since momma and ninja does not like it out of respect for them I am NOT adding any now from here I lay down a thin layer of Parma ham [Music] [Music] then I put it in my freezer for one hour not to make things easy with the pastry laid out some parchment paper sprinkle some all-purpose flour and laid out your puff pastry if your beef wellington is larger than one sheet just put both together and use a roller to combine them both [Music] [Applause] [Music] my own erectus beef wellington as tight as possible because the tighter you make it the more uniform your shape will be [Music] without a beef wellington here guys and it's fantastic already it's nice and firm I left it in the refrigerator overnight so just so you know it you can do it the day before I'm going to make a nice egg wash and we're gonna put it in the oven at 450 degrees Fahrenheit and hopefully you will crisp up the pastry really really quick let's do it Oh mom tell us why you don't like mushroom my mom mushroom sucks you don't like mushrooms Oh mom no mom I can't have mushroom guys don't hold it against him though it took it [Applause] [Music] well normally I like to say that it doesn't look good right now but what do you think my mom looks good looks good already let's do it all right it is looking good but the sides are not burning out up so all the time we're gonna bring underside little better all right that looking good is that looking good I know -
