Just made it, good shit.
We took this recipe and borrowed from the brown chicken risotto recipe to level it up. Turned out great and while I get the attraction to this (it's cheaper, makes more and uses common ingredients) with that said it should still be solid as is.
Some day when I have some extra bone in thighs I will probably try deboning and cooking them skin on to see what that rendered chicken fat does for the flavor of these dishes.
