mmm so good it tastes like a red velvet brownie with cream cheese frosting hey sugar geeks liz here with another delicious cookie recipe today we are making red velvet cream cheese stuffed cookies it's coming up next on the sugar geek show [Music] so the first thing we're going to do is make our cream cheese filling because it needs time to chill so go ahead and cream together your cream cheese your powdered sugar your flour and your salt i'm just using a hand mixer nothing special and you're just going to do that until it's nice and smooth then we're going to pipe these into two teaspoon size amounts i'm piping those onto just a sheet pan lined with parchment paper and popping those into the fridge for about an hour or you can even do this overnight you want them to be nice and firm before you start trying to stuff the cookies because they get soft really fast in a separate bowl we're going to whisk together the flour the cocoa powder the baking soda and the salt and you might be wondering why isn't there any baking powder in this recipe well we're using buttermilk and natural cocoa powder so baking soda reacts with those two ingredients and creates the classic red velvet taste and texture so now in the bowl of our stand mixer with the paddle attachments we're going to cream the butter and the sugars until it's nice and fluffy this is one of those steps that when i say fluffy i mean fluffy most people kind of stop after about 30 seconds or so and like yeah that's blended together but you really want to incorporate a lot of air which is going to give it that velvety texture so now we're going to start adding in our room temperature eggs you really want to make sure they're room temperature so that they emulsify correctly funny thing about eggs is they are one of like those perfect ingredients that can bring together water and fat but they can't do their job if they're cold because the temperature of the eggs then repels the butter instead of emulsifying it so now we're going to go ahead and add in the vanilla and the buttermilk just a little bit mix that together and now we're going to add in the red food coloring i am using chef master red you can use any kind of red gel food coloring that you like but i really like the chef master colors and uh if you want to check out those colors i have a link in the description of this video it might feel like we're using a lot of red food coloring but that's part of what makes the cookies red uh if you don't use enough of the red food coloring they'll just be kind of like a reddish brown if you want to see these cookies in their cake form go ahead and check out my traditional authentic red velvet cake recipe so while your mixer is running on low go ahead and start adding in your flour mixture in one or two parts you just want to incorporate the flour without over mixing so once it starts to look like a cohesive dough stop because you want your cookies to be tender not tough so now we're going to chill our dough for at least 60 minutes and this is because you want to give time for the flour to absorb the very small amount of liquid that is in the recipe otherwise your cookies will spread a lot you could also do this overnight if you want to you can make the filling ahead of time and then assemble the next day so now it's time to make our cookies using a number 20 scoop or about the size of a like a plum maybe like a golf ball i don't know measure with your heart it's okay you want to scoop some of the dough and divide it in half and then you're going to squish squish make two little red velvet pancakes and then you're going to take your frozen cream cheese dollop and put that in the center seal the edges and then roll that into a ball and then place that onto your pan with some parchment paper work fast like your cream cheese is coming to room temperature very quickly because it is i would suggest only putting about six on one cookie sheet because they do spread quite a bit and you don't want them to run into each other and then we're going to chill these in the fridge for about 10 or 15 more minutes just to kind of like get them firmed up again to prevent unnecessary spreading so we are going to bake these in the oven at 350 degrees for about 12 to 14 minutes or until the center of the cookie doesn't look wet anymore after you take them out of the oven go ahead and transfer them to a cooling rack to let them fully cool down before drizzling them with some melted white chocolate i'm just using regular old candy melts but you can temper chocolate if you want to um my tutorial on how to temper chocolate in the microwave in like five minutes is right there if you want it you're welcome these are like the perfect cookies to make for like a gift box just make sure that uh you know if you tempered your chocolate you let it set before you start putting them in the box because then your chocolate's gonna get all over the place and that's it that's how you make red velvet cream cheese stuffed cookies if you somehow manage to not eat all of these red velvet cookies in one sitting make sure you store them in the fridge because they do have cream cheese in them they can be out of the fridge for like a day you know so if you're going to a party and you're like i brought cream cheese cookies they can sit on the counter top all day long they're going to be fine they have lots of sugar in them but i wouldn't like leave them out for multiple days so good it tastes like a red velvet brownie with cream cheese frosting freaking delicious you could even like add a little bit extra chocolate to this a little bit extra cocoa powder take out the red food coloring and make these like chewy brownie stuffed cookies so that's it guys that is how you make red
