behind strange food mysteries magazine number 10 why is milk white it may not seem like an obvious thing to wonder about well boy is it an interesting explanation you see milk appears white for the same reason objects in nature appear white because of light diffusion white objects diffuse light in such a way that no part of the visible spectrum is reflected off the object more than another part of the spectrum it essentially scatters all colors on the spectrum equally milk consists of around 3.5% proteins and 3.7% facts one of the more significant proteins is casein which is calcium rich the molecules of casein and the fats are suspended pretty uniformly throughout milk this suspension is what prevents the light wavelength from being absorbed which is why a wide array of wavelengths of visible light is reflected causing the milk to appear white to the eye if you think my milks not really white it has a bluish or greenish tinge to it that may very well be the case it's likely you're looking at skim milk when the fats have been removed from milk the light deflection is somewhat less uniform it's mainly left to the casein molecules to deflect light and casein scatters the blue wavelength a bit more than the red so that explains the bluish tinge but what about the green well milk can have a greenish tinge if there is a larger than usual amount of riboflavin present which can also occur with skim milk alright so number nine if milk is white then why is cheese yellow now that we understand the food mystery of why milk appears white we can begin to understand why cheese has a yellow color as well as the fats and proteins we discussed milk having it also has beta carotene the precursor for vitamin A this is in milk because it comes from the grass cows eat the pigment beta carotene binds itself to the fats in milk rather than the liquid so once most of the liquid and milk is removed during cheese making yellow pigment is much more visible so that takes care of the natural yellow color of cheese but you should always check the label to see if your cheese has had artificial coloring added for example annatto is a natural vegetable dye used to color cheese yellow yellow number 5 is the artificial dye used to sunny up your cheese interestingly enough cheese dyeing dates back to the 16th century like with milk low-fat cheese berries in color to full fat cheese farmers in the 16th century died low-fat cheeses with carrot juice to enhance the color this was mainly for financial reasons full fat cheese was worth more than low-fat cheese back then which was considered to be of a lower quality cheese's still died sometimes today though cows diet can vary with the seasons sometimes resulting in less beta-carotene and a lighter yellow or white looking cheese because people have come to associate cheese particularly cheddar with a deeper yellow color cheese's often died to meet consumer expectations number 8 is there a difference between black and green olives many people assume that like apples or onions different colored olives indicate different varieties but that's not the case green olives are the unripe fruit which ripen into their black selves if given time despite this being a natural process many commercial producers of olives do not wait for all us to naturally ripen and then harvest them once black instead they are picked while still green some of these are sold as green olives and the others are ripened through a commercial process they are given a caustic soda treatment and spun and oxidized water but we're not done yet once the olives have achieved the desired shiny black skin some manufacturers coat them in ferrous gluconate a color stabilizer which keeps them looking shiny and black until you eat them if you don't like the idea of this coating keep an eye out for producers who don't use it usually this will result in their olives being more of a dark brown rather than glossy black number 7 how do jelly beans get their shine don't bug out on me but I've got some pretty disturbing news for you you know that shiny outer coating on all those pretty colors that make jelly bean so enticing well where that shine comes from isn't so pretty this coating is called shellack and is generally recognized as safe for human consumption or gross according to the FDA at least shellac is made from beetle excrement yeah you heard me right bug poop the specific bug it comes from is the female carry a lock up or lock beetle she secretes her excrement onto tree branches in tunnel like tubes we scrape these tubes off and heat it to a liquid form before drying it into flat sheets of shelling the sheets are broken into flakes and sold in this floor when it's time to use the shell it's combined with denatured alcohol to the taste what it comes down to is whether the egg was overheated in the cooking process so it's all on you now for the science behind it the coloring results from the iron in the yolk reacting with the hydrogen sulfide from the white to form iron sulfide the changing color is the visual evidence this chemical reaction has occurred just a tip if you don't feel like green eggs with your hand once the water has boiled turn off the heat and leave the eggs covered in the water for no more than 12 minutes for medium eggs and 15 minutes for large eggs voila perfect eggs every time number three why do a gieok and eggshells have so many different shades of color ever wonder why you crack an egg to find the yolk very pale when you're used to seeing vibrant yellow orange yolks or why some eggshells seem to be much darker and speckled than others shells are pretty straightforward to explain but yolks get a whole lot more interesting the color of an eggshell is determined by the hens breed and nothing more it doesn't matter how the hens are kept or what they eat eggshell color is purely genetic for example Leghorn chickens white eggs and Orpington chickens lay brown eggs as four egg yolks the color of these is a result of a hens diet the darker yolks occur from plant rich diets like yellow corn or alfalfa pale yellow yolks are from hens with a wheat or barley based diet almost colorless yolks are a result of white cornmeal produce being consumed yolk color doesn't affect egg taste that the aesthetics seem to be an issue with consumer preferences different regions of the world prefer different colored yolks on their plates in fact the old color is such an important factor in marketing eggs that an industry standard known as the DSM yolk fan has been invented the fan is like something you get in a hardware store when choosing a paint color it has a spectrum of 15 shades of yolk color number two why do some eggs have two yolks it's true that consumer society tends to shy away from things that aren't normal and you might have that reaction if you cracked open an egg to find two yolks but there's nothing wrong with it and in fact two yolks are considered lucky these egg irregularities come from quite young chickens as well as older chickens because double yolks are linked to reproductive system function if a reproductive system is not fully mature or is nearing the end of fertility a hen may unconsciously release two yolks instead of one the chances of getting an egg with a double yolk are said to be less than one in a thousand that's why it was so surprising when one woman cracked a dozen eggs from one carton and found each of them was a double yolk ur talk about clucking maddening lucky number one what is the white stuff on cheese well the good news is it isn't mold or yeast or anything at all to put you off your cheese and crackers the white stuff is cheese crystals and according to culture cheese mag cheese crystals are trendy cheese crystals come in two forms tyrosine and calcium lactate tyrosine crystals are only found within cheese you won't find these on the surface they are typical of Romano and Swiss cheese's and are characterized by a bright white color and a firm texture calcium lactate is what you see on the cheeses surface but can also be part of the cheese's interior these crystals are more likely in coal we and shedder they have a softer texture and paler color than tyrosine crystals they are also more numerous but is not limited just one or the other cheeses like gouda usually contain both types of crystals the tyrosine crystals are formed as a cheese ages and it's protein chains unravel calcium lactate crystals formed because of the cheese's starter culture cheese crystals result in a crunch and indicate that cheese is one with a more complex flavor this is why cheeses with crystals are trendier than the others understand those crystals a bit more now it's easy cheesy do you wonder about
