hey everyone welcome back to my channel so for today's video I'll be walking you through one of the ways to make Puerto Rican Fried Chicken now this recipe is breaded it's very well seasoned extremely crispy and nice and juicy on the inside so let's get into it for my fried chicken I'll be using six chicken drumsticks that I season with extra virgin olive oil a tablespoon of Sofrito a spoon of adobo oregano black pepper and some lime juice all of the ingredients will be listed in the description box below so be sure to check it out I also made some really deep Cuts with a knife since these pieces are big I want to make sure that when I go to fry them they get well cooked and for the breading of my fried chicken I am going to be using some all-purpose flour um so when it comes to Puerto Rican Fried Chicken I've always seen two ways one way is unbreaded you just season it and fry it up which you can do and then the second way is breading it like you know we commonly see in other recipes so I'm going to start off by adding one cup of flour or about a cup and a half of flour more is better than less and even though my chicken is very well seasoned I am going to season my flour a little bit so I'm going to add a little bit of all-purpose seasoning and then I'm going to add a little bit of Cajun seasoning I like this because it has a tiny bit of heat and some good color you can feel free to use a little bit of Goya song if you like um yeah or even like paprika anato powder whatever you want to add to your breading mixture alrighty now it's time to coat our chicken in our flour mixture the really cool thing about using Sofrito in the seasoning is in Sofrito is wet my coating is going to stick really well onto the chicken so I don't need to dip my chicken in any kind of liquid any kind of milk and egg wash in order for that coating to stick and plus Sofrito tastes way better than milk and eggs so very easy mix it makes the process a lot faster so what I like to do is I like to dip my chicken in the coating as evenly as possible shake off the excess and then I use my hands to squeeze the chicken so that that coating can stick really well onto the chicken and you want to do this because if you don't if you don't shake off the excess or let the coating absorb into the meat when you go to fry it the coating is a lot more likely to fall off the chicken and stick to the bottom of the pan that's really frustrating so shake off the excess and squeeze it onto the chicken and now it's time to fry up our chicken now this step requires patience because you want to make sure that you're giving your chicken more than enough time to not only cook evenly but cook thoroughly because the thing with breaded fried chicken is it can appear crispy and well cooked on the outside but still be Raw on the inside so for me it took about 20 minutes for it to be very well done that's how I like it so be sure to check your chicken often so yeah another trick is to not overcrowd your pan you want to make sure that you're giving your chicken plenty of space around it so that it can cook evenly another trick is to make sure that your oil is not too hot nor too low it has to be just right so I set my uh my stove to medium for me that's the number five because I have an electric stove and then another thing I like to do is after I flip my chicken I flip it over and over I flip it on the front on the back I flip it to the side to the other side and I do it over and over just to make sure that one side is not getting more attention than the other and I don't know it works for me every single time and my chicken gets evenly cooked every single time and once my first batch of chicken is done I transferred over to a wire rack and I place it inside my oven that's been preheated to 250 degrees so that my chicken can remain nice and warm and crispy while I fry up the other batch of chicken [Music] and just like that with Puerto Rican Fried Chicken is done it came out incredibly crispy on the outside juicy and tender on the inside and just so flavorful all around and as always thank you so much for watching today's video I come out with a new video every single week so please be sure to subscribe to the channel and to hit that notification Bell until next time foreign [Music]
