so i grew up in new jersey but i went to school at west virginia university if i had to make an analogy i would say new jersey is the pork roll like west virginia is to the pepperoni roll they can literally be found at every convenience store deli gas station everywhere in fact i snapped this picture while i was standing in line at the concession stand at the last west virginia football game i was at it's the second item down just below the hot dog so if you've never been to west virginia or if you've never had a pepperoni roll just drop in here we go now you can start with frozen white bread that you pick up your local convenience store uh it's usually what i do but i forgot to thaw mine out and i didn't have eight hours to wait for this to fall out i need these rolls to be ready by game time tonight it's the last regular season mountaineer football game and i don't have time to waste so i decided to make my bread from scratch now i'm making a double batch a double batch should make about 40 rolls but you could easily modify the recipe for your own purposes in my kitchenaid mixer bowl i throw in two cups of warm water two tablespoons of honey and four and a half teaspoons of active dry yeast after a good stir and waiting about 15 minutes that yeast should be frothy and foamy if it's not your yeast is bad throw it out go get yourself some new yeast [Music] to the activated yeast i'm throwing in nine cups of all-purpose flour then add two and a half teaspoons of salt four tablespoons of melted butter four tablespoons of honey two thirds of a cup of water optionally half a teaspoon of distilled white vinegar then you're going to stir it up to combine it then i'll throw the bowl under my standing mixer throw on the kneading hook set it on the second level let that run for about five minutes after about five minutes on the second level the dough should form a ball pull away from the sides of the bowl if it sticks to the bowl add a little bit more flour if it seems too dry add a little bit of water at that point i'll crank up the speed to about halfway and let it knead the dough for another 10 to 15 minutes now since this is a pretty big batch i'm gonna divide this into two separate bowls but what you want to do is put a little olive oil in the bowl just to coat it so it doesn't stick [Music] then i put the dough into the bowls cover it with saran wrap now i can leave these bowls sitting on the counter to rise for about an hour but if you want to speed it up heat up your oven to 170 then cut the heat so it's nice and toasty warm in there and then throw your bowls into the oven close the door and in about 30 minutes the dough should be doubled in size while the dough was rising i got everything else i needed i got my sliced pepperoni monterey jack cheese pepper jack cheese a little bit of flour and my cookie sheets lined with foil and the actual making of the rolls isn't rocket science i punch down the dough a little bit get rid of some of the air throw just a little bit of flour on my work surface and i use a pair of kitchen shears to snip off i guess maybe a little less than a tennis ball size worth of dough then i'll just use my fingers to pat it down and kind of flatten it out when you get pepperoni rolls you can buy them with cheese or without cheese you can use any cheese you want i personally like pepper jack some people don't like the spice so i always mix in some monterey jack cheese instead mozzarella cheese sticks work really good here too or if you want to skip the cheese all together and make the pepperoni the star knock yourself out and when it comes to the pepperoni some people use big sticks of pepperoni sometimes it's the smaller slices like you get on a pizza i'm using deli sliced pepperoni and i cut those in half what i'm making i think about three halves of those slices works pretty well but once they're stuffed i roll them up tight kind of like a jelly roll i try to keep the seam underneath i try to be careful to make sure it's really enclosed loose seams here will result in the cheese kind of spilling out on the tray and i try to avoid that [Music] once i got all the rolls stuffed i give them a good wash of melted butter with a little bit of garlic salt mixed in and then it's into the preheated oven at 425 for about 15 minutes at this point your house is going to smell amazing after about 15 minutes you take them out and let them cool now it's at this point that if i weren't going to get slammed with copyright infringements from youtube we would cue country roads [Music] and it makes me wonder if when john denver was talking about almost heaven he was talking about pepperoni rolls because it really is [Music] until next time let's go mountaineers [Music]
