[Music] [Music] [Music] [Music] okay guys here we are at day 10 and it's time to bake some really good this will be my mother-in-law's recipe that she used to do with her almost friendship bread starter and it's a cinnamon sweet bread and that's what we're going to be starting out with today and like i said this is day 10 you'll see me feed my starter this morning before i went to work so now we're going to bake some bread it's going to be some really good stuff too but i want to show y'all before i get my starter out i'm going to need about a cup of starter but i just want to show y'all if y'all can see it how good and bubbly it still is and this starter has it's just been good all the way through it's not giving me a bit of trouble and i hope that anybody that started theirs i hope theirs is doing good too so what i'm gonna do is i'm gonna this recipe uh it's gonna make two loaves and it calls for one cup of starter so i'm gonna get me a ladle a spoon and i'm gonna get me a cup of starter out i'm gonna cover this back up get it out of the way we're gonna start making some cinnamon bread okay let's get started mixing this up and it does have several ingredients but it's all going to come together pretty quick and i'm going to put my glasses on so i can read my ingredients we're gonna start out with a cup of oil and all we're gonna do is just add all these ingredients up so we've got a cup of oil we got three large eggs i'm going to stir them up just a little bit better my mother-in-law always made this around christmas time and she would make several loaves and give it to each family of course we all all of us had you know kids a bunch of kids or whatever but uh she always would give one or two per family it just depended on how many kids we have and my kids always ate it up so we had three one cup of oil three large eggs and i need a half a cup of milk i need a half a teaspoon of vanilla and let's see i need one cup of sugar okay that was one cup of sugar two cups of all-purpose flour i think i'm going to give that a little bit of stir before i put my flour in two cups of all-purpose flour and you can use bread flour if you want to half a teaspoon of salt i need a half a teaspoon of baking soda and one and a half teaspoons of baking powder and two teaspoons of cinnamon now i've got my oven heating to 325 and i've got two bread pans two loaf pans i got them greased i got them old and when i done instead of putting flour or anything in my bread pans what i do is after i oil them as i put i just kind of sprinkle a little bit of my cinnamon and sugar in there and kind of just work it around till it's all coated with my cinnamon and sugar and that's how i coat my bread pan so we got our cinnamon in there now you need two boxes of uh vanilla instant pudding so i'm gonna put two in there [Applause] and i hope everybody starter has done real good now i'm probably getting behind with everybody uh because the days that my videos come out but if you if i got behind with you all y'all had to do is just keep it fed and kept it stirred and it'll be okay i'll stir that up a little bit before i put my starter in now i'm going to put some walnuts in here and put any kind of nut you want if you don't want nuts in it you don't have to put nuts in it that's just optional so i'm gonna put you know what i'm gonna put my starter in here first and i've got a cup of my starter this stuff smells so good you can smell the this little bit of sour but a little bit of sweet with it and it smells fermented it smells really good i've been really proud of my of my starter how it's held up and you know on day six we fed it and uh so it just had one feeding besides this morning and it's just really always done just really good it's done a good job stir that up pretty good and i'm going to put my cup of walnuts in it now you could put some kind of dried fruit in it if you wanted to be good but i'm just going to keep this simple just a little bit of cinnamon and then our like i said my bread pan is coated with my sugar and cinnamon and i'll show that to you in just a minute before we put our batter in there it's a really good really good batter going there so let me clean this mess up i'm gonna get my bread pans and we'll get our get our batter in there okay we got our our batter mixed up we've got our loaf pan coated with oil and sugar and cinnamon now we're just going to divide this up between the loaf pans i think these are 9x5 loaf pans i can't remember now i'm going to be doing some different recipes with this starter so as we go on you know through the weeks i'll be doing some different ones so you never know which i didn't do the sandwich bread because it takes two nights of rising so uh let me get me a different spoon now you can also you can make this better just just the same recipe and um put you a couple of tablespoons of baking cocoa in it and some chocolate chips and that will be another recipe we'll make too but i have so many different recipes use this starter in so i want to off and on do as many as i can in between everything else but like i said this is a very forgiving starter most people i think that have trouble you know with starters i think they'd be happy with the with this starter so i'm just going to spread this out now i one of the bread recipes that i do have using our almost starter does use yeast in it and then just your old-fashioned regular sandwich bread recipe doesn't call for yeast of course we already know that we started the starter with yeast but it has two days of rising so that takes quite a bit of time time that i didn't have so i wasn't able to do that one yet so anyways we'll get that in there as good as we can shake it around then i'm going to take the rest of my cinnamon and sugar and i think this this was a half a cup of sugar and a couple teaspoons of cinnamon and i'm gonna just really coat the top of this cinnamon bread now if you think it's too much you don't have to use all of it but i like to really coat it good so there we go two loaves 325 oven and it's going to take anywhere from probably 45 minutes to an hour at 325 but we all know that our ovens differ and a lot of times my bread will get done faster than some people's do in their oven so we'll see how long it takes so let's get this in the oven and while it's baking i'm going to show y'all how to divide the rest of your starter up and we'll put it i'm going to share some of it and some of it i'm going to put in the freezer i want to show y'all this gift i got from one of our subscribers and it's a hand carved [Music] spoon in the shape of a heart and it's made out of olive wood and it comes from a kenya they make them by hand and they sell them so i thought that was just really sweet that was a really sweet gift and it goes for a good cause it goes to help the the people of kenya that uh that do this wood carving and and make these kind of things so i just thought that was really neat really sweet little spoon okay so now we're going to bag up our starter what i'm going to do is i'm going to put a cup at least a cup and you can do half a cup because a lot of recipes just call for half a cup but i'm going to put a cup in each one of mine and i'm going to share a couple of them this week and i'm going to freeze the rest of them but i'm going to keep just a little bit back to because i want to show y'all how to dehydrate a little bit of your starter and you can see on my on my bags i just put almost starter and i put the date on it um some people will write out the whole recipe of from from day one all the way to day 10 on here and i would rather write it on a recipe card and give them the recipe card along with the with the bag of starters the way i like to do it so anyways i'm going to put a cup i've done stirred this a couple times and if you want to dehydrate most of it like i said i'm going to show you how to do that if you're not wanting to freeze it but if you're wanting to freeze it all i'll do is when i decide to make another recipe is i'll take it out of the freezer and let it get to room temperature and then i'll feed it probably that morning and then that afternoon i'll make my recipe or what i'll do is if i want to get up and make pancakes with my starter i'll do it the night before i'll feed it the night before but i'll take it out that day and let it come to room temperature and then that night i'll feed it and then the next morning i can use it so you don't have to start all over from taking it out of the freezer and then going to day six and feeding it and going to day 10 you don't you don't have to do that now some people do but you don't have to because it's gonna work so i'm gonna get as much of the air out as i can and i'm just gonna finish putting this in my bags and then i'm going to show y'all how to go about drying or dehydrating some of your starter to put up in the pantry because you know it could get to the point that if you uh have to go off-grid or if you are grid and you can't don't have a freezer or a refrigerator to put it in you can dehydrate it and then all you have to do is hydrate it when you're wanting it and i'll put a course i'll tell you how to hydrate it and then i'll put it in the description box below so i'm going to finish bagging up my starter my bread's still in the oven okay let's let's dehydrate some starter all i do is i've got a cookie sheet and i've got parchment paper and i'm just going to take my starter i'm just going to pour it over my parchment paper now i know some of you are probably going to ask me where can i do this in the dehydrator yes you can if you got your the mats that go in there um i can't tell you what temp or how long because i've not done it in a dehydrator but this right here is just about as easy as you can do it without using electricity to do it so i would say do it this way but what you want to do is spread it out it's very very thin [Applause] [Applause] and all you're going to do is put it on your counter and just let it dry now not sure how long this is going to take it differs but we'll check on it in the morning maybe before the video up before i get it uploaded and we'll see how it's doing so try to get it as thin as possible [Applause] and i mean that's all there is to it [Applause] to dehydrate your starter and you know back in the day they didn't have dehydrators so and they could dry it and they could put it in their pocket or put it in their in a little tin and take it on the trail with them and when they wanted some starter they'd just hydrate it and use it so i'm just going to leave this alone quit messing with it and we'll see by morning how dry it is now you could stick this in a warm oven too i would probably warm my oven to about 170 or so and then turn it off and stick it in there and it'll be okay so here's my starter in the bag the rest of them i put in the freezer this is one of them i'm going to either use or share with somebody if somebody wants it and you see it's it's bubbly this morning looking good so when you take it out of the freezer i said before that i have a so you can see that it's still pretty wet it's going to take a while and probably sometime today i'm going to stick it in a cold oven and turn the light on and that'll help it go ahead and dehydrate but anyways i said that with this starter coming straight out of the freezer that if i was using it i'd uh let it come to room temperature then i would feed it that morning or the night before and then i would use it the next day a lot of people go ahead and go through the the 10 day process again or they just go ahead and feed it a couple times but if i see it bubbling and i know it's active i'm going to go ahead and use it that's just up to you people do it different ways we all have our ways and if they work it's a good thing so we're up this morning and we're going to toast us some of this wonderful amish friendship bread cinnamon bread for breakfast of course we taste it last night and this morning it is so good but it's really good when you toast it up like this so i'm just going to put a little butter in my little iron skillet and let it melt this is just a really really good bread it's not too dense it's just right to me kind of looks like pumpkin bread or something but it's not it's just got all that cinnamon in there my dehydrated or what i'm trying to dry is my the sourdough starter it's still not dry it takes 18 to 24 hours and it depends on the humidity in your house too so of course it's not dry this morning so when it does get to that point i will do an update on that and show you how to store it and then how to use it it looks like my pan's getting pretty hot so i'm going to stick that in there i'm going to toast this from mr brown and he can have it with his coffee and this bread of course just like other kinds of breads it freezes really good so just wrap it up good and full if you're not don't think you're going to eat both gloves and put in your freezer for later um i will probably even cut this one in half and wrap the halves up really good and put them in the freezer because me and mr brown won't eat a whole loaf at a time um or you can give it somebody pretty good stuff ain't it good toast to that well really it's delicious [Laughter] it just has a little hint of the sourdough don't it it's not overwhelming with sourdough taste and it's just really good and i like the english moments in it yeah that's good so i hope y'all like this video and i hope you all starters doing good and y'all try this recipe and we'll be doing more recipes with our starter i will be sharing some of mine and some of it's in the
