Fukuoka is a highly competitive market for bakeries but Pain Stock consistently has a line out the door selling
over 5,000 loaves of bread every day! “We just want to have fun”,

This bacon is homemade? Yes, we buy the meat and cure it in salt for about a week. We will now make the anko. This is the melon skin that we were kneading. And what are you putting on it? It’s panko bread crumbs. Are you always developing new types of bread? Not really developing, I’m just doing what I like to do. It’s a hobby. Things that you were forced to do will not become delicious. I just go along with what I like at the time. What kind of bread do you strive to achieve? We like to make bread that is good for your body. Making everything by hand so that there is a sense of security when you eat it. I want to make bread that you can feed to your children without feeling any kind of guilt. Another thing is figuring out how to make each ingredient taste great. The important thing is to keep trying every day to achieve a better result. It isn’t okay just because you were able to make it once. You have to keep questioning it. Constantly striving to become better every day, I think that’s at the base of what Pain Stock is all about. What do you find appealing about baking bread? That it’s virtually impossible to perfect. I think this can be said about many things but the more you know the more you don’t know. The more knowledge I accumulate, the more questions I have. It’s a constant journey to find out about the unknown. Knowing that you don’t know. And to continue doing it. I eventually want to pass my knowledge down to the next generation.
