all right axel sit we're ready to roll been a few days since we've done a video excuse me [Laughter] must be that little couple of those beans we found you last night hey so uh peter f mandix what a guy you know we're talking about the coffee pot send me this medaglia dioro oh my god this is the real deal so we're gonna get this started first got my my uh what kind of vagano contessa the pot instant pot nice so this is such good coffee i tell you what so i'm gonna put this on the low to get started here because we got a real special breakfast going um so i'm gonna put this gonna time it and let's put this on level three so my friend dean over at the bird's eye great chef but i have leftover corned beef so i'm gonna do a corned beef hash usually my mom would do a uh you know some bell peppers but that's the only thing i'm missing so i have a little bit of bacon they're going to use just to get some grease into it hey by the way j m slabs right here in uh stonington uh stonington right yeah mystic stoning tonight connecticut he's doing these beautiful wood cutting boards he brought me one and his wife maxine jordan hey easy jordan and uh gigi so uh check them out it's uh jmmslabs.com right that's right yeah beautiful cutting boards so we'll put a link up for it anyway i got mine like a sieve especially when i'm trying to can't even cook can't even cook and chew gum at the same time what was that is that talking to chew gum you did good babe okay so uh i'm just gonna render down some of this bacon we'll get a always use uh what the hell this here okay so we're gonna use uh render this down so i'm going to use some some leaks okay i don't have any white onions or red onions use it whatever you want to put some peppers in it my mom never really put uh carrots in it but i'm going to well just smash them down that's what i'm doing because i don't i don't have a meat grinder i've never seen that done before i've never done it before like got to make do with the tools you have yeah right that's right okay you impressed very okay yeah i like how you're doing that something different right learn something new every day yeah me too different technique pretty cool not bad so then uh we're just to give it a little chop see it's like you know you mess around you can invent a few things you know just not invent but figure different ways out so i'll put the green in there actually i can't even put my fingers down to my side like that smoke like that smoke flavor buddy yeah that's my that's my pal that's right we went away this weekend up to uh the common man up in new hampshire the n up there in plymouth new hampshire my sisters and her friends the golden girls i call them played cards all weekend then we got a setback but then we got into uh uh i showed him how to play ac ducey oh boy that was an experience but uh so i got one carrot i forgot but we're just gonna give that a chop usually you don't put a little cabbage in but i'm doing it this little little little flavor and uh the hash the corned beef that potato is going to hold everything together okay one more piece so we need that little bit of uh bacon grease kind of to get things because we want to ideally just fry it up okay now we don't want to put a lot of salt in here because that corned beef already pretty salty the only thing i want to do is some some black pepper black pepper i might put a little djs on there not too salty that dj's seasoning and uh wanna put a little garlic powder what's that noise what's that noise with keisha baby all right smash it up real good all right this is the uh the high dollar hash because normally we just loaded with potatoes but we got a lot of nice meat in here so we're just gonna let that brown up real good and we'll be right back i have the water going to poach my eggs poached eggs got my kettle going with that and we'll be back in about two minutes gonna clean up a little bit let that fry up nice we'll be back axel now he goes takes a rest and he'll be back when on command you you're you're going places so i kind of flipped this over a little bit a couple times get that nice hash brown that's where hash that's where hash browns came from they they cook it like hash so anyway so my my dioro is up look at that my handle's coming okay i always put it back on for a little bit and uh i'd be honest sometimes i microwave my my cream and uh i know we got some purest you know but coffees like your eggs you order them how you like them so honey natural uh stonewall acres honey don't leave it on the burner too long see what you get the glass remnants of so that's going off okay you happy we showed you that process the quiche all right the kisses mix we trade off making coffee every day so poached eggs so i had the water boiling got a decent amount of vinegar you know 2-3 tablespoons it'll recover real quick a couple nice of these farm fresh eggs so i like to twirl the water i keep it from sitting on the bottom too i keep it from sticking to the bottom so now my hash we're there as soon as this uh see what i do put this over the top let that water come back to the boil and we'll give it one more stir okay cover that up and we'll be right back that's what we're looking for now here's just for presentation well i'm just going to put the whole thing right on the plate you add a little more potatoes you know you can uh it'll hold together a little bit more we got pretty lean on here we've got our po aged we should call that po-aged eggs um now i'll give a shout out to the birds eye over there on jefferson jefferson ave here in new london uh eric eric the owner that's the super nice guy it's one of those like cheers type of bars if you're ever coming through this area look at us they have a real beautiful patio outside and covered uh tents you know and uh you want to see the real cross mix cross section in london that's that's where it's at and dean he cooks lunch there a few days a week um but here's one fine cook i'll tell you that but see how i drained it because last thing you want is some wet some wet eggs you know so see here a little speck of corned beef on there lakeisha oh okay watch out now let's see hey drain it back and forth a little bit you know that would dilute down your flavor of everything all right can i get rid of it for you mm-hmm that might be a shell that's a shell right whoa good all right so then uh i'm just gonna give it a boop i'll show you one more thing what i like this is what i like this little gloss i don't know maybe not huh what do you think that was kind of an experiment yeah it's a lot of butter well not a lot of butter but it did gloss it up nicely but i don't think about it no wonder mom never did that so let's move over onto the table axel get back get back jeez i know you like corned beef so bad so much i guess sit okay hey here's daddy jack's cool with the blues here look at this beautiful plate um i just want to thank again peter f mendix medaglia de oro some fine espresso i'll tell you what it's the real deal dark dark roast arabic 100 arabica let me take a little sip now this has become my favorite cup i wanted to sit up in the cabinet for uh probably a couple years i mean i can't believe it it was mine it's cool on the outside you put the lid on it stays hot or stays cold i don't know how they do it's thin thin walled they're just tremendous i can't believe it so let me try my mom used to run it through a meat grinder so it has a little bit different texture but i don't know why a lot of places can't get it right you know it's real rare to find really good corned beef hash made from scratch okay let's break that open oh yeah that's the best part with that yolk get the taste of the yolk and poached eggs too voiced oh wait a lot of places don't get that right either we know way down in florida at one of our favorite restaurants from naples yeah first watched opened over there and poached eggs came out hard fort lauderdale excuse me fort lauderdale came out hard and cold i mean if you can't poach eggs to order or at least if you're going to reheat them least in the hotels we used to cook them like real rare they're real soft and put them in ice water then you could reheat them they would still be the yolk would still be runny hmm we would go back though we'd go backwards we ended up going to the one in coral springs yeah what was that waiter's name do you remember omidao omita omego yeah i'm good with spelling o l m e d o almeido a really good guy now coral springs i opened a restaurant there called a sample house with uh this family i went to high school was their son steve bellows the bellows from vernon and i was living out in san francisco they said well my dad has got a location willing to put the money up this was 19 i think it was 82 and uh so right moved everything down shipped everything down ups got down there sample house there was two two customers the first night within a couple months we had a line around the building wow and uh and i want to go back and see if i could recognize i didn't recognize anything it had grown we could figure 40 years that town had just it was just a a westinghouse development and uh i just couldn't believe it's like a small little city now but one more bite lakeisha oh shoot all right you get a little taste maybe a little bit of leftover egg see how gray but my boy's getting yeah we got him a show collar on a carhartt show collar hmm all right buddy you got poor poor table manners eating manners but we'll feed you off
