I’m making this tonight with some smash burgers, should be pretty litty titty if you ask me.

Couldn’t find truffle goat cheese at 3 different stores in the area so got 4 oz of regular goat cheese and some Murray’s pecorino tartufello that has truffles in it.

Wish I knew the amount of cheese Sam uses here but I’ll eyeball it and see how I feel about the consistency and go from there.

I think these might be the best potatoes I've ever made two simple words scalloped potatoes that will take on an entirely new way freakin delicious meaning in your mind after today we normally do entree type things a burrito a breakfast sandwich a KFC Double Down the Costco chicken bake like things like that you could put on the plate and eat and if there's some other stuff around you'd be fine today Oh today my friends is a side dish we don't do side dishes very often do we know Mac said how about we do scalloped potatoes and apparently I didn't answer fast enough of him his text and then I got this sent two emails about scalloped potatoes last night and this morning and heard nothing and got this emoji your scalloped potatoes and then there are scalloped potatoes and we're up here we're not here oh no this is not us we don't we don't want to be we want to be here not here here not here and it all starts with what goes in with the potatoes ready wait let's see it again ready ready let's go and we begin by putting a cup of heavy whipping cream into our Bowl there's regular milk also going in but we're just gonna start with this and I'll show you why when you go to grab the goat cheese you could use goat cheese crumbles but I like this soft one and as I went to grab the soft one today there's an herb one there's a plain one then they went oh what's that I don't recognize that and it was black truffle like wait a second listen to everything I preach about adding layers of flavor and if you can use one single ingredient and yet it delivers more than just the the tangy deliciousness of goat cheese but also adds to that truffle I'm going for it so here's how I like to put this in I take my open package and I don't want to just dump it completely in because I want to mix it in so I'm gonna just put some smaller chunks around like this the smell of the truffle in this oh my look at so just get it all out or as we say in Canada get it all out and then we take a big spoon and we start to mush it in I find it easier at this point then if we also had the milk in here too so and you don't have to be crazy with it because the potatoes are gonna go in and then that will get mixed so just try and flatten out the big pieces of it as much as you can I'm gonna turn it into like a thick porridge and that'll be great cheesy truffle porch okay I almost forgot about a teaspoon and a half of salt spilling everywhere and of course cracked black pepper final mix and as it smoothes out we had a couple other things one is some roasted garlic and I found this in the store it's a roasted garlic stir in paste not pimping this just saying when you want roasted garlic this is a second away as opposed to 45 minutes away get me well put a tablespoon into our goat cheese nonsense maybe a tablespoon and a half we'll give it a little mix and it mixes in really beautifully next one cup of regular whole milk we mix again and last before the potatoes some chopped up chives beautiful quick mix nothing too perfect because we're coming in with our potatoes next and that looks like this we have a Yukon Gold potato that I sliced a little piece off to make it flat I have a mandolin that cuts about 1/8 inch and we do this so I like to do a potato at a time we're gonna put two pounds of potatoes in here and it's about depending on the size five or six potatoes and I'll show you why I like one at a time that's because it's important that you get some of the goat cheese the cream and the milk in between all these slices if you pile it up with a ton it's not gonna be the right mix so now you just go like this oh look it now it's a dunk it's a bathe it's a slather it's a everybody get in the bowl and I almost channeled Guy Fieri and said everybody in the pool so glad I stopped myself but once they're all covered nicely they start to go into our pan I'm using a cast-iron pan it's about ten inches across but now we just take our potatoes and we start to layer just like this there's no important way to lay them down try not to have them be doubled over and aside from that I take them out of the cream the goat cheese mixture and I start to lay them down and repeat and we're leaving a bunch of the liquid in because we have other potatoes to do so spread everybody out well the smell nothing's been cooked and this smell is tremendous so just keep this going and you're gonna be fine but whatever you do try and make it an even layer right all the way across just continue with the rest of your potatoes until you're done but don't do that mix them well so they all get coated and when the last pieces go in take whatever remaining cream and cheese and deliciousness is there pour it over the top just work it with your hands a little bit so it goes all the way down and this might be a little bit anal but I like to just clean up the edges of it presentation is everything for me my anal style and I'm good Nick stop 400 degree oven for about an hour to an hour and 15 minutes and that's it no you've got time to to make the rest of your dinner take care of a little email go go relax have a nap well I got nothing I mean weird now we're just waiting and I can tell you hold on to your shorts because what's gonna come out of that oven is gonna be about 20 times better than what went into that oven and here we are Wow I mean honestly that could be a main course and I would be happy it is so gorgeous I want to give it just a little more of the chives oh my oh my max may I scoop you may I'm checking with my child to see if I can eat what I just made Oh just see this coronavirus just see this you what this is it's freaking melty truffle goat cheese man [Music] look at that oh mama me and look at this just a little dish just a little beautiful dish Oh MF n truffle goat cheese scalloped potatoes with roasted garlic and chives holy seriously I feel like I've used this line before you have no idea but honestly I don't think here this what this side what sides better at this side I just inside I just like AG leaked inside I think I just had a religious experience truffle can easily be overused a little bit as great a little bit too much takes over all you taste is is truffle I get delicious goat cheese yes I get some truffle I also get the roasted garlic and oh my gum like the most perfect melt-in-your-mouth potatoes my taste buds are singing right now singing if you don't make this then more suppose you don't like potatoes or cream or milk or truffle or garlic but you should like this this is a lesson in deliciousness if we could hear your taste buds singing what would it sound like go on I'm not doing it come on no we're talking about karaoke earlier what do you want to sing I don't know I'm not doing the one in front of people stop it no I don't know if rows like if we go back in the water no no no no doctor never mind just make does just make this this will blow your mind if you don't make this at every I don't know this could be I mean are you gonna have burgers in this why not yes steak yes salmon yes you're not stick Diane in this see you thanks for being er like button stop that is everybody your age have to
