okay have you ever had filipino food or do you know anything about it i never have this is my first time maybe the best pork adobo we had flora win a contest for the best poke adobo you get this so i have a filipino inspired pork adobo burger the key here is to take the bacon and actually grind it into the patty it was funny man because we had we had all this food there and it was all this and that and i brought this big thing of adobo and they wiped it out man they went right through it your restaurant when someone orders ballot everyone yells it out loud and proud [Music] i wanted to change the conversation about filipino food and the only way i think that i could really do that and really make a measurable movement or shift was to turn anything that i had hiya or shame about and turn it around some famous proud filipino food what's up the proud today's video episode about proud filipino moments [Music] being the crispy spring roll type followed by suman which is a rice cake that's been wrapped in banana leaves and steamed you have the oxtail here you have the binka adobo adobo is a natural dish and this one is made with pork and chicken uh ukoi which is a shrimp fritter and of course you need a little something sweet uh you have the flan food industry filipino food is you know i've been calling it for five years it's just gonna keep getting more and more popular simply because of the variety of ingredients and european techniques filipino american celebrities adding filipino you food to kind of feel it so there's like no real directions to it but this one right here the vinegar keep that to the side because you only need a hint of vinegar soy sauce dump it in there oh yes you know it comes out like this our next guest has kept us laughing for years as yeah there you go yeah huh how was it oh yeah oh nice it looks good additional dish a filipino adobo i can smell the spice though there's some chicken thighs cooking and adding pam or some classic filipino dichnardobo brown sugar some black pepper a good amount of black pepper oh yeah that's a lot habanero oh habanero habanero okay and we're going to mix this together massage it into the kitchen with our first guest who is a two-time top chef finalist and the owner of maui's very popular lineage and tin roof restaurants and he's here today to make us an amazing crispy pork dish beloved by millions a lot of people enjoy filipino cuisine and culture and chef wayne is here to make some traditional adobo tell us what kind of ingredients are in it to make it at home what we have here is um lean pork shoulder okay and what i'm adding is very simple ingredients vinegar soy sauce fresh crushed garlic and black peppercorns and a few bay leaves i'm making the national dish of the philippines well unofficial official dish of the philippines it's called adobo do adobo which is chicken vinegar and soy sauce a little pepper lots of garlic pitch cut a pork in order for this to work yeah for me that's my favorite cut but i've done it with vegetables i've done it with chicken oh interesting roasted off roast roast off some beets let it cook down in town we get some of the same flavors yeah so you can do adobo with anything just today we're doing it with pork belly hindi you're gonna put that chicken skin side up back in okay and we're gonna cook this oh i smell soy oh it's great no it's great it's great it's great yeah i'm totally making this congratulations okay here i go i'm gonna dig into this pork and it is soft oh and so flavorful that is delicious and it is soft oh and so flavorful um this is a filipino-inspired burger yeah so i have a filipino-inspired pork adobo burger the key here is to take the bacon and actually grind it into the patty so you get a nice juicy bacon flavor and then of course you add the quintessential adobo flavors which is uh vinegar soy sauce bay leaves lots of garlic all right gordon what do you think um season beautifully seasoned beautifully and that goat cheese juice and richness as well and the bun that's the traditional filipino oh yeah it is it's called pandasal yeah of course it's delicious well pretty good you know what it's kind of like coming down to a decision gordon you have to make a decision i mean here's the thing two good burgers okay right um take some more seasoning um cook them with a touch more spice in there lift it up but i'm gonna go with the filipinos [Applause] the trophy and gordon thank you so much for joining us what makes a special adobo how about adobo a la celina gomez monaca crowd do it
