there are some inventions that are really good and some that are great and once in a while you get something that ranks even a category above both of those something that's truly genius what i'm about to show you is genius by now you may know that i love drums over wings there's always going to be a struggle between what's better but i'm a drums guy all the way anyway today's about something bigger than that chicken and waffles the combination actually started in the 1930s and now who hasn't heard of it we're about to take chicken and waffles to a whole nother level buckle up because this is going to blow your mind we'll start the way i begin all of my chicken dishes a couple of drums in a glass bowl we're then going to go ahead and pour in equal parts pickle juice and equal parts buttermilk given the acidity this will break down our chicken and give us a really tender bite we'll allow this to rest at room temperature for about half an hour once this time is up lightly dry out your chicken just patting them between a kitchen towel then dump them into a new bowl from here we'll add a few tablespoons of potato starch a sprinkle of orange zest a little chili powder and a light sprinkle of salt mix these around to evenly coat them and make sure that every spot is coated with the dry rub place your wings in a fryer at about 375 for 10 minutes or so your cooking time may vary so just be careful with this and make sure you've cooked them through i found that with drums they're more forgiving and you can overcook them a little bit and they're still really juicy i'm constantly trying to redefine the definition of crispy just to humor myself here i'm going to take a little crispy morsel crispy morsel right off of one of these wings and in one bite i'm gonna teach you the meaning of crispy i'm gonna add a little bit of my buttermilk waffle mix if i'm being totally honest i didn't make this waffle mix myself i took a very recognizable name brand pancake mix in a shake and pour bottle and i just slightly modified it to make it work with waffles a little milk egg oil that's it i know it's a little lazy now here's where things get interesting i'll start with a piece of my chicken in the mini waffle maker and then press this down to flatten it out you know what that is right that's juicy chicken chicken wing and a little more batter oh my gosh how has this not been invented yet this looks great but it's not complete until i complete my finishing touches a nice bath of maple syrup and a generous serving of maple crumble this is one of the most ridiculous foods i can possibly think of but i think it might be genius all right here goes nothing it's super super juicy on the inside and the coolest part about this is that in some areas the chicken literally seems like it's been combined and caramelized with the waffle particularly right here along the edge there's a point where i literally can't tell the difference between the two i gotta say guys i think this is my craziest video yet if you wanna see more videos like this please like comment and subscribe that's the only thing i'll ever ask from you and that's what keeps me going that's what allows me to keep making these videos for you guys i was gonna share these but i think i'm gonna eat all them myself i might be in a food coma next time i see
