it's all you can vegas hey everybody it's derek and i'm here at moth 32 at the palonzo in las vegas this restaurant used to be charlie trotter here at the palazzo and it's now ma 32. it's it's asian food chinese food and it is high-end gourmet chinese we're talking a mabo tofu that's 68 because it comes with lobster you can even get the buddha jumps over the wall that's a soup that goes for 198 dollars so what does all this food taste like well we're gonna find out we're going to start with some dim sum [Music] [Music] something beautiful [Music] inside these dumplings and these are the crispy sugar coated barbecue varico pork buns and what about these soup dumplings [Music] almost forgot the sauce the little dipping sauce with ginger here we go [Music] i guess all right here we go yeah i bit into it and then the liquid the soup inside just really squirted all over me you can't see it because i'm wearing black yeah but i'm wearing it the napkins wearing it but it's delicious it's still quite delicious and we have one more delicious of these pork buns we'll flip this they even have roast duck they've got an applewood roasted 42 days peking duck in fact the table right next to us they're getting that stuff right now you can see it being carved carving it up and i don't know what's gonna happen how they're gonna prepare but it looks pretty cool [Music] your crispy egg noodle the choy sum and bamboo pin that it goes along with our mushroom sauce which i'm gonna set right next to you here you can put that right on top of your noodles great thank you this looks so amazing this is like you know this this place mod 32 it's like a chinese restaurant with a lot of the same dishes you'll see at any chinese restaurant but they are done in just an elevated fashion i'm so excited to try this is it too soon oh no go for it it's gonna be our lovely jazz and smoke con tonight you don't mind i'll go for it okay and then wow i can smell this smoke that is definitely smoked is this smoked black cod wow have you ever seen such a thing like lifting the the lid off this play that the glass lid and it's filled with smoke and the smoke it just goes everywhere i can still smell the smoke it's like it smells like this place is on fire it's just the cod all right how about you try that cod and they will let me know what you think of that very excited about that it's beautiful awesome yeah that doesn't like any type of presentation really is it smoky it's smoky it's crispy it's buttery soft and smooth inside perfectly cooked it's not overcooked it's sweet and smoky at the same time i can i i don't have the words you have to try it i gotta try it and i gotta try these these are my one of my favorite things ever in a chinese restaurant there's my chopsticks fish is so delicate but the sauce is so sticky but it's sweet and smoky all right i gotta get me some of this these crispy noodles i know that they're already kind of pre-divided there we go some greens and the gravy mushroom gravy [Music] there's all sorts of crazy looking mushrooms in this gravy all right crispy noodles with mushrooms this big shitake mushroom but this gravy is thick too wow that is so good and this i'm not sure what this is it does say that in the menu it says bamboo pith but that's the bamboo pit is this some kind of mushroom it looks weird enough to be a mushroom i guess i'll just try it i don't know what that is it's pretty good though your mushroom lover or a noodle lover or both this is the one to get okay this is the thing i think was called maybe this was the bamboo pith [Music] that's so soft it almost tastes like um it tastes like a lychee or something like that [Music] how's everything been this year oh it's so good yeah thank you very much service of course on point here fine dining can i get back huh i need to ask what this is yeah that's it that's the thing what what is that yeah this is what i'm talking about it looks almost like a little brain or a liver or i don't know what like some kind of organ but i don't think it's an organ i think it's probably some kind of weird mushroom right we've never seen anything like that it had slightly crunchy i recognize all the other mushrooms in there sort of i think we need to ask yeah we'll ask anybody back to more of this fish the black cod the smoky black [Music] [Applause] [Music] maybe that's easier to eat that way [Music] well that's not easier that way noodles so that i can get some more of this gravy [Music] i love the gravy you do you love the gravy i love the gravy too yeah but you know it's just it's not sweet it's it's like thick which i like it's like just like always with this type of dish with this crispy noodles it starts to make the melt into the noodles to make it like real melty i have a question we are trying to decipher one of the ingredients in here is really cool oh there it is do you know what this one is i believe it's a mushroom let me just be sure yeah i think these are all mushrooms but i've never seen one quite yes oh my god one moment [Music] yeah okay yellow fungus thank you very much yellow fungus order it by name [Music] and we got there's greens in here too keep it healthy all right we're definitely going to get dessert they're sold out of the bamboo green forest and the imperial bird's nest soup is 78 so i think we're gonna get these his last two on the menu the fresh mango coconut and glutinous rice roll and the double boiled egg white with black sesame double boiled steamed egg whites black sesame spice right here is the goodness mango rice book all right let's try this one it's like cool mango pudding with just coconut shaking all over it oh that's nice he's just too curious like oh it's like it's like gelatinous it's almost kind of savory it's not sweet like a tester okay are you telling me what you think about this custard is it really oh my goodness i didn't even get it oh you didn't even it's black sesame powder oh it's like it's mostly black sesame with a double boiled egg white on top i love black sesame okay okay so i'm going to try this yes like this right now that's worked out the black sesame is sweet oh okay the black says it's not okay yes yeah you gotta mix this one oh yeah it's all sesame so mod 32 in las vegas if you like chinese food and you like elevated ingredients techniques and
