today we're making a very popular mexican breakfast we are making huevos a la mexicana or mexican style eggs if you ever see the word a la mexicana prep yourself with tomatoes onions and green hot peppers but before we get started i want to invite you to subscribe like this video and don't forget to click the notification bell as always welcome to my kitchen my name is rosana let's get started we are going to start by making some creamy refried beans loaded with flavor they are the perfect addition to this breakfast place a medium sized pan over medium heat and add about two tablespoons of oil i'm using olive oil but you can use vegetable canola or avocado oil as well give the oil enough time to get hot and then add in half of a medium white onion diced together with one large garlic clove minced stir the ingredients occasionally or as needed until the onions caramelize by caramelizing we are browning sugars in order to obtain a sweet nutty flavor just be patient and watch the magic happen these are so hard to resist and smell amazing if you feel the onions are burning or browning too fast feel free to lower the heat once caramelized pour in three cups of pinto beans already cooked and include some of the cooking liquid if you are wondering if you can use already cooked canned beans yes you can but if you rather cook them yourself i'll leave the link to my refried beans recipe down in the description area where i show you how to start from scratch go ahead and mash the beans with a potato masher the extra liquid we added makes them so creamy and gives them the perfect consistency if you feel they are too dry you can add more of the liquid until they are moistened to perfection just keep mashing until all the beans are broken down lastly season with salt to taste stir once again and watch how the beans are creamy and thick but if you leave a path they will quickly come together these are ready remove from the heat and let's do some prep the following ingredients will need to be diced starting with two beautiful ripe red roma tomatoes next we will need to prep half of a medium white onion and make sure all of these ingredients are cut into uniform pieces and last but not least we need two medium serrano peppers these do tend to be hot so you can add to taste or you can use jalapenos and remove the seeds i'll keep the seeds for a nice kick when a la mexicana is added to the title of a dish you know it will automatically have tomatoes green peppers and onions included in the recipe the colors placed together represent in a very creative way the colors of the mexican flag [Music] now crack 6 large whole eggs into a mixing bowl typically this amount gives me big enough portions for up to three people but i can vary depending on portion size with to combine i like to use a whisk but i have used a fork in the past both do a really good job by the way if you're interested i will be leaving the links to some items i'm using in this video down in the description area so feel free to check them out let's not forget we need to season the eggs add salt to your liking and whisk to incorporate well next place a large pan over medium heat and also add about two tablespoons of oil and let it become hot once hot add the onions and peppers and saute lightly stir well this way everything cooks evenly you want the onions to slightly soften but still resemble firmness and have a slight crunch so we are not going to let them become translucent saute for about one minute and then add the beautiful red tomatoes and keep stirring the tomatoes need to cook soften and at the same time keep their shape we don't want them to become mushy that's just my preference it gives this recipe the perfect texture it will taste amazing and look gorgeous as well the tomatoes look perfect now pour in the eggs stir as needed but try not to mix too much it will break down the eggs and we want to obtain the large curdles that take this dish to the next level stir carefully and as needed until the eggs are set and then remove from the heat to prevent overcooking i went ahead and also made a delicious chunky salsa it will marry everything once added to the dish i have a recipe on how to make salsa and will also leave the link in the description area along with other useful information all that's left to do is plate and enjoy this is the perfect breakfast mexican style eggs served and accompanied by refried beans is a staple in mexican cooking it's popular for a good reason it's inexpensive and also a complete meal you can top the beans with crumbled queso fresco as well and don't forget to add your salsa also feel free to heat some tortillas and enjoy every single bit of your creation these mexican style eggs or huevos la
