This video came up on my feed and immediately my mind went to cast iron. My understanding is that during the seasoning process we cross-link and polymerise the oils/fats used in the seasoning process; this video stated that there are sulfur-based acids that react with the steel. I believe that she may be referring to syn-Propanethial S-oxide. Looking at the structure of syn-Propanethial S-oxide it potentially may help act as a binding site between the bare metal and the fats/oils of choice.
I am thinking I may run an experiment on this and wondered if anyone had come across anything similar?
