[Music] to get started I will be using a 2-pound a rotisserie chicken with my clean hands I am going to shred the chicken you could also boil at least a pound and a half of chicken breast if you prefer and shred that with two forks but I'm using my hands today okay so now that it is all shredded and taken off of the phone I am now just going to take my kitchen shears and chop it up a bit into smaller pieces now that the chicken is shredded and chopped into pieces I'm moving on to my enchilada sauce I will be using one and a half tablespoons of chili powder 1/2 teaspoon of garlic powder three tablespoons of all-purpose flour 1/2 teaspoon of ground cumin 1/2 teaspoon of onion powder and 1 tomato flavored chicken bouillon cube in a preheated skillet I'm going to be adding around a quarter cup of oil once the oil is heated over a medium heat I'm going to add all of my dry spice mixes and then I'm going to cook out the flour and mix everything together with the oil [Music] [Music] okay so now that I've tortured you with my points I'm going to be adding two cups of water now my enchilada sauce is done I'm actually going to set it aside and allow it to cool before adding it to my shredded chicken now I'm going to make my cornbread mix here I have two cups of yellow cornmeal and one-and-a-half cups of all-purpose flour I'm also going to be adding two large eggs 1 tablespoon of baking powder 2 teaspoons of salt 3 tablespoons of sugar 2 and 1/2 cups of milk and a quarter cup of oil now I'm going to combine all of my dry ingredients and mix them well with a whisk once like my ingredients are next I'm going to incorporate the wet ingredients and combine everything well [Music] [Music] next I'm going to combine my cooled and she lava sauce into the shredded chicken [Music] okay so now that that is combined I am ready to assemble this tamale pie I am going to be using a 9 by 13 baking casserole dish I'm going to take some softened butter actually I forgot to take my butter out so I'm using a margarine spread but you could use oil butter whatever you have and make sure that you just spread it all over and grease your baking dish now I'm just going to put half of the batter into the bottom of the dish I'm going to spread it in a thin layer I'm then going to add my chicken then I'm going to add shredded cheese I will be using 1 8 ounce block of shredded cheddar cheese you can use the cheese of your choice then I'm going to mix some of the cheese into the rest of the batter and spread it on top [Music] [Applause] [Music] [Applause] [Music] once your family pie is done you want to remove it and allow it to set for at least 15 minutes before cutting into it so I'm going to remove it from the oven and I'm going to let it set for around 30 minutes [Music] my family PI has come out of my casserole dish successfully and that is because I allowed it to set I'm going to plate it and I want to mention that you can pretty much top it with whatever toppings you like I'm going to use sour cream I'm going to use some chives black olives and some pickled jalapenos and also when you are making this you could use whatever filling that you like it doesn't have to be chicken it could be beef or you can add black beans and corn to your chicken and extra cheese the options are up to you either way I like to think this is a good place to start [Music] you
