what's good everybody this girl patrice back in this kitchen with another episode of pinch of salt cooking today we are going to be making something i made actually my very first video on youtube i did a basically a facebook live and i turned it into my first video so today we're going to be making some smothered cube sticks yes so we're going to go ahead get into this right now i'm going to go ahead and see something meat okay chop up the onion because you gotta have an onion with this and then we're gonna get that onto the stove and into the oven and then we'll be ready for dinner okay so let's go ahead and get started let's go let's get to seasoning so we're going to put on some seasoned salt now we're not going to add a lot of this because of the salt content we can't control that so we're not going to add too much on there let's get some grain of the onion now with this part you can add as much as you want because we want this to be flavored up we're going to get some granulated garlic it's same thing just get it all over your cube steaks and some pepper i'm gonna get that on there as well and we're gonna flip it over and do the exact same thing on the other side now you may notice that there looks like some spots that's not completely red that's okay that's the meat is still good okay it just means that the oxygen got on that part of the meat and it's basically oxidized right but it's still good alone to smell good then you know it is good to go [Music] all right so we're going to do the same thing on this side as well and just just remember that long it's not the seasoned salt you can add as much flavor as you want to on here because trust me this is going to go through a lot of steps and we want the seasoning to actually stick okay it's gonna go through a lot of steps all right and we're gonna just go ahead on now and put three of these right now into some flour all right the oil is back there in the back um heating up so i'm just gonna go ahead and get these prepared get them in that flour and we're gonna get ready to go ahead and cut the onion now now i have a video on how i normally cut an onion but for this process because we're not going to dice these up we're going to actually cut these into some slices to go um on with this meat okay so this one is going to be done just a little different okay [Music] all right so here i'm just gonna go ahead and cut these into slices if you want you can cut them into like big circle kind but i just like it this way it just works out best for me this way so you can cut these however you want for your gravy i'm gonna check this all to see if it is hot by just put in a little bit of flour and if it starts to sizzle we know that it's getting warm so once we got it nice and hot we went on ahead and added in the steaks after a few minutes i'm gonna go ahead and flip these things over because we just want to get them brown okay we're not trying to cook these all the way through we just want them brown okay because they will cook longer once it's inside of the oven so we're gonna go ahead and take these out i'm putting them onto a paper plate for now so that we can go ahead and do the rest of the steaks now here we're going to go ahead and add in our onions and this is where all the fun begins so we're going to go ahead and put these in and what i like to do is i like to season um the onions the exact same way i did my steaks okay so we add in the seasoned salt the garlic the onion and the pepper okay we're going to go ahead and add those in mix it all around and let those cook for about a good three to four minutes just to get them sauteed down nice and brown [Music] [Music] all right so once these are nice and tender how i like them i'm gonna go ahead and take these out and i'm placing those into a bowl okay we're gonna leave these off to the side because they have done their job getting the pan all nice and flavored i know that sounds corny y'all just just work with me work with me [Music] all right let's get to it three tablespoons of butter right into this pan and we're going to go ahead and whisk that around and let that melt all the way down and if you notice i am using a nylon um whisk because this is a nice skillet and i didn't want to scratch it up more than what it already has been done okay [Music] all right now add in 1 3 cup of flour and i'm just gonna whisk this all together and let that flour get cooked in yes this is the process y'all now i'm going to go ahead and add in chicken broth you can add in i've done it where i've done chicken broth and beef broth or you can just do beef broth or you can just do water just know that if you do water you are going to have to season this up a bit so yeah i'm just going to go ahead and whisk this in and you're just looking for the consistency um that you prefer for your gravy so i'm just going to whisk in and scrape around just to make sure i get all the bits off the bottom of the pan at this point i'm gonna go in and season the same thing i did with the meat we're gonna go in with the seasoning salt some garlic some onion some pepper okay this is the same process through all of it this is how you build upon your flavor and with this being that i did put in some chicken broth um it didn't require a lot of salt content from that season salt but just go ahead and make sure you taste everything and make sure it is to your liking so as you can see i'm just whisking this all the way through just to make sure i get it all through everything and i'm gonna sneak in another tablespoon of butter and let that melt down and as you can see it's gonna make it to me a little bit more silky and it actually did thicken up the gravy just a little bit now go in and see if that's the right consistency for you you can go ahead on and taste this as well and if it needs any more seasoning go and add your seasoning okay now i'm gonna go ahead and add in the meat to here now what i do is i like to layer it so as you can see i put in some meat and then i'm gonna come right back and layer it with some onions and then the meat again and then onion so we're just going to keep it doing this process until we use up all the meat and all the [Music] onions [Music] now for the end of this i am going to go ahead and pour in just a little bit of water to get it up a little bit so that way when it's cooking it doesn't dry out the rest of the meat towards the top now cover it and put it in the oven okay let me put y'all down a little further all right so y'all can see what's going on here so what do y'all think um what about some peas right here and some um potatoes back here that i cooked and look at that so what i like to do is i get in here and i move things around okay and as this cools that gravy is going to thicken up okay i did take the top off for about maybe um the last five minutes i'm gonna put the top back on um so yeah there we go so let me plate this up a little bit and we'll be right back all right y'all so i made my plate you can see there okay i'm gonna answer some pictures um inside okay so y'all can see okay so i'm going to actually go ahead and look i got a mm-hmm i got a butter knife and it's cutting you know what let me hold on let me let me get y'all down here so y'all can see this hold on let me get y'all down here yeah see i think y'all can okay so y'all can see me cutting right on the side of this right yep yeah y'all won't stand look at that y'all see look at that look at that there got the onions inside of there oh i cannot wait okay so put that up now some of that right there it's a hot i'm doing a serve y'all dinner served so i know enough potatoes just y'all know i'm not mainly known as me though some peas i actually
