[Music] something that's going to help you make the perfect dough from what is a mandolin it's a sound investment admittedly you may only use your mandolin for slicing potatoes like i do i think it's the only way to ensure you have the thinnest cut potato we peel our spots first my preferred potato of choice is maris piper potato if you're in the u.s then it'll be a russet potato hard to gauge how many potatoes you need sometimes but i'm going to get my dish and see how many whole potatoes i can fit in there and then you have your answer once these are nicely peeled you want to start using your mandolin slice them up on the thinnest setting take your time you need to be really careful because the blade is sharp good thing about potatoes is they don't really discolor too quickly so you have to take a bit of time to make sure all of these are really nicely sliced pop them in a bowl ready for the next stage to dry them off i use some kitchen roll and this will absorb a lot of that excess moisture you don't want that in your potato dish now this is my favorite bit you want to layer this up using cream gruyere cheese grated garlic and salt and pepper you can always make this ahead of time and it can just sit in the fridge and then you can pull it out when you're ready but essentially when you're layering this you want to alternate it every layer will have a cream and gruyere but then every other layer will have a touch of garlic or seasoning take your time in this bit enjoy it because that time you spend lovingly making this will pay off when you serve it in front of your guests later you will be able to see the wonderful layers which really look very pretty when served if you like more cream and add it in the same goes for garlic or cheese there's no sets way or perfect way to make dough from while each cook will make it slightly differently and that's a good thing after you're done you can add plenty of guru on top of course you don't have to here and then you want to cook this long and slow in the oven you don't want to rush it you want to cook this until the cream and cheese are bubbling and the potatoes cooks nicely all of that time and effort making this would be worth it in the end trust me [Music] thank you for watching and i have some more great seasonal side dishes coming up in the next few weeks catch you later
