"as it's a pigeon pie, we'll add some feet" haha what?? Crap, have I been disappointing my guess by leaving feet off of my chicken pork and beef pies?? I didn't know feet were a good garnish >_<
I wish they had showed her making the pastry. The recipe states it's a simple cold water pastry with butter and egg, although I thought hot water crust pastry was more standard for pigeon pie (I guess it doesn't much matter as long as the dough is sturdy).

a few things - canned truffles are almost flavorless, but still about 15 20 bucks an oz. so that was maybe 60 dollars of truffles in that. the whiskey being just poured in with the stock will never cook off, so thats gonna taste weird. with a pie that thick you will also want to start off with room temperature ingredients and absolutely test the interior temp. I seriously doubt it cooked through properly in 90 minutes. I would start it in a low oven and cook it longer, finishing at higher temp to brown the crust. As i understand it, these pies were made to be used as a bowl more than sliced like a pie like she did, but maybe pigeon pies are different. edit- 90 minutes could be enough if there was a good amount of liquid in there and it was added hot. might really try this im bored out of my mind here.

Totally forgot about this series. She's very much in character the entire time. Very formal and very British.
I think the same channel has reenactments from other servant characters. Such as the apple boy that is in charge of caring for the orchards and selecting the most perfect apples for the lady and lord of the house.
Seems like a perfect excuse for doing something with those pesky pigeons which wake you up every day with their incessant cooing
Intriguing overall but I wish they would have left in all of the steps and didn't do the weird non-sequential video cuts in the assembly part. It would have made this video more fit for this subreddit, IMO.
edit: I should mention we definitely need more content like this so I don't mean this in a disparaging way. The cinematography is very enjoyable. I just mean I would also appreciate it if this channel uploaded a version that was start to finish, no big edits, with the pastry being made, the knifework, processing the pigeons, mushrooms, making the eggwash(?), cutting a wedge out of the pie, etc. Assuming they already had the footage.
