this is alfredo yes mr alfredo is on this plate no cream no milk no nasty ingredients simplicity at its best with some special ingredients of mine let's take the alfredo pasta to the next level yes i'll show you how to make it alfredo pasta it is italian we call it pasta alburo it's parmigiano and butter but it's famous worldwide as alfredo well this is alfredo pasta done the right way this is sensational if not even better than carbonara i am in love hi and welcome to the enchant sauce plate the plate where you get to learn how to make delicious italian recipes well alfredo pasta is not really famous in italy it became famous in america and worldwide but there is a restaurant in rome that create the serve this pasta the original alfredo has no milk no cream nothing like that the cream is made with butter and parmigiano-reggiano and today i've decided to add mushrooms and truffle yes it is an alfredo base pasta with mushrooms and truffle this is ayumega and this is how you recreate your version of alfredo you want to add shrimps you want to add zucchini you can but the base it's here and i'll show you how to do it to make mushroom alfredo we need simple ingredients but delicious first we need 200 grams of pasta i'm making pasta for two of us and i'm using today i'm using shalatielli pasta classic pasta from naples i am not using italian then we need 100 grams of nice butter the butter should be 50 grams per person so every 100 grams you use 50 grams then we need a generous amount of parmigiano reggiano when i say parmigiano-reggiano we don't talk about parmesan we talk about truly top quality italian parmigiano-reggiano 24 months aged then i'm using about 250 grams of porcini mushrooms they come all the way from italy and then i have one nice fresh truffle which i'm going to grate last but not least a little bit of parsley that we need for the porcini mushrooms but we do not use the parsley to decorate this dish no no no no first thing we're doing is we have to boil the pasta so a large pot of water we put a generous amount a tablespoon of rock salt this specific pass i'm using today takes 19 minutes to cook so let's boil the pasta and in the meantime let's cook the mushrooms always give a quick stir to the pasta when you put it inside the pot and then what we do is every five minutes we go and stir first thing you want to do you want to cut the mushrooms and just into chunks just um just like that because the mushrooms will shrink so just chunks like this to cook the mushrooms we're gonna add one tablespoon of extra virgin olive oil and then we're going to add the mushrooms in we want to cook the mushrooms for about 10 minutes or until you see that they're cooked now we're also going to add the parsley and i've used the stalk as well okay be generous [Music] you must be asking yourself why vincenzo is not using garlic i don't want to use garlic because the main ingredient is butter and parmigiano the truffle the parsley the mushroom is just an extra ingredient to give the extra flavor if i put the garlic i'm it's going to take over everything and i don't want to do that ah the smell of the mushrooms in my kitchen is just divine [Music] now the parmigiano i like to grate my parmigiano finally finally grate my parmigiano and i'm using the perfect utensil to do that see this is going to grate it to perfection okay as you can see here have a look the way it comes out graded i want that to be like us no okay i want this to be like a snow be very generous with your parmigiano and this is what you get see fine fine grated parmigiano this is not enough i need a lot more in the meantime our butter got softer it was at room temperature out of the fridge i cut it into a full and this is now ready to mix with the pasta come on guys it's time to assemble okay guys this is where the magic begins pasta is ready so let's take a mug of pasta water out because this is full of starch and we do need this to combine the pasta i personally like to take my pasta out just like this with a colander we've got thread in there and but you can use a sink and a larger colander to do it if it helps i just like to keep my pasta water in there just in case i need more here we go now it's very simple we put the pasta in the pan and we switch off the stove time to switch off the stove now the pan is off the stone but the pan is nice and hot so what we do is we quickly stir so we can mix our beautiful mushrooms with the pasta once this is done we're going to add the butter that are previously cut then we're going to add a little bit of pasta water about half mug of pasta water in there the pasta water will help us to melt the butter and combine it with the pasta it's very important that you use the pasta water it's full of starch and it will help you to make the cream that you're looking for pasta alfredo is a cream without a cream alfredo is the cream we are forming the cream just by combining the butter with the water now it's time for the king of the cheeses we're gonna put the parmigiano in there just in there like this and again we quickly stir so we create the alfredo cream and here we have it guys now this is the best technique to get the cream i'm going to spot the lary to man te karere just like this and get the pasta to jump and this is the best way to get the cream out [Music] guys all mushrooms and now we're ready to serve oh yeah now it's time to add the truffle right at the end we don't want to cook the truffle you got two ways to grate it you can shave it which i'm not a really big fan because i don't like to have chunks of truffle in my mouth i like to grate it so i like to use this to grate it and when i go on top i just want to decorate my dish with truffle and add the extra flavor but i don't want the truffle to take off and then i'm going to add gently amount i'm going to add the extra flavor of the truffle on this pasta just like that i want the truffle to be there but not to take over so you guys i come from abruzzo the greenest region in europe the region that produced most truffles in italy i grew up eating truffle and i love truffle guys if you don't
