Put bread flour and yeast into a bowl. Pour water and mix it by spatula. (Not too cold water is enough, about 27-30℃) Cover with plastic wrap and let ferment for about 12-14 hours at room temperature. Put the ingredients of final dough into the poolish dough and mix. Repeat the folding in the same way 3 times again. This dough is more elastic than first time. Stretch the dough just before it breaks and fold it on top of the dough. Cover and let the dough rest for 30 minutes. Repeat the folding 3 times and let it rest for 30 minutes. Repeat the folding 1 time and let it rest for 45 minutes. Dredge dusting flour (bread flour) on the worktable and take out the dough by turning the container over. Slowly do it to preserve the air bubble. Dredge dusting flour(bread flour) on the top of the dough too. Cover the dough with the container and let ferment for 40 minutes. Dredge dusting flour(bread flour) on the top of the dough again. Divide the dough into 3 parts and divide it into half again. Divide it into total 6 parts. After making grooves with using thick fabric, dredge dusting flour (bread flour) to prevent the dough from sticking. The reason that the dough is placed on the grooves of the fabric is to maintain the volume because the dough is too moisture to spread easily. Place two lumps at each a line on the grooves of the fabric. Let ferment for 40 minutes. Place the dough on the pan carefully. Cut the box long and cover with plastic wrap. After dredging flour and use it. After preheating the oven at 250℃(485℉),, spray water at least 10 times in the preheated oven. Place the dough in the preheated oven and spray water again. Bake at 225℃(440 ℉) for 15 minutes in the preheated oven. When the time is left about 5 minutes, turn front and back of the pan to cook evenly)
