How to Cook the Best Whole Chickens on the Weber Charcoal Grill

[Music] hey guys today I'm going to cook a couple of whole chickens I'm a weber kettle so let's get started before it starts getting hot I have 2 old chickens that ride overnight right here I just pulled these out of the refrigerator that whole bucket fits right into the refrigerators my Bryan consists of a cup and a half of tap water or not a cup and a half a gallon and a half of chapter a cup and a half of kosher salt and about 3/4 of a cup of brown sugar I just mixed that up cold the chickens fit right in the bucket and then the whole bucket just fits right in like regulators so these have been in there I don't know about 12 maybe 14 hours now so they should be good and brined and ready to go so now they're ready to season these are 6 pound chickens they're pretty nice-looking once the real what I'm going to use on this is the rub from the J Christopher company this has sumac and it's a purple middle-eastern berry and it gives the meat a nice color and I like the flavor as well the other thing I like about this rub is it's pretty light on the salt so one of these rubs you buy her kind of salty this one not so much so I've been using this route a lot lately I usually use royal oak lump charcoal when I cook chicken but I couldn't find it so this is the one I'm using today it's a full circle market hardwood lump I've used this a couple times and I like it it seems to get really hot so I'm going with that we'll see how it works out I'm gonna put the chickens on breast down to start out with two chickens will fit on here perfectly and I'm not using any wireless thermometers or anything fancy for that there's no water in my slow and seer if you don't have a Sloane's here just pile your coals on the back of the kettle there I've done that quite a few times and let's see I think I'm just going to start out with the vents wide open and just kind of keep an eye on this and see how it goes it has been 45 minutes let's check on these wow those look good I still have the vents wide open this charcoal this lump charcoal burns really hot that temperature gauge on the top of the grill is just pegged 600 degrees so looks like this the skin is getting nice and crispy on these babies so we'll flip them over here let them finish up on their backs here all right those look really good okay let's get the lid back on there and let them finish up it's been an hour and 45 minutes so let's check on these wow those look nice real nice color on those those wings are getting pretty loose legs that feel loose I think those are done I'm gonna go ahead and get these off of there he's been resting for a few minutes so let's take a look at him here wing pulls right off of there let's see how this leg looks [Music] I can find the joint looks real nice Rex real juicy it's cooked it's not pink around the bone looks just about right let me see if I can grab a fork dang it I lost my fork there we go is stuck the fork in my pocket and I forgot it's nothing new for me I'm always forgetting all right look how juicy that is beautiful beautiful perfectly juicy Wow I'm happy about that that looks really really good all right let's try a piece here that chicken turned out pretty close to perfect I think it's tender it's juicy good flavor I do chickens pretty well mainly just because I do a lot of chicken I guess we better make sure Annie the taste test on to produce I think that's a yes so not chicken those two chickens took about an hour and 45 minutes and I left the vents wide open that lump charcoal gets really hot but does a nice job just the skin turns out it gets nice and brown and crispy and brining makes a huge difference it makes your chicken a lot juicier like I said that was in the fridge over and I don't think was about 14 hours and it wasn't too salty in my opinion so it's an easy way to do it thanks for watching you guys and I'll talk to you next time [Music] [Music]
