[Music] hey everyone and welcome to today's Gale horse with episode today we are going to teach you how to catch clean and cook amberjacks now amberjack fish are known for containing parasites it's a reality of the species a lot of people are comfortable with catching them cutting the parasites out and eating the clean meat A lot of people are also comfortable with just cooking it with the parasites in once it's cooked they're harmless and a lot of people just like to actually release the fish which is normally what we do because we don't want to deal with cutting out parasites however you can do it so that's what we are going to do today specifically we are going to be targeting these amberjacks on a rack if you can find a wreck that is where you want to find your Amber Jacks you can honestly find a wreck find structure 100 200 300 400 feet of water somewhere in that range today we're going to be in 200 feet of water we have caught them in 400 feet of water and inside of a hundred but usually that is the range on a rack is where you're going to find amberjacks my name is Amanda and was behind the camera and Welcome to our Channel galeforcewinds [Music] [Music] thank you first we're going to start with the rig and then we're going to move on to the technique catching the fish hopefully and all the fun stuff today's Rod of choice we are using our gale force do it all Rod this is our all-purpose spinning rod it's a 15 to 30 pound rod with moderate action you can definitely bottom push with a spinning rod if you like to however you can also do conventionals but today we are going to be using a spinning rod and we've paired it with our pen Slammer we have spooled our 6500 pen slammer with 30 pound braids so we went with 30 pound braid on The Slammer and then coming off of The Reel so we have tied a Bimini on the braid and then from the braid we go to a 50 pound wine on leader and for the wine on leader we like to tie a Double Uni it's super strong and it's a great knot for wreck fishing because of how strong it is as far as the wind on leaner goes you can really do as much or as little as you want we like to actually wind it onto the Reel and do like 15 20 even 30 feet of liter the reason for the wind on is one if your Sinker is sliding on it it's sliding on the mono not the braid and two you if you do get tangled or caught up it's a lot easier to untie a knot like that so we just really prefer the wind on leader however this is the most important part of the rig if you wanted to skip this right here is the wind on leader if you wanted to skip this part and do braid you can once again it's not something we like to do but you can see I have two swivels I got one right here and one right here so first we'll start with this swivel this is just a simple barrel swivel with some mono attaching to our Sinker we prefer this method because then you can change your Sinker out depending on the current end conditions so maybe one minute you're fishing slack tied you can get it with an eight ounce Sinker the next the current picks up the wind picks off and you need to fish the 16 ounce Sinker so it is great because you don't have to cut anything off and I can just switch my Sinker out very quickly and very easily one more thing I want to point out with the Stinger is you can see that the mono comes basically all the way up top as opposed to being down here so if you do this you're singer is more likely to spin and if you're spinning you're bait spinning and you're less likely to get bites so this is really easy but I'll just show you how we put it on here basically I just have a loop going to my Sinker this is just a really it's a uni knot and then I'm going to come through the eye of the sinker go over the sinker and then this is where you don't want to stop you want to come all the way up and cinch it down so that's how you're going to put your Sinker on and off after our singer and our two swivels we go to the leader this is a fluorocarbon leader now and this is where it matters so our wind on leader is a mono leader and then we have a 15 foot fluorocarbon leader this once again you can also change 5 feet 10 feet 15 feet somewhere in that range if you are struggling with getting tangled and twisted up air on the five foot side but if you're targeting Snappers or something go on the 15 foot side so today it's amberjax though I believe we only went looks like we went with 10 feet we went with 10 feet of 50 pound fluorocarbon leader now at the end of that fluorocarbon leader I have a 7-0 circle hook that's our favorite size circle hook for this and a squid basically we have our squid the circle hook goes straight through the top of the squid he's a little twisted right here there we go you can see how it's straight through and it's only one time once again this is to prevent your bait from spinning we have made it out to our fishing spot which is a wreck in 250 feet of water and basically what we want to do is we are just going to side see drift the wreck super simple and super easy nobody needs to be at the wheel so if you have your wreck here and the current is traveling this way what we're going to do is we're going to drive up in front of the rack turn our boat side see and let the current take us over the rack right now we are here in front of the rack and we're going to drop our bait down so that by the time we get to the wreck our bait is on the bottom ready for a fish to come eat it first the bait goes out then we're going to drop our Sinker down and we're gonna open up our reel now the important part when bottom fishing I'm just gonna let this out first is two you see how my two fingers are pinching the line is to just gently control the line on the way down whether you're conventional or spinning reel bottom fishing you want to keep a little bit okay right there that's bottom you saw how the line stopped on its own that's also bottom so those are the two things you want to keep in mind when you're on your way down to the bottom keep a little bit a gentle amount of control spinning or conventional to stop your floral carbon leader with your Squid from coming up and twisting with your wind-on leader and then once you hit bottom you saw what that looks like we want to maintain bottom so what maintaining bottom looks like is right now I know I'm on bottom I can feel my Sinker dragging across bottom if I stop feeling any of that just let go let it out hit bottom again and that's what you want to do when your sightsee drifting you have nobody at the wheel you just really want to make sure you're maintaining bottom in the process and now we wait for a bite so once you feel a bite you're going to feel the line rip out of your hands and when you feel that I am going to let go of the line all together that's just the current taking it I'm going to let go line all together let the Line run maybe how many seconds would you say Emily 10 10 seconds at most so that your fish has time to swallow the bait we're using a circle hook that's going to swallow the bait and then you're going to close the bail and start reeling and as you're reeling up it's gonna the Hook's gonna come up and hook into the corner of the mouth and you'll have a fish on real aggressively yeah real really fast and aggressively don't question it lift up drop down lift up drop down you need to think about it you're fishing in 200 to 300 foot of water yeah it's going to take a minute for that line to get tight so that's why you cannot be hesitant when you're thinking okay perfect example so we'll drop it down the bottom one more time or we'll pretend we got a bite we got a bite one two three four I waited five seconds close the bill real really fast you're just gonna real real real real real until you come tight keep reeling keep your leg oh I'm tight lift up drop line lift up drop wine you have to realize especially when you're fishing for amberjacks you're fishing on Rex that's where the sharks are so you are racing the Sharks it's you against the sharks or the fish in the middle so that's how you have to reel incredibly fast feed it feed it feed it around the rack yeah [Music] we're on okay this is [Music] not looking good the idea is to get the fish out of the wreck as quickly as possibly you can do it you can do it Emily there you go you're gaining you're gaining for sure keep on reeling don't give up don't give up I don't want to speak too soon but we might be in the clear you're speaking too soon you're scaring me all right keep reeling don't slow down keep reeling don't slow down lift drop and wind lift look at that technique okay fish is running can't do anything but wait you gotta let them run online when they give you a break you lift wine lift wine all right making progress good job all right a little bit of information you can see Amanda is helping me close the gap because whatever this is it's big it's a fighter and it's angry it's angry so I'm driving the boat in Reverse in Reverse you could do and forward to whatever's easier this is easier for me and it's just how it worked out because she was already in the back of the boat so I'm driving the boat towards her fish so she can gain on the reel while she reels her fish up it's a great technique if you're sailfishing or like what's happening right now her fish is running like crazy and it's not really staying on the bottom so it's perfect to try to chase that fish down and basically help your angler out so that's all I'm doing is I'm I have both Motors just in gear in Reverse backing up I can go in and out of gear one at a time um if I need to put the throttle on it I can but I don't need to for her she's doing a great job just reeling making great progress this is like it's like textbook man I know we're creating textbook pages right now for when you have a big fish on the rack this is like textbook you don't always have to do this we don't do it all the time but out here you know all right running all right so now like the fish is pretty much straight up and down I can kind of see so I can kind of take them out of gear and just be ready on the throttles so the other thing you want to avoid is high sticking so you see Emily basically that's the top that's it okay that doesn't help let me see I gotta find my words all right lift drop and wind so when you lift you lift to about nine o'clock nine o'clock drop in wine lift to nine o'clock drop in wine the backbone of the rod is the power of the rod this is the backbone the tip doesn't have much power in it you got this Emily see now her fish is straight up and down which is why I'm not on the throttles anymore it's not scoping out so it wouldn't do her any good it would actually make it more difficult for her but she's basically only lifting the rod she's holding it there while she's trying to gain tear her fish out and then she's just only lifting to nine o'clock and dropping and whining that's gonna prevent High sticking it and it's going to prevent your rod from breaking and it's also going to give you the best chance at Landing small when you get to a big fish like this for any fish that he gets hired the key is small pumps so up small pump it's challenging clearly I'm struggling so this fish obviously he's just his head's not turned he's just but you're there you go you're making progress there you go you're turning that head and once you get momentum going you got to keep up my lips because the fish is on the way down work with yourself lift as you're going down wind lift oh man wind lift lift lift lift Emily wind you can't quit you can't quit I also don't recommend when you end a big fish like this can you go with a group of people they're gonna be like I wanna I wanna crank on it I want to crank on it Amanda explain why you don't do it a lot of times when you hand the rod off it gives your fish that spare minute to try and run or gain on you and you can lose the fish very easily or you could go slack hold a hook basically hanging the rod off is really risky um so we try to avoid passing the rod off I would say nine times out of ten we lose fish when we pass the rod off to each other also as the angler gets higher the fish gets tired if you got a fresh angler on a tired fish the battle becomes different and believe it or not you guys getting tired together sometimes works for your advantage there you go Emily any day now right that's actually a good sign that's good it means it's getting tired it's getting close I'm winning all right I'm gonna just kind of bump it in reverse towards her Amanda for that scope I see color I see color we see color all right what do we see Emily do I gotta grab the gas I don't know I don't know yet come here Amanda I'm here see what it is oh shoot oh really okay big shark big shark yeah look at the shark he already got him wow good job oh my I'm dead oh my goodness this is a massive amberjack so let's see should we do how many Emily meta Feats it is how many feets in there two three four and a little bit more here we have our massive amberjack that was sadly sharked but it is I mean there is so much fish here this is insane all right Emily can you pick them up all right it's not gonna be easy Amanda but let's take a look at a closer look at this fish ready yep nice here oh my goodness it's like the length of it's bigger than your torso it is massive definitely a little disappointing that it got sharked but I mean wow Amanda I can't hold this up pretty much all right put him down all right deck great fish to catch on the red these guys are abundant on the Rex which makes them great to Target especially if you're looking for action or if you're looking for me and don't mind cutting out the parasites clearly you can see there's still a lot I mean look at all this meat this would be the belly but we have this whole section of meat here that is absolutely edible so we're going to put in the fish box but before I do I want to talk to you guys about this between an amberjack and almaco Jack now mainly just by looking at the size of this I'd say oh my goodness this amberjack is huge but some animal clothes get big and what we're gonna do is talk about the lip here so on an amberjack this part of the mouth lines up with the pupil in the center of the eye on an almaco Jack it would be in front of the eye another trick is the fin however I can't show you that because it got destroyed normally the first thing I would look at is this Top Fin here however with the shark eating it I immediately went to the mouth and I said oh look at that it's lined up with the pupil this is an amberjack it was an almaco Jack it would be in front of that eye but let's get this guy on some ice first fish of the day we're gonna have to open these ice bags Let's Get Him to the Fish Box [Music] all right [Music] [Music] it is time to fillet our half shark eaten amberjack and he's buried there we go a little Pro tip before you fillet your fish especially when they're big and slimy like this is spray them off with some fresh water it'll make filet much easier for you get that slime coat off now although he has a huge piece of meat missing from him and this area is going to be the organs there's still a lot of meat we can get out of this that we will be able to fillet and cook this catch this fish all right so Emily's gonna go in there and fillet this fish at an angle we're gonna go at an angle just until she hits that backbone and feels it and then we are going to hopefully find some parasites which I think would be cool um but we are going to cut around them because we choose not to cook them now what I'll do is I'll go against the backbone run the knife along the backbone and down the fish to get the meat off the backbone here's a couple fillets we are able to get off by working around that shark eating fish so the parasites do you guys spot them there's one little set of parasites right there that white chunk that is definitely some parasites this is kind of where the shark bit it and Emily oh there is the other chunk so I think what we're gonna oh and there is more so this is the reason why we choose to catch and release amberjacks most of the time because we just don't feel like cutting around these parasites but today we are gonna do it and we are going to taste test this fish this part of the fish right there that is actually the stomach so we are just going to remove that completely with the stomach removed we actually have a pretty decent piece of meat on this fish so I'm gonna go down the middle to the skin turn my knife sideways and run against the skin in order to get that fillet off that was beautiful and then now you have this piece of skin you can kind of hold on to it and do the same thing with the other half see and these are some nice looking like fillets though look how good they look so Emily's going to clean them up a little bit kind of work around um you know the shark attack but Emily one question is yes cutting this cutting how do you want to cut those guys out I think I'm gonna go on a bit of an angle all right try that and see if you get all of them did you sure looks like sure it looks like it so go ahead and send those guys overboard now we do know people that actually take these parasites and they just leave them in and cook it and don't care but we care we're going to finish cleaning up this fish see what other meat we can get off of it and then we'll meet you in the kitchen with some with a good recipe welcome to the kitchen where we are going to be grilling our amberjacks with a homemade roasted garlic and chive butter which we will be putting the recipe in the description box for you along with everything we're going to be cooking today we wanted to do a less is more recipe because of this amberjack being that we've never really cook it and it is kind of one of those questionable fish that some people love some people don't so we're like you know what we don't want to take it and do a really Advanced recipe and basically just cover up the fish and hide all the flavors because we talked about panko breading it but then we said no we also talked about frying it and we talked about deep frying it but we're actually going to be grilling this fish with our homemade roasted chive garlic butter first and foremost set your grill to a medium-high heat we're using a Traeger but any Grill is fine and then we're going to season our fish we're going to keep it really simple we're going to use olive oil garlic powder salt and pepper to season it then we're going to take it to the grill and that's where we're gonna add our roasted garlic and chive butter if you do use this recipe for a very thick filet of fish whether it's an amberjack or a Mahi make sure you season all four sides and also oil your grill before you put your fish on the fish is oiled as well but so is the grill going on the grill you can hear that Sizzle that's why you do want that heat at a medium to high temperature in order to get those nice grill marks on it now this is when you're going to want to take a nice thick slice of your roasted garlic and chai butter and place a slice on each fillet of fish just like that that looks amazing delicious so we're going to do that on each filet we already put our probes in you don't have to have probes at all but basically we're going to cook this to an internal temperature of 165 or until it's nice white and Flaky halfway through flip the fish over we're going to put another scoop another serving of butter on each fish fillet followed by a lemon slice for the second side of the fish we'll see you very soon look at how delicious these amberjack fillets look now we did have probes in our fillets on the Traeger and we took it off at 150. now fish is considered cooked at 165 however we like our fish if there was a world where you could say this medium rare medium so that's why we took our fish off early generally speaking as long as it's white and Flaky and it's how you like it that's how I would recommend it Wahoo is a really great fish to sort of cook rare or medium rare sear it and kind of get that more Sashimi taste to it but like I said with the amberjack we took it off at 150 as opposed to 165. moment of truth let's dig into one of these fillets Amanda you're gonna have to well that's perfect how easily that came apart nice white and Flaky right this is perfectly nice white and Flaky which is also why we like to take the fish off a little bit early because this is cooked all the way through so even if you did have your parasites in your fillets this is cooked all the way through so you take it off at like 150 because it will continue to cook a little bit and fish cooks really fast so if you took this up at 165 it would be well done in my opinion all right cheers that was absolutely delicious I'm super satisfied with that and I was actually one of my first times eating amberjack and I'd say we crushed it we crushed it we crushed it so the recipe and all it in Pulley Ridge on the Yankee caps and usually we just release them nope all right but I do like the like casualness okay go ahead but I'm just standing in okay I got it so I figure out how to if you do have really thick fillets season all four sides every side that okay consider ourselves also season do not season oil the grill so again
