Healthier Slow Cooked Beef Curry

I've got my slow cooker out I'm gonna be making this slow-cooked spicy beef curry. Welcome back to our kitchen where we show you how to make our favourite recipes, today and make it a spicy slow-cooked beef curry it's lighter than your usual curry but still packed with flavor and we're gonna start by marinating the beef. I've got a kilo or about two and a quarter pounds of lean braising beef or casserole beef cut into small cubes I put that in a bowl and I've got about a 150 mil or 3/4 of a cup of fat-free Greek yogurt I'll also add a teaspoon of salt, cumin, coriander and turmeric. Give everything a mix to fully coat the beef cover then place in the fridge to marinate for one to two hours or up to overnight. After that beefs been marinating for a couple of hours we're going to turn on the searing function on the slow cooker now don't worry if your slow cooker hasn't got a searing function you can do this part in the frying pan and then transfer to the slow cooker later. Once the slow cook is hot at the beef and cook for about five to six minutes until sealed you'll notice that the beef will release some liquid whilst it's frying and you want to drain that after that beef browns rather than boils in the liquid. Once the beef is sealed add in a large diced onion and then turn the heat down to medium stir and cook for four to five minutes until the onion starts to soften. Now we're gonna add in the spices I've got two tablespoons of ground coriander, one-and-a-half tablespoons of ground cumin, six cardamom pods, one teaspoon of turmeric, 2 teaspoons of garam masala, half a teaspoon of freshly ground black pepper, four of dried whole chilies and one fresh red or green chilli finely chopped, I'm also going to add in three minced garlic cloves and one teaspoon of minced ginger. Cook for three to four minutes stiring a few times until the spices start to release their aroma. Next in goes 2 tablespoons of tomato puree then add a 400 gram or 14 ounce tin of chopped tomatoes, 500 mil or 2 cups of beef stock and the juice of half a lemon. Give everything a stir and bring it to a gentle simmer. Place the lid on and cook on high for three to four hours or low for five to six hours. We're going to serve with some fluffy boiled rice and freshly chopped coriander or cilantro. That's my delicious healthier slow-cooked beef curry. It might not be the quickest curry to make but it's so worth it with fall apart beef and that delicious spicy sauce.
