Easy Coconut Beef Curry Stew

did you guys know that there's a difference between Indian curries and Asian curries it's pretty simple let me show you hey guys it's Kevin from Kevin is cooking thanks for showing up and weather in this kitchen or out on the grill you're gonna find tasty comfort food meals inspired by my international pantry today I'm going to be sharing with you my coconut beef curry stew it's a wonderful dish it's warm it's homey you know it's cold outside comfort food like this is wonderful anyway it's braised beef with onions and garlic and ginger Yukon potatoes and a beautiful curry coconut sauce let's get to it we're gonna start off by cubing the beef chuck roast and getting some good kosher salt in there to season it up and then we're gonna pan-fry it on all sides so it's crispy Brown [Music] next step sliced onions garlic ginger get brown in the stockpot next up we're gonna add the curry powder mix that in with the caramelized onions and ginger and garlic and then we'll add the coconut milk [Music] [Music] back in goes the seared beef we're going to stir it up cover it and cook it for a bit to get super tender [Music] now it's time to add the Yukon Gold potatoes and we'll cover again and continue to simmer so what's the difference between Indian and Asian curries it definitely starts with the spices used and the different cultures blends curry powder is a mixture of different toasted spices that are ground together into a powder now while most Indian curry sauces are tomato based Asian curries are typically coconut based and so here we are with my recipe today coconut beef curry stew okay that's it for me today guys I hope you enjoyed my coconut beef curry stew and don't forget life's too short to be bland see you next time are you gonna help me out Olly awesome where's Cody you gotta help [Music]
