[Music] hello everyone and welcome to my kitchen i'm very excited for today's recipe as it is a traditional delicious appetizer greek tomato fritters tomato questions super juicy and aromatic dish fritters are enriched with feta and herbs fried until golden and served with yogurt bring the warmth of grease to your table [Music] i love this recipe if you ever travel to greece definitely you had tomato questions tomato fritters it's a classic greek delight that everybody loves and i'm a big fan and i'll show you the best recipe ever now i have two ripe and big tomatoes here if your tomatoes are small you will use more of two tomatoes one will be finely chopped and one will be grated because we want the texture of the grated tomato and the texture of chopped tomato now if your tomatoes are not ripe enough and not bursting with flavor then you have to add a tablespoon of tomato paste to enrich with flavor of tomato and tomato fritters i'm beginning the procedure easily by grating one tomato i'm grating to the cheese grater all the greek recipes with tomato start with this procedure grating tomatoes we love grating tomatoes tomatoes are the basic ingredients of the greek cuisine this way always the skin is not going into the mixer my tomato is ready the first one i'm carrying on with what onion i'm grating my onion use the grater the easiest way to prepare an onion the onion goes in and the next ingredient is mr zucchini the same thing i'm grating zucchini the hard part of the recipe is to grate all this ingredient please do not put all these lovely veggies into a food another classic recipe greek recipe is zucchini fritters so always when you're going to a small tabernacle you will find zucchini fritters tomato fritters and cheese fritters so everybody taking all these fritters along with zhanjiki and melchian salata and it's amazing this is what we need in its table now all the veggies are grated except one tomato which i will prepare now easy cheesy i'll take it open board and i will simply chop my tomato i will cut in half take off the stock and here and here you need a sharp knife and chop chop your tomato easily slice first and then chop chop [Music] perfect and now we have this lovely bites of tomato inside our fritters and this is exactly what we want that's why we're always cooking very very flavorful i think greek cuisine is the most flavorful cuisine all over the world of course what can i say my channel is greek now the tomato goes in and i need my chopping bowl because i need to chop chop my herbs mint and parsley mint parsley and i will add a little bit of basil too as you can see we're using a lot of parsley if the stalks are tender you can use the stock also because the herbs are main ingredient of this recipe and some basil for ah [Music] yeah basil goes in look at this beauty this is absolutely stunning and of course our oregano baking powder the flour [Music] and feta cheese now if you're using salty feta cheese then you would have to add a little bit of salt but if your cheese is not salty enough and then you have to add more salt balance the saltiness of your tomato questions with your cheese so please make sure that the cheese you are using it's proper and greek feta cheese not another white cheese okay if you want to make tomato questions if you want to make something else you can use any cheese you like now i will add a splash of extra virgin just for the aroma the flavor salt berry pepper we call it peperi and now it's time for water caterina for mixing mixing let's start mixing mixing everything and if you have the time tomato questives dough is better after 2-3 hours inside the fridge if you have the time because everything is more flavorful all the mint the basil and the parsley giving all these flavors to all the dough but if you don't have time then you can deep fry them straight away so the mixer is ready as you can see and we have few options how to defry them the first one is to make canel so we are taking two spoons and we just shape them like that you see it's like a shape triangle circle okay this goes in i will carry on with the next one the heat should be high about 170 degrees not 180 not 160 because we need nice golden color and we need to get completely cooked from the inside because we have flour inside and we want to be cooked now i will carry on the same procedure and if you don't the skills to make canal which is something very easy or you don't want the canal safe because you don't like it like lucky then you can make nice patties small patties i will carry on with canals because i love peanuts okay so with this dough we can have at least 20 to 30 tomato questions i will carry on until i finish all the dough okay be back in about 10-15 minutes [Music] and these are the last tomato fritters tomato questions i love this recipe and look at that with two tomatoes a little bit of feta cheese some herbs and a little bit of flour without eggs without anything else you will have an appetizer for at least eight people it depends of the size for me i need four five of them to have a proper appetizer now let's serve this lovely fritters quick way we love them and as you can see i'm not stingy i'm adding a lot of them for a good portion it's like a medjay right like this do you want to put the yogurt in the center or in the center okay so i will make a small crown of tomato questions here and i need some yogurt in the middle and the greek yogurt is strained and sexy and sweet and acidic it's so balanced that actually will boost
