- I'm Darren McGrady, the Royal Chef. Former chef to the Queen, Princess Diana, Prince William, and Prince Harry. Although I never actually cooked for the Duchess of Cambridge, I know that sticky toffee pudding was one of her favorites. This is the royal recipe, and I know Kate would love this. (melancholy orchestral music) So the original sticky
toffee pudding recipe had apricots in. And at Buckingham Palace,
we changed it to dates. And these make it much more creamier and much richer in my opinion. Next, we have to soften them, and a little baking soda, and hot water. And while that's happening,
we can make the sauce. The secret to it is the muscovado sugar. You have to have muscovado sugar. Then, lots of butter, and cream. We talk about indulgences
and Kate's indulgences. How does she stay so slim? She's got to eat healthy all week. And then, this is a
special treat on a weekend, the sticky toffee pudding. Kate doesn't have a chef. She loves being in the
kitchen, creating simple dishes for the two of them and the children. She's a chef's dream. She shop for all the
food for you. (laughs) But then, she goes home and cooks as well. It's something that Kate really enjoys. Just sort of leading that normal life when she's not sort of on royal view. I think, Prince William and Kate are the first members of the royal family not to have their own chef in the kitchen. Of course, when they have a banquet, that are entertaining, they'll borrow chefs
from Buckingham Palace. But the rest of the time, the two of them are cooking in the kitchen, just normal people. (blender blends) (melancholy orchestral music) (blender blends) Cooking the rich dishes,
the nursery foods, the comfort foods, the fast foods, and things like the fried chicken that we used to do all the
time at Kensington Palace. William and Harry grew up with those. I think, when they
married Kate and Meghan, I think, they're transforming the boys. They're making them eat healthier. And, I think, they're
looking better for it. The muscovado sugar
sauce is in the bottom. And it's just starting to set. Now, I can take this delicious butter with the dates in there and
spoon that into the mold. A little parchment paper over the top. And then, some aluminum. And then, into the steamer for an hour. (melancholy orchestral music) Sticky toffee pudding, how we prepared it at Buckingham Palace. The Queen loved this when she was at Sandringham, when it was really cold outside, when she was at Balmoral Castle And the rest of the royal family did too. I know Kate is a huge
sticky toffee pudding fan. And so this she will love
at Buckingham Palace. (gentle chiming music) Not just Kate's favorite, my favorite too. Mm, it's so good, so good. (gentle chiming music)
