hello foodies it's me hi ela from blondely.com and today i'm gonna show you how to make ratatouille this is a chunky and flavorful vegetable stew that's perfectly served no matter the season it comes from the french cuisine and even though it might sound fancy it's incredibly easy to make now i've got all my fresh veggies here waiting to cook so let's start prepping trim the eggplant and zucchini and cut into 1 inch or 2.5 centimeter [Music] chunks [Music] this in the peppers and chop [Music] cut the onions into large chunks and slice the garlic [Music] use fresh basil and thyme it really makes the difference in terms of flavor or you can substitute with your favorite fresh herbs if desired heat oil in a large skillet over medium heat [Music] add in the eggplant and fry until golden about two to three minutes per side [Music] set aside in a large bowl add a bit more oil to the preheated skillet and fry the [Music] zucchini [Music] don't cook them all the way through just until golden and slightly softened season with a pinch of salt and pepper and set aside in the same bowl with the [Music] eggplant [Applause] to the same skillet add the bell peppers onions and garlic saute for about 5 minutes [Music] add in the plum tomatoes and balsamic vinegar reduce the heat to a medium low bring to a simmer and break the tomatoes with the back of a wooden spoon [Music] allow the sauce to simmer until it starts to thicken season with salt and pepper [Music] now it's time to add all these bright and tasty fried veggies to the sauce [Music] add in the cherry tomatoes and the fresh herbs [Music] gently stir to combine [Music] partially cover the pan and cook over low heat for about 30 minutes stirring occasionally or until the sauce is super thick and veggies are tender alternatively you can bake it uncovered in the preheated oven at 350 fahrenheit or 180 celsius for about 30 to 35 minutes our ratatouille is ready and it smells so good let's garnish with some fresh basil first and then give it a try [Music] [Music] yum healthy loaded with fresh veggies and perfect for meal prep it actually tastes better after refrigeration as the flavors have time to melt nicely that was it for today foodies thank you for watching to get the full recipe plus super useful tips and tricks just click the link below or go search it on blondelich.com and don't forget to hit the subscribe button to be a part of my amazing community of foodies last but not least let me know how you like this recipe in the comments below see you next time you
