So today, as requested by many of you.
Let's make another no bake dessert because how about those
who doesn't have an oven, those who want a quick dessert
but is still delicious and special. This is Easy Peach Mango Float
or you also call it Ice Box Cake. Why is it called Ice Box
Cake? You will see it later because it's like Ice Cream
Cake when you make it. It's very impressive, right?
But it is very quick to make. So first, we start with
the cream filling. I have here one cup of cream
cheese, room temperature. Make sure that the cream
cheese is at room temperature and then into this, I'm going to
put one can of condensed milk. Just combine it all together,
it's just as quick as that. Actually, this is one of
other than fruit salad, one of the favorite things we
do when it is Chrismas time. So for today, this classic dessert, we
will make it extravagant a bit, right? So you put 1 can of condensed milk
and using a mixer, just beat it first. The cream cheese and the condensed
milk until it's just slightly mixed. Okay, so just beat it like that
and then turn off the mixer and then, you put 2 cups
of chilled all-purpose cream. I will answer the of many of you, "Chef, I'm
from Europe, there's no all-purpose cream." It's true as well because all-purpose
cream is created for the Filipino market. If you're from Europe,
US, Australia, you can use thickened cream or heavy
cream or whipping cream. Okay, you may use that.
Just make sure it's chilled. So you put 2 cups of cream, this is all-purpose
cream, I'm using chilled all-purpose cream. Okay and then just
keep on beating it. So there, I'm beating it, look.
It's very quick to make. Until it became a bit fluffy. So now, let's go back
to the usual questions. "Oh god chef! here on our subdivison. Our
neighborhood watches your same video so would that mean that when Christmas came,
we're gonna sell the same Peach Mango Float or we will exchange gift containing the same
Peach Mango Float" so this is what you can do, you can do, so for you, you can make
it as Buko Pandan Halo-Halo Float. "How I am gonna do it?"
Put it Buko Pandan flavoring or you can make yours as Ube
Halo-Halo Float, put it Ube flavoring. So it's as simple as that, right? So I'm mixing
it, look until it becomes very smooth. If you're putting any flavoring, put
it now already on your cream filling. So once it's very
smooth like this, so it's very quick, right? It's the real
time, this isn't edited, it's just really quick. One to two minutes of beating using a hand
mixer or you may also use wire whisk. So now, the next thing will do is
layering. So this is now my cream filling. Okay, so now I'm ready to layer it.
You have many options, right? Our life gives us a lot of options,
so we have to choose wisely. So for this one, you can put it
on an aluminum pan like this or you may also put it on microwavable
containers if you make this to sell or to gift. If you'll eat this in house,
you can put it on a pyrex dish or any container that you
like that is presentable, right? Like what I've been telling you,
I know that you are very creative. So decorate this one to be
grandeur and impressive. So I'm using this, "What is the size of that?"
I have ruler, I know you'll ask me that one. This is 10 by 7 inches, okay.
So now, let's start the layering. Originally, what I am using in
here is the Graham crackers but when I saw and taste this
crackers, this is Tiger crackers. I told myself that I'll
give it a try and when I tested the recipe, it
was really really good. So for this one, I'm using
the Leche Flan crackers. It suits really well especially to
a Filipino-inspired dessert like this and of course, if you find this Leche Flan flavor,
you can also use plain, they also have plain which is less sweet and they
also have the Ensaymada. You can play with the flavors depending
on what you like to make, right? It's very crunchy and the beauty of this is,
when it is soaked in your cream filling and here in your fruits, and we're
also putting Nata De Coco, okay. It can retain it's texture of being solid
so when you cut, later, you will see that the layerings is still there, So let's
start, first you're going to put crackers at the bottom of your prepared
dish, so just put it there. Okay. Make sure that you'll fill
it because this would be the one that'll add stability
on your no-baked dessert. So when you cut it, it won't
melt, it won't dull suddenly and then I'm going to put just a spoonful
of my cream layer, just spread it out. Okay, just spread it like that. Okay. And then next, you put some fruits.
This is mangoes, I'm putting mangoes. Fresh mangoes that I've
chopped into chunks and then, this is Nata De Coco.
The peaches, I will put it on top. "Why? Why don't you
put it on the inside?" Because the peaches, I'm using canned
peaches. So basically, it's treated. It means that it's soaked on the syrup so when
it's exposed as a decoration, as a garnish. It won't automatically turn
black not like your mangoes that when exposed turns
black, so the mango put it inside and put the peaches
outside as a garnish and then you put more crackers,
you layer it with more crackers and then cream. This cream is, when the
weather is hot, it becomes a bit thin but you don't
have to worry about that because when you put it inside the
refrigerator, it would just set. The recommended is you put it in the
refrigerator overnight, don't hurry it, okay? or you can freeze it if you
want an ice cream cake like. Mangoes, I'm putting Nata, why? Because I want
texture for you want to have something
that you can chew on the inside that also
has a different texture. or if you want, you know what? this dessert,
you can also turn to Easy Crema De Fruta. Right? So what you're gonna put is fruit
cocktail instead of your mangoes and peaches and then Nata. If you
want it to be colorful like Christmas then put it red
and green Nata De Coco. Okay and then cream filling. My finished product when I was
testing this, I put it on my freezer and actually if you plan to freeze it
whenever you want it to freeze, it's better if here in aluminum
container because the microwavable sometimes
when you put it in the freezer, it cracks when put in the
freezer for a long time and then let's put one
final cracker layer. I will just cover it with
our remaining cream. Because the addition
of your crackers is that, it would be the one removing
the feeling of being fed up because the cream is very, of
course it's creamy and rich. Okay, let's consume it entirely and you can also do variations,
just like what I've told you before. You want Ube Halo-Halo,
then put it your cream Ube. You want Buko Pandan then put
your cream some Pandan flavor. Okay and then you just
put your peaches on top. There it is, right? Because this one
even you freeze or chill the peaches, there would be no problem on
that since it wouldn't just discolor unlike when you use your mangoes.
So what I am going to do here, I am going to put this in the fridge
for at least twenty-four hours or when you're in a
hurry on freezing it, just freezer it for 5 hours and
then it's already ready. But again, better to put it
inside the fridge overnight so that the layers would
really stick to each other and the crackers will absorb the flavor
of your cream layer and the fruits. So I'll put it inside the fridge and I'll show
you next what it looks like after chilling. So just chill over there. So this one has been sitting inside
the fridge for just about 8 hours because I just made it in
the morning, right? So you can enhance it by putting some
crush pistachios, there it is right? for added texture or you can
also put some cherries on top or simply as it is, it already
looks beautiful as it is, right? So this one, you can already sell, gift to
someone, or serve in your special family. Right? special friends,
special someone. It's just a very easy dessert, right? But
as you can see, it really looks special. Now here, crossing my fingers because the first
slice is always the most difficult to remove. But let's look at it, it looks
it already set at least but setting it overnight would really
look good if you set it overnight. Ooops, oh look!
It's very creamy. You can really see the layering
inside, right? Now, let's try. Okay, so as you can
see the inside, right? So you have your cracker,
you have your cream, you have your cracker and then
you have your cream again. It's very creamy, very rich but it
doesn't feel like you're fed up. So what are you waiting for?
Make this one already or you ready your ingredients already
because it's very easy to prepare and for sure, it will make your
dessert table extra special. Stay safe everyone
and I'll see you soon.
