welcome back we're making a kubano sandwich we're going to take this pork butt we're going to marinate and moo marinade for about 24 hours then we're going to make some nice dill pickles homemade style and then we're going to make a coupon of [ __ ] sandwich and eat it let's get started get your pork butt put it in your bowl that was incredibly loud Jim sorry if you have to cut that audio moho marinade very citrusy marinade basically it's orange juice limes garlic cilantro cumin salt pepper olive oil and uh that's that's kind of it so five limes this is a 3 and 1/2 lb pork butt I think or something like that couple oranges oh I did not mean to get blood oranges but look at that that's beautiful we have some cilantro the charred cilantro bits on the outside of the pork roasts look [ __ ] beautiful so don't be afraid of those all right don't be afraid of anything ever and then like 15 cloves of garlic oh yeah all right there's our amount of garlic that we're using it was too full bulbs flaky salt or just any salt on top of your garlic it's going to make it easier to mince mash it down just keep mincing all right that'll do you now have your minced garlic 12 cloves is okay and then our cilantro oh y you could chop that cilantro much finer I kind of like the like whole leaf look when it's like charred on the outside of the roast pork that's my preference all right and I'm sticking with it today so we're going to get some oregano leaves here so just rip those off the stem chop it up bowl and then your citrus I didn't mean to get blood oranges but they do sure look nice and they're going in the bowl in some recipes they just call this sour orange juice um but basically it's just orange juice mixed with lime juice so that's what we're making right now if you only use fresh oranges it might break down your pork too much and make it like turn into mush so we're going to use some actual bottled orange juice here as well too okay cool oh I love a fresh jug of vinegar there's nothing like it I'm going to use you for so many things you're so big I like to put a little bit of vinegar in there just just a nice extra dose of acidity and then some cumin big pinch of sot look at that go and where would we be without fresh Cracked Pepper nowhere I land and that's your marade so whisk this on up that's beautiful by the way so we have a boneless pork butt this about 3 lb and we're just going to dump our moho marinade all over it guys yum oh that's such a happy [ __ ] sight for me also a lot of olive oil nice Hefty little [ __ ] half cup of olive oil in there all right get in there get your hands dirty and massage all right 12 hours in in your refrigerator 12 seconds later it's been 12 hours now of marinating and it's time to roast your pork butt so get yourself a roasting tray with a rack pork butt going on the rack cup water on the bottom and we're going to check on this thing this goes in for like a 2 and 1/2 to 3 hours at 325° but throughout that time we're going to be using this Mar moo marinade that we spent so much time on okay in your oven it goes 325 oh the kubano uh I learned I didn't learn this from chef but I watched them make it in chef and oh my goodness [ __ ] up gracious that was like a turning point in my life with they're serving up those Cubanos in that food truck something [ __ ] changed around my brain I think a little bit I think there's no no movie that does food porn better than the movie Chef John favro is just a goddamn genius that really like changed my life watching that movie it made me know food porn is a thing that I want to do forever for the rest of my entire [ __ ] life now we're going to make some dill pickles dill pickles dill pickles so we have ourselves some English cucumbers here they're long they're skinny and they're from Britain M nice even little circles look at those things roll away so you got your Amon jar squeeze them on in there pickle brine this is the pickling spice blend we're using you can go get this cuz it's going to make your life a billion times easier if it isn't available on the website what is inside of here is black peppercorns coriander seeds mustard seeds carway seeds Dill seeds fennel seeds red pepper flakes and bay leaf and that's what we're going to steep our pickle BR in so about a tablespoon of that oh even just the freshness of it it hits your nostrils like a freight train a lot of vinegar this is just distilled white vinegar two parts vinegar to one part water yeah is and then a giant pinch of non-iodized salt so kosher salt yeah like two tablespoons of salt get that on your [ __ ] stove all right we're going to put like three cloves of garlic in here there actually is Flavor in the skin so we're leaving those in couple sprigs of dill and that's what makes it a dill pickle you just want to bring that to a light boil the Steep pickling spices dissolve all the salt then you pour that brine over this beautiful jar of cucum BS and those are your quick dill pickles don't that look pry Jim lid goes on shake it like a mcaren picture your pickles are done good job you made dill pickles how are your holidays any drama tell us the marinade cuz there's nothing on the underside of this but guess what we're going to put something on there all right so now we take this leftover beautiful marinade and we just base it all over the top of that oh buddy there are sugars in that orange juice that are going to caramelize and create a beautiful nice crust on the outside look at all that garlic too this is [ __ ] we do not want to go to waste so I'm I'm glad we're doing this okay going back in the oven leave that in there wait for that to get some nice color on it and once it hits 160 no no no once it's 150 internal temp we're we're going to pull pull that [ __ ] out and eat it okay I'm very excited for it if I do say so myself that roasted pork awesome the cheese the ham the mustard the pickles all awesome and then the bread it's really awesome too but it's not Pon kubano and I'm sorry for that and I know some of you are going to notice that so I want to call it out here while I'm sitting on my couch where I feel safe or you can't attack me physically it's still a kubano I think without the pond it's a special kind of bread it's it's this [ __ ] it's like a Cuban roll but it's it's very important and kind of integral to the actual Integrity of this sandwich but unfortunately we don't have it all right so the ham is ready now and we can yank it from the oven look at that [ __ ] this is why you want to pull it and flip it halfway through and get more of that marinate on there now pretty much the final step here is we get to fry up a little bit of ham and this is just deli ham literally but you fry it in a frying pan literally we don't have Pon kubano we have rust stick Battalion baguette and here's what we have here softened butter this is going on both sides of our rolls and this is making it just so apparent that this is not traditional bread and I know and I'm sorry and if anyone really cares come [ __ ] at me okay come find me you know you know where I stay at my mom's house we're slicing up the ham now oh [ __ ] look look at that [ __ ] oh my god oh it's so good oh my God most s for gim oh my God that's good [ __ ] holy [ __ ] let's make a sandwich kubano the only thing that's not traditional is the bread everything else this is [ __ ] classic guys this is how you do it a nice perfect layer of mustard we have our fried up deli ham holy sh Nikes we have our [ __ ] roast pork homemade dill pickles [ __ ] everywhere we need that acidity guys all right a thick [ __ ] layer of Swiss cheese okay we're going to bring this over to the stove and panini press it you guys ready let's do it what we've been doing secretly behind your backs is heating up this cast iron so this is going to kind of act as like almost a planta SL Panini Press cuz the bottom of this is like nice and hot now so on top of the sandwich it goes oh [ __ ] yeah I love that noise more than I love my own family completely kidding I love you Mom love you Mom she can't hit me that's fine so now we get to flip it nailed it we are merely minutes away from having our Cubanos okay use your patient hormones all right you need that cheese to melt you you need the bread to be crunchy [ __ ] me I want to pull it so bad right now but I'm not doing it all right patience okay I'm pulling it oh my gosh be still my Beating Heart let's get a cross section [Music] okay that looks [ __ ] so good I'm oh my God all right it's time let's do this okay oh my god oh that's so [ __ ] good you don't even need anything else the little layer of mustard and the pickles it's just pork pickles mustard and cheese but the [ __ ] pork is so fatty and flavorful and then there's acid in the pickles it's seriously like the [ __ ] perfect sandwich I wouldn't add or take away anything from this exact sandwich how it is right now this is [ __ ] amazing this is perfect all right get back here it's Jim's turn this guy looks nice and messy oh my God so look at that [ __ ] crispy cheese dude dude no oh my God it's so good is it amazing it's so good it's so juicy there's no sauce there's barely any sauce that's the craziest part it just has that little bit of mustard no the little mustard and it's plenty that's it it's all you need that's one thing I was worried about cuz I'm a big sauce guy I feel me [ __ ] too I was like I you know what I mean that is so good they [ __ ] nailed this one hundreds of years ago and they didn't change it and I'm glad they didn't and it's [ __ ] perfect God damn good job us um and your pickles are spot on hey thanks what did you use those again uh salt Hank pickle spice BL
