Hello guys, this week, I uploaded a bit later but I made for you guys a DELICIOUS bread indeed!!! In Vietnam, this bread is called Paparoti and elsewhere, people call it Mamaroti or Roti Boy. It was really really popular back then! Back to the past when I was in high school, I'm also crazy about this bread, virtually eating it everyday. Because it is SO delicious. Even I could not drink coffee at all but I really enjoy eating dishes that have coffee flavor. First, to make the inner part of the bread, let's put 110ml of full cream milk, 25 gram of sugar and 4 grams of dry yeast in to the bowl Then slightly stirring to dissolve mostly the yeast Next, I will beat an egg and divide it into two small parts. One for the coffee coat, the rest will be put into the bread batter mixture. Put a half of an egg into the yeast-milk bowl Add 200 grams of bread flour plus 3 grams of salt After that, give it an even stir, let the flour absorbs water then start using hand to knead the dough. And don't be rush and jump right into the knead ok? It would absolutely get really sticky and gooey like something kiddos should not see :)))) Later when water is completely absorbed by the flour, you guys using hands to roll it out a bit to make the discrete pieces into a firm dough... THICCC After got the dough, let's put it on a table or any clean flat surfaces. Imagine this is the face of your enemies :)))) In this step, we will knead in about 10 minutes, you can knead like the way i did. Or follow the other method as smash the dough on the table then fold it and repeat over. Until y'all feel the dough as soft as a baby's skin and can be pulled into thin layer like this: Then get out 30 grams of unsalted butter This part should look quite messy but don't worry, after kneading for a while, the butter will immediately melt into the dough then everything will be back to its tidiness. as it should. :)) O..M..G. This sound... Guyssss. If you are watching this in crowded place, please turn down the volume or put an earphone on! I won't be responsible if anyone gets you wrong ok? hahahaha XD The successful dough would be really soft, supple AF and won't break even you stretch it out really hard. And you can also use the kneading machine if you have one, it will be much more convenient and faster. (its not required) After the dough is passed, roll it into a round shape and we can move on to the incubation. The weather is getting chilly because autumn's climate will take over the world soon so y'all must remember to wear warm clothes otherwise I will be very worried... oh noooo, I mean because of the cool weather, let's leave the bowl in a warm place. Incubate it for about 45~60 minutes.You guys can incubate by put a bowl of boiling water into a pot. Then place the bowl that contains the dough on the surface. And do NOT turn on the heat please!!! In the meantime, I will act cute as pretending to be asleep with Mon Leo (his cat's name) I mean... look how promising is my acting heh! None of falsehood. Ya'll could NEVER i mean look at you ugh smh. After the dough expands to twice its size, let's take it out of the bowl. One last time, kneading the dough for 1~2 minutes to break all the bubbles like my captions broke your soul :)))) Next, let's divide the dough into 6 parts equally For picky people just like me here, you can put the whole dough on a scale and divide it evenly then cut it into exactly the same pieces thus it will look better. After that, we will round up these 6 small doughs Let the dough rests in 15 minutes to make them less tired *sigh* If it's tired and won't rise, we shall surely be in trouble... meh Remember to seal up the top of the dough so it won't be dry out. While we are waiting, let's listen to Mon Leo's groaning hehe XD Next, take the dough out one by one Press the dough, then add in 3 grams of salted butter to be the filling. You guys can also use cheese (he recommends the Laughing Cow Cheese one) instead of butter. i know you guys will say this looks like a pancake ;b The salted butter you can use is the one from Tuong An (Vietnamese brand). And the unsalted one is used to make the batter. If you guys use butter filling like me then you MUST wrap the bottom as tight as possible, make sure they all stick connected. Otherwise, when baked, the butter will melt out of it. Rub it like this to even the bottom and the whole dough. After adding the filling in all 6 doughs, we will be incubating the second time. This time, the incubation will be only around 30~40 minutes, until the dough rises double the size like you :)))) In the interim, let's make the coffee coating with me guys! First, I will be using 3 grams of sugar-free and soluble black coffee. Dissolve the coffee in 5ml of hot water. After that, add the rest of an egg that we left before into the coffee mixture With that, I will be adding 35 grams of powdered sugar or icing sugar. Then add 40 grams of all-purpose flour as well Now let's whip up guys, up up and up *he wants everybody having fun and dance around XD* After the mixture is well-mixed, let's add in the bowl the last ingredient which is 40 grams of unsalted butter and it is NOT cold. Oh gosh, I mean... how can it smell this yummy... ugh!!! Whip whip let's whip it all up If you want a darker colour, it's okay to add a bit more of cocoa powder to mix together. Add coffee mixture into a piping bag After the incubation is being done and the rise height is as same as I had said, I will be pumping the mixture on the surface like a spiral. Don't mind those one that I had done beside XD I just broke my eyeglasses and also need to pump from the far to avoid being caught by the camera that's why I screwed it up. Baked in 180°C or 356°F for 15~20 minutes~ This scene is the one that I like the most. Look so satisfying!!! Ugh... Even I watch it over and over, I still cannot be satisfied enough. Meh the electricity went out while the bread was baking, so the result is a LIIIIIIITTLE bit fail hehee :P If it did not happen, the bread would be really fluffy and steamy. But it doesn't really matter, the bread is still delicious AF T.T The coating is very crispyyy!!! It smells soo good with a strong coffee flavour and it tastes really suitable with the bread side. The bread inside is soft, quite moist and has buttery smell. A sweet and slightly salty flavour! Combined with a crispy, filled with the smell of coffee and taste a really little bitter. If you want the stronger smell then let's add a bit more coffee! This is the buttery filling, it would be melted and absorbed a bit into the bread like this. I swear that this is the perfect combinationnn. It is truly tasty, every ages could enjoy it, so you guys should really give it a try. If it doesn't taste really well, I guarantee to give myself to you, bonus Mon Leo as an attached gift XD I used to have a girlfriend in year 10 but everytime we went out, I only buy this bread hehe She was quite sulky about this :P maybe because she is no fatto like you :)))) Ugh...
