let's meet the competitors chef Kent Rollins my name is Kent Rollins I was raised Kevin wood worked on ranches till it started cooking Red River a stripper a catering for my wife seven get me fired in this a mate will cook just washing Oklahoma stop please open your baskets and you must use short ribs watermelon speculoos I don't know who speculoos is ain't never seen before my wife and fellow I've been grilling on a wagon about 24 years thing I really like about good he's a cook outside in Mother Nature's kitchen with my old junk wagon if I win the 50 thousand it would help our business a great day he don't take money make the man happy if you think you've got a habit to survive you're not surviving at all we're competing in the desert there are dust storms there's Blazing Sun Kenta he's used to working outside in any kind of weather with any kind of conditions but of course I don't know if a cowboy is eating fennel most of the time never seen family before in my life but Jeff was here provide you get by with what you got I think I'm intimidated firstly by Kent he's the real deal he's the cowboy and I love his hat I try to get his hat but he wouldn't give it up how big is a certain I don't know appetizers that well because mother chuckwagon they're not asking for an appetizer they're asking for a recliner 30 seconds chefs we got to get it done got to do it fast my wife Shannon told me make sure it looks good but where I come from we never had to decorate a plate to get somebody chef Kent glad to be here fix a little grilled rim watermelon and fennel fruit salad speculated about the speculoos we're dipping sauce for the meat with it fantastic the vinegar and the spice man it's a reads a really great chart on the beef but I have to say presentation is a big part of what we judge here so if you were to move on just to try to make it look like a nice gal where I got the glitter in the balloon whose dish is on the chopping block chef Chad and for the entrée course you must use a pork bun baked beans clams very fruit leather torte is a very dry meat so come with real common rabbit in for a first no Steven clams ain't got a clue we don't have enough water in Oklahoma to grow a clam yet today I fixed a grilled pork steak strawberry to glaze bed of baked beans and you mr. cole slaw with a lone clam breasts the steak is tender I'm completely shocked about how tender it is how long did it stay in that's in for five to eight minutes ready cooking like that in the oven it's a very classical French way of doing things beats me brother I was the King knows how to make the pork steak he hit it with the Cayenne grilled it to perfection and those beans by god those were great I mean to me he did the best job with the clams today in this gritty grilling competition only two chefs can continue on chef Corinne you've been chopped please open your baskets and you must use tofu green plantains maple bacon the kale and mangoes that's all Sharon really my biggest fear was tofu don't have a clue what tofu is would probably scare me if I knew people buy canned item it tastes bad tofu tastes bad two things it tastes bad maybe they make things taste better I won't have mango with a little almond extract a little bit of vanilla some honey the sugar really sweet I mean so sweet that's nearly over part so I need something to counteract this sweet just to live I'm going to get done he's cutting up a red onion this is the dessert round I think we should say that the onion is going to caramelize - I need this let's put a cowboy in the finals I want win for the Cowboys we're gonna call this a cowboy banana split add little mango salsa and then get chocolate bourbon sauce I want more tofu no I'm come on girl sorry I one second oh really transform the sauce and something really special of course I have to tell you um the plantain wasn't cooked but you've got to figure out which one has really earned it I thought Kent had a lot of really great elements I love that mango salsa I love the tofu and he couldn't stand to hear me say Kent he took that speculoos spread and added a vinegar and that was really the star of his appetizer made refried beans with the Chipotle that had tons of smokiness and heat he transformed them and made me forget they work and not slaw was wildly creative whose dish is on the chopping block and that means chef Kent Rollins that you are the chopped champion congratulations partner thank you I like America thank y'all it's been a great honor you have won the opportunity of a lifetime you will return to compete for $50,000 in the chopped grill masters finale will cowboy I promise
